Steps:
- Place the bread crumbs, nuts, salt and pepper in a food processor; cover and pulse until nuts are finely chopped., In a shallow bowl, whisk egg and water. Place flour and nut mixture in separate shallow bowls. Coat fillets with flour, then dip in egg mixture and coat with nut mixture., In a large skillet, heat oil over medium heat; cook fillets for 3-4 minutes on each side or until golden brown., Meanwhile, in a small microwave-safe bowl, combine the brown sugar, soy sauce and ginger. Microwave, uncovered, on high for 30-60 seconds or until sugar is dissolved. Drizzle over fish.

MACADAMIA NUT CRUSTED MAHI MAHI
Steps:
- Preheat oven to 425 degrees F. In a medium bowl, stir together the nuts, panko, flour, and butter. Set aside.
- Place a piece of aluminum foil on a baking sheet and brush it liberally with vegetable oil. Place the mahi mahi on the foil and sprinkle each fillet with salt and pepper on both sides. Bake for 5 minutes. Remove from the oven and brush each fillet with the coconut milk. Divide the nut mixture among the tops of the 4 fillets, patting the mixture to spread and adhere to the fillets. Return to the oven and bake for 5 to 10 minutes, or until the crust is golden brown.
- Remove from the oven and allow to stand 10 minutes before serving.
MACADAMIA CRUSTED AHI TUNA
Steps:
- Rub fish with salt and pepper, 1/4 teaspoon of the olive oil, thyme, and tarragon. Press 1 tablespoon of the chopped macadamia nuts on each side. Put garlic, shallots, and 2 tablespoons olive oil in saute pan and heat on high until oil bubbles. Carefully place fish in the pan and sear about 15 seconds on each side for rare; 30 seconds on each side for medium rare. If you prefer well done fish, start at a low heat and saute until done. This preparation can be done with mahi mahi or ono too.
- Serve with your favorite starch and vegetables.
HAUPIA MACADAMIA NUT BREAD PUDDING
Steps:
- Preheat oven to 300 degrees F.
- Cut croissant into 1-inch cubes and spread along the bottom of a 9 by 13-inch baking pan. Mix eggs, evaporated milk, coconut milk, sugar and water until it has a custard texture. Pour custard mixture over bread cubes.
- Top with shredded coconut and macadamia nuts. Bake for 1 1/2 to 2 hours.
FILLET OF FISH MACADAMIA
Steps:
- Season fish with peppercorns and salt. Mix egg yolk, 2 tablespoons clarified butter and juice of 1/4 lemon together. Brush yolk mixture onto fish and press nuts into each side. Place 2 tablespoons clarified butter in frypan. When hot add fish and fry 3 minutes each side, add heated sherry and set alight. Add chopped parsley stalks. Place fish on serving dish. Add 1 tablespoon butter and extra lemon juice to frypan, pour sauce over the fish.
COCONUT MACADAMIA ENCRUSTED HALIBUT

- pre-heat oven to 425.
- combine coconut milk and 1/4 cup of honey in a baking dish.
- marinate halibut in the mixture for 30 minutes or longer.
- in the mean time, place macadamia nuts in food processor until finely crushed.
- combine bread crumbs, macadamia nuts and coconut shavings on a large plate or platter.
- roll halibut steaks in bread crumb mixture, and transfer to a greased baking dish or cookie sheet.
- combine remaining honey and butter in a small bowl and microwave for 30 seconds (or until liquid).
- drizzle over halibut.
- bake for 15 minutes uncovered, or until cooked through.

Steps:
- Combine nuts and 2 tablespoons flour in food processor, pulsing so as not to overchop and become sticky.
- Beat cayenne into egg with a fork.
- Dredge filet first in flour, then egg, then nuts - pressing nuts onto fish.
- Refrigerate breaded fish while starting sauce.
- Heat 2 tablespoons peanut oil in a heavy saucepan.
- Add curry paste and cook one minute, whisking.
- Add coconut milk and chutney, bring to a boil.
- Boil lightly till milk is reduced to 1/2 its original volume or to desired thickness.
- Turn heat off and cover to keep warm.
- Melt butter in large saute pan over medium heat.
- Add halibut till deep golden brown, turn to brown other side.
- If filets are very thick, place in 400 degree oven for 8 minutes after browning to finish cooking.
- Just before fish is done, add chopped mango and cilantro to sauce.
- Serve sauce over fish sprinkled with a little more cilantro for color interest and perhaps a whole cilantro leaf.
- Serve with Jasmine Rice.

MACADAMIA-CRUSTED SEA BASS WITH MANGO CREAM SAUCE

- In a food processor, combine macadamia nuts, bread crumbs, 1 teaspoon olive oil, black pepper, and red pepper flakes. Process until smooth. Preheat oven to 350 degrees F (175 degrees C).
- In a small saucepan over medium heat, combine mango, cream, and lemon juice. Bring to a boil, reduce heat, and simmer until thickened.
- Season fish with salt and black pepper. Heat 1 tablespoon olive oil and crushed garlic in a large skillet over medium heat. Sear the sea bass on both sides, and remove from heat.
- Transfer fish to preheated oven, and roast until cooked through. Cover the sea bass with macadamia crust, and return to the oven until crust browns. Top with the mango cream sauce.
