VIETNAMESE DIPPING SAUCE (NUOC MAM CHAM)
Vietnamese dipping sauce or nuoc mam cham is the lifeblood of many traditional Vietnamese dishes. This sauce is predominantly made with sugar, fish sauce and lime juice which gives it the classic south east Asian flavour combination of sweet, salty and sour. Note: This is for 4 dipping servings. If using as a dressing then double the recipe.

Steps:
- In a small saucepan on medium heat, add the water and sugar. Stir until completely dissolved.
- Take off the heat and add the fish sauce and lime juice.
- Add the garlic, chillies and lime pulp (if using) and taste check. Adjust to your taste (Note 1).
- Store in the fridge. (Discard after 1 - 2 weeks)

MAGIC SAUCE - NUOC MAM CHUOM
When my children were young they could not pronouce the Vietnamese name for this dish and so I called it Magic Sauce. It was a good way for me to get the kids to eat plain steamed vegetables - with a sprinkle of this sauce or serve in individual sauce dipping dishes. We put this sauce on almost every Vietnamese savory dish, from rice to noodles to pot stickers to vegetables. This recipe is lighter and less fishy. This makes about 5 cups, more than enough for a family meal. I keep the rest in a jar or bottle in the refrigerator. Keeps for months if you do not add perishable items like garlic, chilies and lime juice. Add garlic, lime juce and chilies only in the portion you're going to use that day. Amount is to taste. NOUC MAM CHAM (VIETNAMESE DIPPING SAUCE)
There are numerous Nouc Cham sauces on this site. This one is really good. A big difference is simmering the first set of ingredients. I went to a local Vietnamese restaurant and they confirmed how important the cooking is to the flavor development. I found this recipe on Youtube. Steps:
- Place the simmered ingredients in a pot and bring to a simmer. Do NOT out and out boil, just bring to a gently simmmer.
- I prefer to use chilis that have seeds and stems removed. Finely slice or maybe chop them. I find it has a smoother, cleaner taste. Vary the amount based size of chili, heat and your preference. Think 1 average size jalapeno for this size batch.
- After cooling, add the chilis, juice of 1 lime (adding a little lemon will make it even better) and the finely chopped garlic.
- If it is too salty for you add a little water or lemon or lime juice to taste.
- Serve in shallow bowls with some shredded carrots.
- It is wonderful for spring rolls and great on Bun or wherever Nouc Cham is requested.
- It will keep in the fridge for a fe months.
