CLASSIC BRAN MUFFINS
A delicious source of fiber! My family have them almost every morning. Great healthy muffins! You may substitute dates for the raisins if you wish.

Steps:
- Preheat oven to 375 degrees F (190 degrees C). Grease muffin cups or line with paper muffin liners.
- Mix together wheat bran and buttermilk; let stand for 10 minutes.
- Beat together oil, egg, sugar and vanilla and add to buttermilk/bran mixture. Sift together flour, baking soda, baking powder and salt. Stir flour mixture into buttermilk mixture, until just blended. Fold in raisins and spoon batter into prepared muffin tins.
- Bake for 15 to 20 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Cool and enjoy!

MAGIC MELTDOWN BRAN MUFFINS
sadly, i did not come up with the name but these are really great muffins all the same. this recipe is from my rapidly deteriorating goddess in the kitchen cookbook (by marjie lapanja) and i figured here would be a good place to keep this. just a few notes: i make my own applesauce for this. just cut up a few apples, put them in a pot, add water and boil 'til saucey. i've found that a microplane is perfect for grating the carrots and, as for the fresh fruit, anything will work really. i like a combo of mango and crushed pineapple but pretty any non-citrus fruit is fine. prep time and cooking times are both estimated.

- preheat oven to 375 (F).
- in a large mixing bowl, combine the dry ingredients (first 8 ingredients).
- in another large bowl combine the wet ingredients (next 6 ingredients).
- pour the wet into the dry and mix until just combined.
- gently stir in the carrots and fruit.
- scoop batter into muffin tins, filling each cup to the top.
- baking time seems to vary and i'm not entirely sure why but set the timer for 20 minutes and check on the muffins every 5 minutes after that. it'll probably take about 40 minutes. basically, you want your muffins to pass the old toothpick test. keep in mind though, a little underdone is ok as these freeze and reheat wonderfully.

- Pour milk over cereal and let sit for at least 10 minutes.
- Sift flour, spices, salt , baking powder and baking soda together. Add dry oatmeal.
- In a separate bowl, thoroughly blend egg, oil, vanilla, bananas and grated apples.
- Add cereal and milk mixture to dry ingredients, then add wet ingredients Stir until combined.
- Line muffin pan with paper liners. Fill liners 2/3 full. Bake 20 minutes at 375*.

FANTASTIC BANANA BRAN MUFFINS
This is a fantastic muffin that bakes out very high and moist, I have even added a finely chopped large apple into the flour mixture. If you prefer a sweeter muffin then add in more brown sugar. You can use 1-1/3 cup cake and pastry flour instead of all-purpose flour.

- Set oven to 350 degrees.
- Line 12 muffin tins with paper liners.
- In a bowl, whisk flour, oats, bran, baking powder, baking soda and salt.
- In another bowl, whisk egg, oil and brown sugar together.
- In a small bowl mix together the mashed banana, buttermilk and molasses; add/mix into the oil mixture to combine.
- If you are adding in a chopped apple, peel the apple now, then mix it in with the flour mixture.
- Make a well in the center of the flour mixture.
- Add in the banana/oil mixture into the flour mixture; stirring only to combine (do not overmix, don't worry about any lumps).
- Gently stir in raisins and nuts.
- Divide evenly between prepared muffin cups (almost to the top).
- Bake for 20-22 minutes, or until muffins tops spring back when lightly touched, and a toothpick comes out clean when inserted in the center of the muffin.
KELLOGG'S BRAN BUD MUFFINS

- In electric blender or food processor, crush KELLOGG'S ALL-BRAN BRAN BUDS cereal to fine crumbs.
- In mixing bowl, stir together crushed cereal, flour, sugar, baking powder and salt,
- Set aside.
- In large mixing bowl, combine milk, egg whites and oil; mix well.
- Add cereal mixture, stirring only until combined.
- Portion batter evenly into twelve 2 1/2-inch muffin-pan cups coated with cooking spray or lined with cupcake papers.

SIX WEEK BRAN MUFFINS
This batter can be stored in your refrigerator, unbaked for 6 weeks. Use only the amount you want each day. Mine never seems to last that long!

- In a large bowl, add boiling water to the first 6 cups of bran cereal, cool.
- Cream shortening or margarine, sugar, eggs, and buttermilk together. Add to bran mixture. Stir in flour, baking soda, and salt. Fold in the 12 cups of bran cereal. Stir only until moistened.
