1/2 pound shiitake mushrooms, stems removed and caps sliced 1/2-inch
2 tablespoons unsalted butter
1/2 pound cremini mushrooms, stems removed and caps sliced 1/2-inch
3 tablespoons cream sherry
Kosher salt
1 pound pasta such as cavatappi
3 ounces white truffle butter, such as D'Artagnan
1/2 cup all-purpose flour
1 quart whole milk, scalded
12 ounces Gruyere cheese, grated (4 cups)
8 ounces extra-sharp Cheddar, grated (2 1/2 to 3 cups)
1 teaspoon freshly ground black pepper
1/2 teaspoon ground nutmeg
2 garlic cloves, chopped
3 tablespoons chopped fresh parsley
1 1/2 cups fresh white bread crumbs

Steps:

  • Preheat the oven to 375 degrees.
  • Heat the butter and 2 tablespoons of olive oil in a large (12-inch) saute pan, add the mushrooms, and cook over medium heat for 3 to 5 minutes, until they are tender. Add the sherry and continue to saute for a few more minutes, until the sherry is absorbed. Set aside.
  • Bring a large pot of water to a boil and add a splash of olive oil and a pinch of salt. Add the pasta and cook for 6 to 8 minutes, until al dente. Drain well.
  • Meanwhile, melt the truffle butter in a large (4-quart) saucepan and whisk in the flour. Cook for 2 minutes over low heat, stirring constantly with a whisk. Slowly whisk in the hot milk and cook for 2 minutes, stirring constantly with a wooden spoon, until the white sauce is thickened and creamy. Off the heat, add the Gruyere, Cheddar, 1 1/2 tablespoons salt, the pepper, and nutmeg.
  • Combine the pasta, sauce, and mushrooms in a large bowl and pour them into a 10 by 13 by 2-inch baking dish.
  • Place the garlic and parsley in the bowl of a food processor fitted with the steel blade and pulse until they're minced. Add the bread crumbs and pulse to combine. Sprinkle the crumbs over the pasta and bake for 35 to 45 minutes, until the sauce is bubbly and the crumbs are golden brown. Serve hot.

1 16 oz box dry Cavatappi pasta (Twisted Macaroni)
1 lb jumbo lump crab meat
1/2 cup unsalted butter
1/2 cup all-purpose flour
1 1/2 tsp seafood seasoning (divided (i.e. Old Bay, Seafood Magic, your favorite))
1/2 tsp garlic salt
1/2 tsp ground mustard
1/4 tsp black pepper
2 oz chive & onion cream cheese (softened)
5 cups whole milk
5 cups shredded Borden Cheddar and Monterey Jack cheese (divided)
Topping:
2 Tbsp unsalted butter (melted)
1/2 cup panko breadcrumbs
1 Tbsp grated Parmesan cheese
1/4 tsp seafood seasoning
1 Tbsp chopped fresh Italian parsley

Steps:

  • Preheat the oven to 350°F. Spray a 13 x 9 inch baking dish with cooking spray. Set aside.
  • Cook the pasta in salted water per the package directions until al dente. Drain well and set aside.
  • Pick over the crab meat removing any shells and cartilage. Set aside.
  • In a medium-size heavy bottomed saucepan melt 1/2 cup butter over medium heat.
  • To the melted butter add flour, 1 1/2 tsp seafood seasoning, garlic salt, ground mustard and black pepper. Mix until the flour has been absorbed by the butter stirring constantly.
  • Gradually whisk in the milk. Whisk constantly to prevent clumping.
  • Bring the milk to a boil then immediately lower the heat to low. Simmer for 3-5 minutes gently bubbling stirring to prevent sticking.
  • Turn off the heat. Add cream cheese to the sauce. Stir until melted then add 3 cups of Borden shredded Cheddar and Monterey Jack cheese. Remove from the heat, stirring until melted.
  • Add the cooked pasta and crab meat to a large mixing bowl.
  • Pour the cheese sauce over and mix until fully coated and the crab meat is evenly distributed.
  • Pour 1/2 into the baking dish. Top with 1 cup shredded cheese. Repeat with macaroni then top with the final 1 cup of shredded cheese.
  • Topping: Melt 2 Tbsp butter in a small microwave safe bowl.. Mix with the panko bread crumbs, Parmesan cheese, and 1/4 tsp seafood seasoning. (Add more or less to your taste) Sprinkle on top.
  • Place into the oven and bake for 30-40 minutes or until the top is golden and and the edges are bubbly.
  • Garnish with chopped parsley just before serving.

