KALBI MARINADE
Kalbi marinade is the perfect complement to Korean style short ribs (flanken style cut). But once you master this Korean sauce, you'll realize it's also versatile - try it with chicken, pork, other cuts of steak and even tofu!

Steps:
- Place all ingredients in a medium sized bowl or at least 2 cup measuring cup.
- Whisk together well.
- Pour over ribs and let marinate 6 - 8 hours or overnight.

LOW-SODIUM KALBI
I like to use boneless beef ribs for this, so I guess it's somewhere between kalbi and bulgogi. Don't be put off by the long ingredient list--it's really not at all difficult to make. You can use this marinade for kalbi (thin strips of beef short ribs), bulgogi (thinly sliced beef), or on chicken. This recipe freezes well, too, though I would recommend sticking with thicker cuts of meat to freeze.

Steps:
- Combine all ingredients except ribs in a 1 gallon ziplock bag. Add ribs and seal bag, squeezing out excess air.
- Work sauce into ribs by kneading bag (be careful not to poke a hole in it).
- Marinade several hours (no more than 4 if using very thin meat, such as for sukiyaki), or freeze.
- To cook: If frozen, thaw first by placing in refrigerator the day before.
- Drain meat, reserving marinade.
- Grill over medium-hot coals until done to taste (time will vary depending on meat used).
- Meanwhile, place reserved marinade in a small saucepan, bring to a boil, and simmer for 3-5 minutes.
- I like to serve this sliced, over rice topped with shredded cabbage (I use undressed coleslaw salad mix), with the sauce drizzled on top. Kimchi makes a good side dish, too.

- Breads and rolls. As noted above, this category tops the list not because bread is especially salty (a slice contains about 100 to 200 mg of sodium) but because we eat so much of it.

- Savory snacks. This includes chips, popcorn, pretzels, snack mixes, and crackers.
- Chicken. This popular protein is often prepared in commercial kitchens, which means added salt. Rotisserie or fried chicken from a grocery store or restaurant contains up to four times the sodium of plain chicken prepared at home.
- Cheese. The amount of sodium in cheese varies widely, even among the same varieties, so check the labels carefully. Feta and blue cheese are among the saltiest varieties, while goat cheese, ricotta, and Neufchâtel (which is similar to cream cheese) tend to be far lower in sodium.
- Eggs and omelets. An egg contains only 62 mg of sodium, so this category again reflects other ingredients and cooking methods. For example, most fast-food egg breakfast sandwiches are made with cheese and ham on an English muffin, and omelets are also often full of cheese, bacon, and ham.
