EASY HAMBURGER CORN CASSEROLE



Easy Hamburger Corn Casserole image

This can be a do ahead casserole just pour the ingredients into a casserole dish before you do the final 20 minute simmer and then pop it into a 350F oven 25-30 minutes before serving - put some buttered crumbs on top - I like to serve it over noodles or add cooked macaroni to it for the final simmer - I treat this as a good basic casserole that is tasty as is or even better with your creative touch

2 lbs lean ground beef
spray vegetable oil
1 1/2 cups onions, chopped
5 cloves garlic, chopped (or less)
1 tablespoon chili powder (or more)
1 teaspoon crushed red pepper flakes
2 (14 ounce) cans kernel corn or 4 ears fresh corn, cooked
1 (28 ounce) can diced tomatoes (Ilike to use Italian flavored)
1 cup beef broth
2 tablespoons cornstarch

Steps:

  • Brown the beef on the sprayed pan, add onions, garlic, chile powder& crushed red pepper flakes.
  • Stir until onions are softened and the burger is browned.
  • Mix cornstarch with the beef broth add to the pan.
  • Add tomatoes mix well& simmer until thickened add corn mix and continue simmering for approz 20 minutes Season with salt& pepper.

1 cup elbow macaroni noodles
8.5 oz creamed corn
1 cup corn (fresh or frozen )
3/4 cup milk
1 cup mozzarella cheese (shredded)
1/2 cup Velveeta (cubed )
1 tsp garlic powder
1 tsp dried oregano
1 tsp salt
1 tsp pepper
1/2 cup Panko bread crumbs
1 tsp garlic powder
1 tsp smoked paprika
1/2 tsp chili powder

Steps:

  • Preheat the oven to 350 degrees and spray an 8x8 baking dish with cooking spray.
  • Bring a large pot of salted water to a boil. Add in the macaroni noodles and cook for 7-8 minutes, or until al dente. Drain pasta water and return the pot to medium high heat.
  • Add the creamed corn, milk and Velveeta cubes to the pan, stirring until melted.
  • Add in the mozzarella cheese, corn, garlic powder, dried oregano, salt and pepper. Stir until combined.
  • Transfer the macaroni and cheese to the prepared baking dish. Bake for 25 minutes.
  • When there is about 5 minutes left remaining of bake time, prepare your topping. Line a small baking sheet with foil. Combine Panko, garlic powder, smoked paprika and chili powder and spread into an even layer on the sheet. Bake for 5 minutes or until toasted.
  • Remove the casserole from the oven and sprinkle the topping over it. Let rest 5 minutes before serving.

Steps:

  • Combine all ingredients (except shredded cheeses) in your crock pot and stir.

  • Remove foil and discard. Stir well.
  • Return to oven for an additional 30 minutes until bubbly and cooked.

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally until cooked through but firm to the bite, 8 minutes. Drain.
  • Heat oil in a large pot over medium heat. Cook and stir beef and onion in the hot oil until beef is browned and crumbly, 5 to 7 minutes; drain and discard grease. ½ cup panko
6 tablespoons unsalted butter, divided
¾ cup thinly sliced scallions (from about 6 medium scallions), divided
¼ teaspoon plus ⅛ tsp. kosher salt, divided
¼ cup plus ½ Tbsp. all-purpose flour
3 cups whole milk, warmed
6 ounces white Cheddar cheese, shredded (about 1 ½ cups)
6 ounces Gruyère cheese, shredded (about 1 ½ cups)
8 ounces uncooked elbow macaroni (about 2 cups), cooked according to pkg. directions for al dente
2 cups frozen corn, thawed
½ cup cooked and crumbled bacon (from 8 [1-oz.] slices)
¾ teaspoon dry mustard
¾ teaspoon grated garlic (from 1 large garlic clove)
¼ teaspoon cayenne pepper

Steps:

  • Preheat oven to 350°F with rack about 8 inches from heat source. Place panko in a small bowl. Melt 2 tablespoons of the butter in a large saucepan over medium. Using a rubber spatula, scrape melted butter over panko. Add ¼ cup of the scallions and ⅛ teaspoon of the salt; toss well, and set aside.
  • Add remaining 4 tablespoons butter to saucepan; melt over medium. Add flour; cook, whisking constantly, 1 minute. Gradually whisk in warm milk until combined. Bring to a simmer over medium. Reduce heat to medium-low; cook, whisking often, until mixture thickens, about 4 minutes. Remove from heat. Add Cheddar and Gruyère; stir until cheese melts. Stir in pasta, corn, bacon, mustard, garlic, cayenne, and remaining ½ cup scallions and ¼ teaspoon salt.
  • Spoon pasta mixture into a 2-quart broiler-safe baking dish. Top evenly with panko mixture. Bake in preheated oven until bubbly, about 20 minutes. Remove from oven. Increase oven temperature to broil, and let preheat 3 minutes. Return casserole to oven, and broil until golden, about 2 minutes. Let stand 15 minutes. Serve.
