This is a Thanksgiving favorite in my family. The recipe has been passed down for generations, and this is my first year to host Thanksgiving! It's creamy, hearty, and rich. In my opinion, it's perfect!

Steps:
- Boil Macaroni - Take off heat when 1/2 cooked.
- Drain and Save Water.
- Use Macaroni Water to Make Powdered Milk.
- Mix Milk, Eggs, Margarine, Macaroni, and 1/2 Cheese into Casserole Dish.
- Spread Remaining Cheese on Top.
- Let Sit at Room Temperature for 30 Minutes.
- Cook at 350 Until Heated Through.

TANGY BAKED MACARONI & CHEESE
A recipe in my tried and enjoyed file- I wish I could remember where exactly I have gotten it originally.

Steps:
- Prep work: Preheat your oven to 350°F Grease a 2 quart baking dish. Toss together the colby and mozzarella. Reserve 1/2 cup of the cheese mixture for the topping.
- Bring a large pot of water to boil. Boil the macaroni until al dente, according to package directions (usually 8-10 minutes). Drain and set aside.
- In a small saucepan, heat up the milk - do not let it boil. Whisk in the dry mustard, Worcestershire, salt, and hot sauce. Remove from the heat.
- Stir in the butter and cheeses (except for the reserved) to the drained macaroni. Put the macaroni into the greased baking dish. Pour the hot milk mixture over the macaroni. Top with the reserved 1/2 cup of cheese. Sprinkle with paprika if desired.
- Bake for 30 minutes, and then place under the broiler 1-2 minutes to lightly brown the top.
CLASSIC MACARONI AND CHEESE
This is the classic baked Mac and Cheese of my childhood. You can add sun-dried tomatoes if you wish, or sometimes I substitute minced garlic for the salt and pepper to give it added zing! It can make Saturday Night more fun!

- Preheat oven to 375 degrees F (190 degrees C). Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
- Grease a 2 quart casserole dish. Place a quarter of the macaroni in the bottom, followed by an even layer of one-quarter of the cheese slices. Dot with butter and season with salt and pepper. Repeat layering three times. Pour evaporated milk evenly over the top of all.
- Bake, uncovered, for one hour, or until top is golden brown.

- Preheat oven to 400 degrees F. Cook macaroni in large saucepan as directed on package for al dente pasta. Rinse under cold water; drain well.

CHEDDAR CHEESE POWDER MAC AND CHEESE
Cheese sauce powder can usually be found near the parmesan cheese or online. It makes an excellent and much less alternative to using boxed macaroni and cheese mixes. Cheese powder can also be used on popcorn, steamed vegetables and in soups and casseroles. It is usually whisked into warm milk and butter to make macaroni and cheese sauce.

This is one of the best Macaroni and Cheese I have made at home. Found this recipe on line. The evaporated milk and dry mustard makes this dish extra special. The toasted bread crumbs is an optional topping.

- Heat oven to 350 degrees and set a 1 1/2 quart heatproof dish, such as a souffle pan in the oven to warm. Mix bread crumbs and butter together in a small backing pan set aside. Bring 2 quarts of water to a boil. Add 1 1/2 teaspoons salt and macaroni; cook until almost tender, but still a little firm to the bite. Drain and transfer to preheated dish and stir in butter to melt. Meanwhile, mix eggs, 1 cup evaporated milk, pepper sauce, 1/2 teaspoon salt, 1/4 teaspoon pepper and mustard mixture in a small bowl. Pour egg mixture over noodles along with three-fourths of cheese; stir until thoroughly combined and cheese starts to melt.
- Place bread crumbs in oven to toast until golden brown, 10 to 15 minutes. Remove from oven and set aside. Place pan of macaroni and cheese in oven too and bake for 5 minutes. Remove pan from oven; thoroughly stir macaroni mixture adding a little remaining milk and cheese. Return to oven and cook 5 minutes longer. Remove macaroni pan from oven and stir thoroughly so that macaroni and cheese cooks evenly adding additional cheese and milk if mixture does not look moist and creamy. Return to the oven for a total of 20 minutes, removing pan from oven once more to stir in remaining milk and cheese. Serve immediately, sprinkled with bread crumbs.
