MACARONI AND CHEESE MY WAY

18 pieces extra-large shell pasta
2 tablespoons extra-virgin olive oil
1 cup tasso ham or bacon
5 large shallots, minced
1 clove garlic, mined
1 1/2 tablespoons all-purpose flour
1 cup white wine
2 cups cream
1 cup grated fontina
1/2 cup grated sharp Cheddar
2 tablespoons grated Parmesan
18 medium to large shrimp, peeled and deveined
2 cups gently packed spinach
Kosher salt and ground white pepper
Hot pepper sauce, to taste (recommended: Tabasco)
1/2 cup bread crumbs
1/4 cup chopped Italian parsley leaves

Steps:

  • Preheat broiler.
  • Bring a large post of water to a rolling boil, add pasta shells and cook al dente, according to package instructions.
  • Meanwhile, in a large skillet, add the olive oil and tasso or bacon, cook until just crisp,
  • then add shallots and garlic. Cook and stir over moderate heat just until shallots are translucent. Add the flour, cook stirring constantly to blend and toast the flour, about 5 minutes. Add the white wine, reduce until almost dry. Add the cream, bring to a simmer until the sauce coats the back of a spoon, about 5 to 10 minutes. Remove from the heat and stir in the cheeses, shrimp and spinach. Gently stir until cheese is melted, spinach is wilted and shrimp is beginning to turn pink. Season with salt and white pepper, to taste. Season with hot sauce, to taste.
  • Drain the pasta, making sure to shake all of the water off and out of the shells.
  • In a large flameproof baking dish, place drained shells. Add the cheese and shrimp mixture and gently fold into the pasta. Sprinkle with the bread crumbs and chopped parsley. Place under the broiler until the breadcrumbs are toasted about 2 to 3 minutes.

2 2/3 cups small elbow macaroni (or bow ties or ditali)
4 tablespoons butter
1 cup fresh whole wheat bread crumbs
1/4 cup all-purpose flour
1 1/2 cups milk
1 1/2 cups vegetable or chicken broth
4 green onions, thinly sliced
3 cups (12 ounces) grated cheddar cheese

Steps:

  • Cook macaroni in boiling salted water until tender, but firm. Drain well. Preheat the broiler. Melt the butter in a saucepan. Remove and toss 1 tablespoon of the butter with the bread crumbs. Reserve. Add the flour to the remaining butter, whisking for 2 minutes. Slowly whisk in the milk and broth. Bring to a boil, whisking constantly. Add green onions. Whisk 2 minutes longer. Remove from heat or keep on very, very low
  • heat. Add half of the cheese, stirring until smooth. Add remaining cheese, stirring until melted and smooth. Add the macaroni to the sauce and stir well. Spoon into a 2-quart shallow baking dish. Sprinkle with the buttered crumbs. Broil until the crumbs brown, about 2 minutes. Serve immediately. (If you wish, the mixture can be prepared before broiling up to several hours ahead and refrigerated. You may need to stir in a little more milk or broth if it thickens to much. Then bake, covered, for 15 minutes at 375 degrees. Uncover, and bake about I0 minutes more until crumbs are browned and casserole is hot and bubbly.)
  • IDEAS FOR LIVENING UP BOXED MAC AND CHEESE
  • Stir in chopped pasta-ready canned tomatoes and chopped fresh basil (Italian)
  • Stir in a can of chopped green chiles and a teaspoon of chili powder (Mexican)
  • Stir in a can of drained water-packed tuna fish, a small can of olives, and some chopped fresh herb such as parsley, basil, thyme, tarragon, sage, or chives

4 tablespoons butter, divided
3 -6 ounces thinly sliced prosciutto (can substitute pancetta)
1 bunch basil, washed
4 -6 slices bread (I prefer sourdough or marble rye)
1 (20 ounce) package Simply Macaroni & Cheese, prepared to package directions

Steps:

  • Melt 1/4 -1/3 of butter in large skillet over medium heat.
  • Place 1-2 ounces prosciutto on 1 slice of bread. Cover prosciutto with single layer of basil leaves. Scoop roughly 2/3 -1 cup of prepared macaroni and cheese on top of basil and top with another slice of bread to form a sandwich.
  • Place sandwich in skillet with heated butter and cook for about 3 minutes on each side, or until bread is toasted enough for your taste.
  • Repeat with remaining ingredients.

