CARIBBEAN MACARONI CHEESE PIE

2 cups dried short cut macaroni
3 tablespoons butter, plus extra for greasing
3 tablespoons white flour
2 cups milk
1 teaspoon mild prepared mustard
1/2 teaspoon ground cinnamon
1 1/2 cups sharp cheddar cheese, grated
1 egg, beaten
4 scallions, finely chopped
1/2 cup peas (optional)
3 tablespoons chopped plum tomatoes, canned (or fresh)
2/3 cup corn kernel (fresh or canned or frozen)
salt
pepper
fresh parsley, chopped (to garnish)

Steps:

  • Preheat the oven to 350*F. Bring a large pan of lightly salted water to a boil and cook the macaroni until al dente(about 8 minutes). Rinse under cold water and drain.
  • Melt 2 tbls. of the butter in a pan and stir in the flour. Cook for 1-2 minutes, stirring. Gradually add the milk, whisking constantly until the sauce boils and thickens.
  • Stir in the mustard, cinnamon and 1 cup of the cheese. Cook gently, stirring often, until the cheese has melted, then remove from the heat and whisk in the egg. Set aside.
  • Melt the remaining butter in a small fryiing pan and cook the scallions, chopped tomatoes and corn over a gentle heat for 5-10 minutes. Add peas now if using. Season to taste.
  • Tip half of the cooked macaroni into a greased ovenproof dish. Pour over the other half of the cheese sauce and mix well. Then spoon the tomato and corn mix over the macaroni.
  • Stir the remaining macaroni into the remaining cheese sauce, then spread this carefully over the tomato and corn mixture. Top with the rest of the cheese. Bake for 45 minutes, or until the top is golden and bubbling.

8 ounces elbow macaroni
2 eggs
2 cups cheese, grated
1 1/2 cups evaporated milk
1 teaspoon salt
1/4 teaspoon white pepper

Steps:

  • Boil macaroni in salted water until tender and drain.
  • Beat eggs until fluffy.
  • Combine macaroni, eggs, cheese, milk, salt and pepper.
  • Pour into a greased baking dish and bake at 350 degrees F. until firm, about 30 minutes.

8 oz/250g macaroni(preferably long tubes as opposed to typical American macaroni)
1 tablespoon butter or margarine
12 oz/375g sharp cheddar cheese, grated
1 egg
1 cup 8floz/240ml milk
2 teaspoons onion powder
1 teaspoon hot English mustard
1 teaspoon white pepper
1 teaspoon salt
1/2 teaspoon red pepper sauce or cayenne pepper (optional)
2 tablespoons fine breadcrumbs
2 teaspoons butter
2 tablespoons grated cheddar cheese

Steps:

  • Bring water to the boil and add the broken up macaroni or macaroni elbows and salt. Boil it uncovered until it is just tender but not overcooked (about 8 minutes). Preheat a moderately hot oven 350F, 180C or Gas Mark 4. Drain the macaroni thoroughly, put it back into the same hot saucepan it was cooked in and mix in the butter. Grate the cheese and mix it in with the macaroni a bit at a time, while it is still warm. Whisk the egg until fluffy and add the milk, onion powder, white pepper, salt, pepper sauce and mustard. Pour in with the macaroni and mix. Place in a greased oven proof casserole dish. Top with a little butter, some grated cheese and fine breadcrumbs. Bake in the centre of the oven for about 30-45 minutes depending on the depth of the dish.