500g macaroni
1l whole milk
2 bay leaves
60g butter
60g plain flour
2 tbsp Dijon mustard
2 tbsp roughly chopped thyme leaves
80g porcini white truffle paste or 2 tbsp truffle oil
1 tbsp porcini powder (or dried porcini mushrooms blitzed to a powder in a food processor)
80g taleggio cheese , chopped
125g ball of mozzarella , chopped
100g mature cheddar , grated
30g fresh breadcrumbs
30g parmesan , finely grated

Steps:

  • Cook the macaroni following pack instructions until al dente. Drain, rinse with cold water and set aside to cool.
  • Tip the milk and bay leaves into a pan and bring to a simmer. Remove from the heat. Melt the butter in a large non-stick saucepan, then stir in the flour to make a thick paste, continuing to stir for 3-4 mins. Remove and discard the bay leaves from the milk, then gradually pour it into the flour and butter mix, continuously stirring to keep the sauce smooth. Add the mustard, thyme, truffle paste and porcini powder, then stir in the taleggio cheese and mozzarella until melted slightly. Remove from the heat, tip in the macaroni and stir to coat. Scrape into an ovenproof dish. Will keep chilled for up to 24 hrs.
  • Heat the oven to 200C/180C fan/gas 6. Sprinkle over the cheddar, breadcrumbs and parmesan, and bake for 20 mins until golden. For a crispy top, grill for 5 mins or until just golden. Serve straightaway.

1 pound Elbow Macaroni
1 pound Lump Crab Meat
2 cup 2% Reduced Fat Milk
4 tablespoon All-Purpose Flour
2 1/2 tablespoon Butter
8 ounce Sharp White Cheddar Cheese
8 ounce Mild Yellow Cheddar
1 tablespoon Old Bay® Seasoning
1/2 cup Breadcrumbs
1/2 cup Crab Flavored Potato Chips

Steps:

  • Preheat oven to 350 degrees F (180 degrees C).
  • Over high heat, bring a large pot of water to a boil. Add the Elbow Macaroni (1 pound) and cook until al dente - about 7 minutes. Drain and set aside.
  • Pick through the Lump Crab Meat (1 pound) to check for shells and set aside. Grate the Mild Yellow Cheddar (8 ounce) and Sharp White Cheddar Cheese (8 ounce) and combine in a medium-size bowl. Crush the Crab Flavored Potato Chips (1/2 cup).
  • In a heavy bottom sauce pan, melt the Butter (2 1/2 tablespoon) over medium heat. Add the All-Purpose Flour (4 tablespoon) and mix with a wooden spoon. Cook for about 2 minutes or until the roux smells like butter. If you're using whole butter, wait a few seconds until the butter stops bubbling. This means all the water is gone!
  • While whisking, add the 2% Reduced Fat Milk (2 cup). Whisk vigorously to incorporate. Bring the milk to a simmer, stirring often. After about 5 minutes the Bechamel will thicken.
  • Add the Old Bay® Seasoning (1 tablespoon) and slowly start to add the cheese.
  • Once melted, mixed, and smooth, add in the crab meat and noodles. Transfer to a baking dish.
  • Mix the plain Breadcrumbs (1/2 cup) and crushed crab chips together. Sprinkle on top of the mac and cheese. Bake for 25 minutes.
  • Garnish with Fresh Parsley (to taste) and enjoy!

2 tablespoons sea salt
1 pound elbow macaroni
2 cups chardonnay
3 cups heavy cream
2 tablespoons Dijon mustard
Pinch sea salt
3 cups grated Swiss cheese
1/2 cup grated sharp Cheddar
1/2 cup finely grated Parmesan
1 tablespoon Worcestershire sauce
2 teaspoons hot sauce, such as Tabasco
1 pound lump crabmeat, picked of any shell bits
1 cup panko breadcrumbs, toasted
1/2 cup finely grated Parmesan
1/2 cup chopped fresh flat-leaf parsley
1/2 cup grated Swiss cheese

Steps:

  • Preheat the oven to 350 degrees F.
  • For the pasta: In a large pot, bring 4 quarts water and the salt to a rolling boil. It should taste like seawater. Stir in the macaroni and cook but leave quite firm, 6 to 8 minutes. Drain the pasta, reserving some of the cooking liquid.
  • For the sauce: In a medium pot, reduce the wine over medium heat until the liquid measures about 1/2 cup, 5 to 8 minutes. Reduce the heat to medium-low and add the cream, mustard and a pinch of salt. Bring to a gentle simmer. Stir in the Swiss cheese, Cheddar, Parmesan, Worcestershire and hot sauce and warm until the cheese melts, 3 to 5 minutes.
  • Add the macaroni to the cream mixture and stir gently to blend. Allow the macaroni to rest on the stove so the pasta absorbs the flavors, 5 to 10 minutes. Transfer half of the macaroni to a 9-by-13-inch oven-proof baking dish, sprinkle with half of the crab in an even layer. Gently layer on the remaining macaroni, and then another layer of crab.
  • For the topping: In a medium bowl, mix the breadcrumbs, Parmesan, parsley and Swiss cheese. Top the pasta with the breadcrumbs and bake until browned and hot, 15 to 20 minutes.

