TOMATO MUSHROOM PASTA

This Tomato Mushroom Pasta is total comfort food! Using simple ingredients, this vegetarian pasta will be on the table in around 40 minutes. A deliciously quick and easy weeknight dinner.

1 teaspoon Olive Oil
1/2 Brown / Yellow Onion, diced
5 Garlic Cloves, finely diced or minced
2 tablespoon Tomato Paste
400ml / 14.5 oz Tinned Diced Tomatoes
1/2 cup Water
1 teaspoon Dried Italian Herbs, or sub for 1/2 teaspoon oregano & 1/2 teaspoon basil
1/2 teaspoon Red Chilli / Red Pepper Flakes
Salt and Pepper, to taste
1 tablespoon Olive Oil
1/2 Brown / Yellow Onion, diced
2 Mushrooms, grated {I used cup}
2 Mushrooms, chopped {I used cup}
200 grams / 7 oz Penne Pasta
1/4 cup Heavy Cream / Cooking Cream
1/2 cup Pasta Water (reserve before draining)

Steps:

  • Heat 1 tablespoon oil in a saucepan on medium heat, then add 1/2 onion and garlic and sauté until softened. Add diced tomatoes, tomato paste, Italian herbs, chilli flakes, salt and pepper, and mix well to combine. Reduce heat and allow to simmer for 15 minutes.
  • Bring a large pot of water to a boil. Add penne pasta and a pinch of salt and cook until just shy of al dente. Drain pasta, reserving 1/2 a cup of the pasta cooking water.
  • Approximately 5 minutes before the penne pasta has cooked heat the remaining oil in a large frying pan on medium heat. Add remaining onion and sauté until softened. Add mushrooms to the pan and sauté until cooked and tender.
  • Pour prepared tomato sauce into the frying pan, as well heavy cream and reserved pasta water. Drain the penne pasta and quickly add it to the frying pan too. Stir to combine, then cook, tossing regularly, until the sauce thickens and coats the pasta, approx. 1-2 minutes.
  • Serve with a sprinkling of parmesan cheese on top.

20 fl ounces (600 ml) full cream milk
extra 1 cup milk
1 1/2 ounces (40g) butter
1 1/2 ounces (40g) all purpose flour (plain flour) or gluten free option
1/2 teaspoon fine white pepper
1 teaspoon salt
pinch of nutmeg
3 1/2 ounces (100g) tasty cheddar cheese grated
7 ounces (200g) hot or mild sopressa salami (we used hot)
5 ounces (150g) semi dried tomatoes
10 ounces (300g) button mushrooms sliced
2 ounces butter
12 ounces (350 g) macaroni pasta or gluten free option
5 ounces (150 g) tasty cheddar cheese grated
1 cup home made chunky breadcrumbs - see note or gluten free option
baking dish 8"x 13" (20cm x 34cm)

Steps:

  • place milk, butter, flour, salt, pepper and nutmeg into a medium saucepan
  • heat on medium to high until sauce thickens, stirring (about 5 minutes)
  • add cheese and heat and stir until cheese melts
  • add an additional cup of milk stirring through
  • cook macaroni per packet instructions for 3 minutes less than the time stated - see notes
  • drain and rinse macaroni under cold running water to stop the cooking - see note
  • saute mushrooms in butter until browned
  • mix salami, tomatoes and mushrooms with sauce
  • tip into baking dish
  • scatter cheese evenly over top of pasta
  • sprinkle breadcrumbs evenly over top
  • bake in preheated 365 f (185 c) oven on the middle shelf till golden and bubbling

2 1/2 pounds Italian sweet sausages, casings removed, crumbled
3 tablespoons olive oil
1 1/2 pounds mushrooms, thickly sliced
3 cups chopped onions
1 1/2 cups chopped fresh basil
1/4 cup chopped fresh oregano
6 large garlic cloves, chopped
1 cup dry white wine
5 cups canned crushed tomatoes with added puree
2 cups diced tomatoes (about 4 medium-large tomatoes)
2 tablespoons (1/4 stick) butter
1 1/4 pounds pappardelle or mafaldine pasta (or any wide, flat noodles)
1 1/2 cups grated pecorino Romano cheese (about 4 1/2 ounces)

Steps:

  • Sauté sausage in heavy large pot over medium-high heat until brown, about 12 minutes. Using slotted spoon, transfer sausage to large bowl. Add oil to drippings in pot. Add mushrooms and onions; sauté until tender and brown, about 15 minutes. Stir in 1 cup chopped basil, oregano, and garlic; sauté 1 minute. Add wine; cook until almost absorbed, about 4 minutes. Add sausage and crushed tomatoes; cover and simmer over medium heat until thickened, about 25 minutes. Add diced tomatoes and butter; simmer until tomatoes are soft, stirring frequently, about 15 minutes. Season with salt and pepper. (Can be made 1 day ahead. Cool slightly. Chill uncovered until cold, then cover and refrigerate. Bring to simmer before continuing.)
  • Cook pasta in large pot of boiling salted water until tender but still firm to bite, stirring occasionally. Drain well; return to pot. Pour sauce over pasta; toss to coat. Add 1/2 cup cheese and 1/2 cup basil; toss to combine. Season with salt and pepper. Transfer pasta to serving dish. Serve, passing remaining cheese separately.