20 ounces Simply Macaroni & Cheese
1 1/2 cups bacon
8 ounces cream cheese
8 ounces smoked gouda cheese
1 cup Cheez-It crackers

Steps:

  • Cut bacon into small pieces. Fry until golden brown.
  • Drain bacon.
  • Open mac & cheese and pour into deep sauce pan.
  • Add 8oz cream cheese. Stir until melted.
  • Add 8oz shredded smoked gouda. Stir until melted.
  • Add 1 cup of the bacon to mixture.
  • Pour into baking dish.
  • Put crushed crackers on top.
  • Add remaining bacon pieces on top.
  • Bake at 350 degrees for 20 to 25 minutes.
  • Watch it, as ovens vary in temperature.

40 ounces Simply Macaroni & Cheese
1/2 cup chopped green onion
1 large egg
1 tablespoon steak seasoning
1 1/2 cups self rising flour

Steps:

  • Cook Simply Macaroni & Cheese as directed on package.
  • After cooked, place the macaroni & cheese in a large bowl (more deep than wide) and mix the green onions. Set aside to cool for about an hour. This will allow the macaroni and cheese to firm up and stick together. May have to let sit longer if not sticking together. (also great when using left over Mac & cheese!).
  • Whisk egg until well blended. This will be used to dip your mac & cheese "balls" into so the flour mixture will stick to it for a batter.
  • Take the flour and add the steak seasoning to it. Mix well.
  • Use an ice cream scoop or round table spoon to form rounded chunks of mac & cheese.
  • Gently dip the mac & cheese balls into the egg batter and then roll in the flour. Place into frying oil and fry until slightly golden brown. (approximately 1 minute on medium heat - - be sure to turn on all sides).
  • Repeat the process until you have all fried up!
  • Makes about 12.
  • Enjoy!

Steps:

  • Prepare Simply Macaroni and Cheese according to the package directions. Add the next 4 ingredients. Pour into 2 Quart casserole and cover. Bake at 350 degrees for 30 minutes.
  • Serve with the Vegetable of Choice.

2 (20 ounce) packages Simply Macaroni & Cheese, heated as directed on package
1 (16 ounce) bag frozen spinach, thawed and squeezed dry
2/3 cup breadcrumbs
3 tablespoons butter, melted
2 tablespoons parmesan cheese, grated

Steps:

  • Heat oven to 350 degrees F. Coat a 2-3 quart glass baking dish with cooking spray. Set aside.
  • Transfer 1 package of the heated Simply Macaroni and Cheese to the bottom of prepared baking dish and spread evenly. Top evenly with spoonfuls of spinach. Cover spinach with 2nd package of macaroni and cheese and spread evenly.
  • In a small bowl, combine the breadcrumbs, butter and cheese. Sprinkle over casserole.
  • Bake for 30-35 minutes or until hot and bubbly and crumbs are just starting to brown.

1 (20 ounce) package Simply Macaroni & Cheese
3 cups mushrooms, sliced (crimini and shitake)
4 tablespoons bacon fat or 4 tablespoons vegetable oil, divided
1 tablespoon white truffle oil
1/2 cup panko breadcrumbs

Steps:

  • Thaw overnight the package of Simply Macaroni & Cheese in the refrigerator.
  • When ready to cook, preheat oven for 400 degrees F.
  • In a frying pan or large skillet, heat 2 tbsp of the bacon fat on medium-high. When fat has melted and is sizzling, add the mushrooms and saute them for 4-5 minutes.
  • Open the package of Simply Macaroni & Cheese and add to the frying pan. Mix well and allow to cook for 2 minutes. Sprinkle the white truffle oil around the pan and stir well to combine all of the flavors.
  • Pour the mixture into a deep glass or ceramic bread loaf pan. Melt the remaining 2 tbsp of bacon fat in the microwave and stir in the panko breadcrumbs. Stir well to incorporate the bacon fat. Top the mac and cheese with the panko breadcrumbs evenly.
  • Bake in the upper portion of the oven for 16-20 minutes, or until the topping is golden and the cheese sauce is bubbly. Serve hot!
