My dear friend Lynn shared this recipe with me and it was absolutely addicting!!! I was so enamoured with it that I began eating it for breakfast!!!! Hope you enjoy it as well!!!

Steps:
- In a blender or very large food processor puree the tomatoes, red pepper, garlic, carrots, lemon juice, spices, olive oil,@ 1/2 of the cucumber chunks and a 1/2 cup of water.
- Pour into a large bowl or tupperware container, stir in the remainder of the diced cucumber.
- Cover and chill overnight or for at least three hours.
- To serve, garnish soup with onion, avocado, cilantro, radishes, etc.

GAZPACHO
This was originally based on the Silver Palate Gazpacho, but it has evolved over the years. I only make this in the summer, because fresh Jersey tomatoes make the dish.

Steps:
- Wash and coarsely chop the tomatoes, saving the juice.
- Core, seed and coarsely chop the peppers.
- Peel, seed and coarsely chop the cucumbers.
- Dice the celery.
- Whisk vinegar, oil, tomato juice and V8 together in a small bowl.
- Puree the vegetables in small batches, using a blender or food processor. Add tomato juice mixture, as necessary. Do not puree completely -- mixture should be chunky and crunchy.
- Stir in cayenne and dill and salt and pepper to taste.
- Cover and chill for at least 4 hours.

QUICK GAZPACHO
This quick and delicious soup is made with leftover salad -- tomatoes, lettuce, olives, onions, cucs, including the dressing that's still clinging to it! Preparation time is included in the chilling time.

Steps:
- First, you may want to remove any bits of cheese from the salad before blending, or it may lend an extra zip you'll find tasty, so be your own guide.
- Put the leftover salad and additional tomato into a blender and blend until chunky or smooth, depending upon your taste.
- Adjust seasonings.
- Cover and chill thoroughly in the refrigerator.
- Serve in champagne glasses or small bowls.
- Top with croutons and cucumber bits.