1 teaspoon bacon grease
1 (8 ounce) can tomato sauce
1 (14.5 ounce) can chopped stewed tomatoes, with juice

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the macaroni, and return to a boil. One 16-ounce container sliced bella mushrooms, broken into pieces

4 large eggs, at room temperature

Steps:

  • Bring a large pot of salted water to a boil.
  • Heat the butter and olive oil in a large skillet over medium-high heat until the butter is melted and just starting to brown, about 1 minute. Add the mushrooms and sprinkle with 1/2 teaspoon salt. Cook, stirring occasionally, until golden and crispy, about 10 minutes.

12 crimini mushrooms, sliced
Salt and pepper
2 tablespoons all-purpose flour
1 cup chicken stock
1 cup heavy cream
1 (10-ounce) sack, 2 1/2 cups, shredded Italian 4 cheese blend, available on dairy aisle
1 can diced tomatoes, drained well
1 teaspoon hot sauce (recommended: Tabasco), optional
1/2 cup Parmesan, a couple of handfuls

Steps:

  • Bring a large pot of water to a boil. Salt water and cook pasta to a chewy al dente, about 8 minutes.
  • In a nonstick skillet, brown and crumble the sausage. Drain cooked crumbles on paper towel lined plate. Return pan to heat and add extra-virgin olive oil, butter, garlic and mushrooms. Season liberally with salt and pepper. Saute 3 to 5 minutes, until mushrooms are lightly golden.
  • Preheat broiler to high.
  • To mushrooms, add flour and stir, cooking 2 minutes. Whisk in stock, then stir in cream. Bring cream to a bubble, then stir in 2 cups of 4 cheese blend. When cheese has melted into sauce, add tomatoes. When sauce comes to a bubble, remove from heat and adjust seasonings, adding hot sauce if desired.
  • Combine cheese sauce with sausage and pasta, transfer to flameproof baking dish, casserole or flameproof serving platter. Sprinkle remaining 1/2 cup of 4 cheese blend and the grated Parmesan over the top and brown under hot broiler.

200g macaroni
2 leeks
6 mushrooms (closed cap are cheap)
4 tomatoes
2 tbsp olive oil
2 x mini Le roulé garlic and herb soft cheese

Steps:

  • Fill a large sauté pan with boiling water. Tip in the macaroni and cook according to the pack instructions. (It may take slightly longer than suggested). Meanwhile, trim, wash and slice the leeks, quarter the mushrooms and roughly chop the tomatoes.
  • Drain the pasta and keep warm. Heat the oil in the pan. Add the leeks and mushrooms and fry for 4-6 mins until the leeks are tender. Toss in the tomatoes at the last minute. Season with salt if you want to and black pepper. Stir in the macaroni and let it warm through, then crumble the cheese over.

1 cup elbow macaroni, uncooked
1/4 cup butter
3 tablespoons all-purpose flour
1 3/4 cups milk
1/2 teaspoon salt

1 (12 ounce) carton cottage cheese
1 cup cheddar cheese or 1 cup American cheese, shredded
1 (16 ounce) can salmon, drained and flaked
2 eggs, beaten
1 1/2 cups soft breadcrumbs
2 tablespoons butter, melted

Steps:

  • Cook the macaroni according to the package directions. Drain well, and set aside.
  • Melt 1/4 cup butter in a heavy saucepan over low heat; add flour, stirring until smooth. Cook 1 minute, stirring constantly. Gradually add milk; cook over medium heat, stirring constantly until the mixture is thickened and bubbly. Add salt, garlic salt, and pepper, stirring well.
  • Combine the sauce, reserved macaroni, cheeses, salmon, and eggs in a large bowl; stir well. Spoon the mixture into a greased 11 x 7 x1 1/2 inch baking dish. Combine soft breadcrumbs (just put bread in a food processor to make these) and 2 tablespoons melted butter; Stir well. Sprinkle the breadcrumb mixture evenly over the casserole. Bake at 350 degrees for 1 hour or until set.
