MAINE POTATO STUFFING
Steps:
- Place one stick of butter in a medium skillet or sauté pan and heat over medium heat. Once melted, add onions and celery and sauté for ten minutes or until the vegetables are tender and the onions are starting to caramelize. Remove from heat and add the rest of the butter. It will just melt into the onions as you prepare the rest of the dish. Set aside.
- Remove crust from the sour dough loaf and cut the remaining bread into cubes. Place in a food processor and process until the bread is coarsely chopped. Don't over process.
- Pour this into a large bowl and add the Bell's (or other poultry seasoning of your choice), salt, pepper and parsley and toss.
- While the onions are cooking, peel and cut the potatoes into one-inch pieces and place in a pot of salted water and boil until fork tender, about 5-10 minutes.
- Heat the one cup of half & half to hot. OK to heat in microwave about one minute.
- Drain the potatoes then place back in the pan with the hot half & half and coarsely mash leaving some chunks.
- Toss the bowl of bread with the onion and butter mixture then add this to the mashed potatoes and stir with a wooden spoon.
- Taste and adjust seasoning if needed, then serve in a bowl with additional butter over the top.
POTATO BREAD (BREAD MACHINE)
This is a light and delicious loaf of bread made with instant mashed potato flakes. It was my first truly successful attempt at using my new bread machine, and I plan on making it again and again! If I didn't screw it up it must be foolproof! I found this online somewhere, but I'm ashamed to say I forgot where. This makes one 1 1/2 pound loaf.

POTATO BREAD-BREAD MACHINE
Yes, I know that there are already recipes for potato bread on Zaar, but couldn't find one like this one! This is a good crusty loaf with a soft centre making it perfect for sandwiches. We don't buy any bread, so I rely heavily on good bread recipes-this one we like a lot! Tip: if you are using leftover mashed potato that has had milk and or butter added, you may need to reduce the liquid a little.

IRISH POTATO BREAD
This is made every year for a local Irish festival. Simple and easy, it's traditionally served as part as the Traditional Ulster Fry with bacon, eggs, sausages, etc., but is great warmed and sprinkled with salt or smothered in butter, cheese, or jam. It's also great with savoury stews.

Steps:
- Peel and boil about 6 small potatoes in salted water in a small saucepan. In the meantime, measure the milk, margarine, sugar and salt together. When the potatoes have cooked through, drain them and mash in the milk mixture. Transfer into a food processor and pulse until smooth. By now, the mixture should have cooled to about 110 degrees. Sprinkle in the yeast and let rest for 10 minutes.
- Place the flour in the bowl of a stand mixer and attach the dough hook. Pour in the potato mixture and run the mixer for 10 minutes. Coat the dough ball with half of the olive oil and roll it around in the bowl. Cover the bowl with a moist cloth and let rise in a warm place for about 30 minutes or until doubled.
- Using a floured surface, knead the dough about a dozen times; coat it with the remaining olive oil and return it to the bowl. Cover with the moist cloth and let it rise again in a warm place for about 30 minutes or until doubled.
- Use cooking spray to coat two loaf pans. Punch the dough down, form it into two separate loaves and set it into the pans. Cover it and let it rise one final time in the warm place for about 15 minutes. Preheat the oven to 375 degrees.
- Mix the honey and water together and brush it over the surface of the loaves. Bake for approximately 30 minutes or until a rich golden brown, and hollow sounding when tapped. Cool for 5 minutes, then remove from pans to cool completely.