Steps:

  • Preheat the oven to 375 degrees F.
  • Heat the butter and 2 tablespoons oil in a large (12-inch) sauté pan, add the mushrooms, and cook over medium heat for 3 to 5 minutes, until tender. Add the sherry and sauté for 2 to 3 minutes, until the sherry is absorbed. Set aside.
  • Meanwhile, add a tablespoon of salt to a large pot of water and bring to a boil. Add the pasta, cook for 6 to 8 minutes, until al dente, and drain.
  • Scald the milk in a medium saucepan. Melt the truffle butter in a large (4-quart) saucepan and whisk in the flour. Cook over low heat for 2 minutes, whisking constantly. Slowly add the scalded milk and cook for 2 minutes, stirring with a wooden spoon, until thick and creamy. Off the heat, add the Gruyère, Cheddar, 2 tablespoons salt, 2 teaspoons pepper, and the nutmeg.
  • In a large bowl, combine the pasta, the cream sauce, and two thirds of the mushrooms and pour into a 10 × 13 × 2-inch ovenproof baking dish. Place the bread, garlic, and parsley in the bowl of a food processor fitted with the steel blade and process to make fine crumbs. Sprinkle the herbed crumbs evenly on the pasta and arrange the remaining mushrooms down the middle.
  • Bake for 35 to 45 minutes, until the sauce is bubbly and the crumbs are golden brown. Let stand for 5 minutes and serve hot.

Salt
1 tablespoon vegetable oil, 1 turn of the pan
3 slices bacon, chopped
1 medium onion, chopped
2 ribs celery, chopped, with greens
1/2 small red bell pepper, chopped
2 tablespoons all-purpose flour
1 cup chicken stock
1 cup milk
2 cups shredded sharp white Cheddar
1 (6-ounce) tub lump fresh crabmeat, flaked
1 cup frozen corn kernels
1 tablespoon fresh thyme leaves, chopped
Couple pinches cayenne pepper
3 tablespoons chopped or snipped fresh chives

Steps:

  • Bring pasta water to boil and salt it. Cook pasta to al dente.
  • While pasta cooks, heat a large, deep skillet over medium to medium-high heat. Add extra-virgin olive oil to pan with the bacon. Cook bacon 3 minutes. Add onions and celery and cook 3 minutes more. Add bell pepper and cook another minute or two. Add flour and cook 1 to 2 minutes. Whisk in stock, then milk. When milk bubbles, add crab and corn to heat through, another minute. Stir in cheese, thyme and cayenne pepper. Melt cheese into sauce. Drain pasta and toss with cheese, crab and corn sauce. Adjust seasoning. Ladle in bowls and garnish with chives.

2 teaspoons fresh thyme
1 bulb Roasted Garlic, recipe follows
3 tablespoons all-purpose flour
2 cups heavy cream
4 ounces mascarpone cheese
1 ounce preserved truffles, grated
1 teaspoon freshly ground black pepper
1/2 teaspoon smoked paprika
2 1/2 cups grated white Cheddar
2 1/2 cups grated Havarti cheese
8 large garlic bulbs
1 to 2 tablespoons olive oil
Pinch kosher salt
Pinch freshly ground black pepper

Steps:

  • Preheat the oven to 375 degrees F. Butter a 9-by-13-inch baking dish.
  • Cook the pasta in salted water 2 minutes under the recommended cook time. Reserve 1 cup of the pasta water.
  • Melt the butter in a large pot over medium heat. Add the onions and thyme, then squeeze in the roasted garlic flesh from the skin and cook to soften the onions, 2 to 3 minutes.
  • Sprinkle over the flour and cook for a minute or two. Stir in the heavy cream and reserved pasta water. Add the mascarpone, truffles, pepper, salt and paprika. Stir to combine. Add 1 1/2 cups of each cheese and stir to melt.
  • In the prepared baking dish, layer half of the pasta, half of the remaining cheese, the remaining pasta and then top with the remaining cheese. Bake until bubbly, about 10 minutes, then broil until golden, 3 to 4 minutes. Allow to sit for a few minutes before serving.
  • Preheat the oven to 375 degrees F.
  • Cut the top quarter off each garlic bulb. Place the bulbs in a pie pan and drizzle the tops with olive oil. Sprinkle with salt and pepper. Cover with foil and bake until the garlic is roasted and soft, about 45 minutes.

2 ears of white corn, with corn removed from the cob
2 tablespoons white onion, chopped
3 tablespoons white Alba truffle butter (preferably Urbani)
3 cups heavy cream
3 ounces of black truffle cheese, imported from Italy
3 ounces lump crab meat
Plain bread crumbs, enough for the topping
Parmigiano-Reggiano cheese, grated
4 U/10 (the size of the scallop and how many in a pound), dry packed scallops
Urbani white truffle oil
Salt and fresh ground black pepper to taste
3 cups cavatelli pasta, handmade at Naples Tomato

Steps:

  • Place a small sauce pot on medium heat on top of the stove. Add cream, corn and white onion. In a medium pot, bring 8 cups of water to a boil. Add a generous amount of salt to the boiling water and bring to a boil again. Add cavatelli. When they float to the top, they are done. Strain the pasta and set aside. Salt and pepper scallops and grill to desired temperature. Set scallops aside. When onions are translucent in the cream mixture, place the entire mixture in a blender and puree until smooth. Return the pureed sauce to the pan and place over medium heat. Add the cheese and Alba white truffle butter to the sauce and stir until it melts. Turn off the burner and add the crab and pasta. Add salt and pepper to taste. Put the pasta mixture in a baking dish (or four individual baking dishes) and top with bread crumbs and Parmesan cheese. Place under the broiler until golden brown.
