6 medium sweet onions
1 whole garlic bulb
3 cups reduced-sodium chicken broth, divided
1/2 cup buttermilk
1 tablespoon minced fresh thyme or 1 teaspoon dried thyme
1/2 teaspoon coarsely ground pepper
1/2 cup shredded Swiss cheese

Steps:

  • Place the unpeeled onions and garlic bulb in a 15x10x1-in. baking pan coated with cooking spray. Spritz with cooking spray. Bake, uncovered, at 450° for 50-60 minutes or until tender. , When cool enough to handle, peel the onions and garlic. Place in a blender; add 1 cup of broth. Cover and process until smooth; transfer to a large saucepan. Add the buttermilk, thyme, pepper and remaining broth; heat through. Garnish with cheese.

3 Spanish onions, cut in 1/2 lengthwise then thinly sliced
3 large shallots, cut in half
1 head garlic, cloves separated, peeled and cut in half (large)
2 teaspoons olive oil
4 cups chicken broth
1/4 cup brandy
1 tablespoon fresh thyme, chopped, or 1 tsp. dried thyme leaves
1/4 cup parmesan cheese, freshly grated

Steps:

  • Set oven rack at lowest level, preheat to 450 degrees.
  • Combine onions, shallots, garlic and oil in large shallow roasting pan. Roast for 20 to 30 minutes, stirring every 5 minutes, or until onions are golden brown.
  • Remove from oven and pour in 1 cup of chicken broth. Stir liquid in pan, scraping the bottom to loosen and dissolve caramelized bits.
  • Transfer the onion mixture to a soup pot and add brandy, thyme and remaining broth. Bring to a boil, reduce heat to low and simmer, covered, for 30 minutes.
  • Season to taste with salt and pepper.
  • Serve topped with Parmesan and perhaps some toasted French bread

Recipe..
All veggies roughly chopped, except carrot.
3 - Med. potatoes.
1 - Lg. carrot.
1 - Sm. onion.
1/2 - Parsnip.
2 or 3 Green onions.
1/2 bulb or 6 gloves garlic.
1 - Cube chicken of veggie stock.
2 to 3 Cooking oil.
1/4 Cup - Butter.
1 tbs. Parsley.
1/2 Cup milk or 1/3 cup cream.
Water as needed.
Salt and pepper to taste.

Steps:

  • Add oil, fry onions, add butter and garlic (do not over- fry garlic).
  • Add water to 3/4 of pot, Add cube stock, parsnip and uncut carrot. Boil 30 mins.
  • Remove carrot and slice, set aside.
  • Cool down rest, add to blender and make creamy, return to pot.
  • Add carrots, parsley, Green onions, milk/cream and salt/pepper to taste. Simmer 15 to 20 min™s.

1 cup dry sherry
4 onions, thinly sliced
9 cloves garlic, minced
1 tablespoon whole wheat flour
4 cups vegetable broth
½ teaspoon ground black pepper

Steps:

  • In a large, heavy stockpot over medium heat, cook sherry until bubbling. Add the onions, and reduce heat to medium. Cook onions slowly, stirring frequently, for at least 20 minutes, until they begin to form a paste.
  • Stir in the garlic and continue to cook for 5 to 10 minutes, until garlic begins to look brown.
  • Stir in flour and cook for 2 minutes. Pour in broth and bring to a boil. Reduce heat and simmer for 20 minutes. Season with pepper and salt. Ladle soup into bowls, and float a slice of toasted bread on top of each serving.

4 bulbs garlic
¼ cup olive oil
6 tablespoons unsalted butter
4 leeks, chopped
1 onion, chopped
6 tablespoons all-purpose flour
4 cups chicken broth
⅓ cup dry sherry
1 cup heavy whipping cream
1 tablespoon lemon juice, or to taste
salt to taste
¼ teaspoon freshly ground white pepper
2 tablespoons chopped fresh chives

Steps:

  • Cut off top 1/4 inch of each garlic head. Place in a small, shallow baking dish. Drizzle olive oil over. Bake at 350 degrees F (175 degrees C) until golden, about 1 hour. Cool slightly. Press individual garlic cloves between thumb and finger to release. Chop garlic.
  • Melt butter or margarine in heavy large saucepan over medium heat. Add garlic, leeks, and onion; saute until onion is translucent, about 8 minutes. Add flour and cook 10 minutes, stirring occasionally. Stir in hot broth and sherry. Simmer 20 minutes, stirring occasionally. Cool slightly.
  • Puree soup in batches in a blender or food processor.
  • Return soup to saucepan, and add cream. Simmer until thickened, about 10 minutes. Add lemon juice to taste. Season with salt and white pepper. Ladle into bowls. Garnish with chives.

Easy to make and great for a cold or rainy day! Also a great way to use up any old vegetables in the fridge- I used celery and cabbage, but I'm sure zucchini, yellow squash, cooked eggplant or potatoes would also work (just try to avoid any vegetables that have a strong flavor that would clash with the squash). If you aren't worried about cholesterol or fat (I made this version for my mom, who cannot have cholesterol), you can substitute the soy milk with half and half or cream, and the fake butter spread with real butter.

2 onions, chopped
4 garlic cloves, whole and unpeeled
2 -3 tablespoons fresh ginger (about 1-inch piece)
1 -2 celery rib, chopped
1 -2 cup cabbage, chopped fine
2 -3 tablespoons oil, spread (or real butter)
3 tablespoons white flour
1 1/2 teaspoons curry powder (ready-made, or make your own)
1 teaspoon dried dill weed
1 teaspoon red pepper flakes, ground
1/2 teaspoon cinnamon
2 chicken bouillon cubes
2 1/2 cups water (may need adjusting)
1 1/2 cups soymilk, plain
2 medium acorn squash (about 3-4 cups)
1 dash lemon juice
salt and pepper

Steps:

  • Preheat the oven to 400 degrees. Cut the acorn squash in half, and place in a glass baking pan along with the whole unpeeled garlic. Bake for about 1 hour or until the squash is tender.
  • Meanwhile, melt the oil spread (or butter) in a saucepan and saute the onions and ginger until the onions are translucent. Add the celery and cabbage, and cook until tender.
  • In a small bowl, mix the flour together with all the dry spices. Stir into the vegetables, until combined. Meanwhile, boil the water in the microwave or a kettle, and dissolve the bouillon cubes in it. Add the boiling water to the pot, along with the soy milk. Heat until it barely reaches a boil, then reduce heat.
  • Remove the seeds and pulp from the squash, and slice off the peel. Chop into cubes or mash, and add to the soup. Peel and mash the roasted garlic, and add this as well.
  • Add the lemon juice.
  • Using an immersion blender or a traditional blender, puree until smooth. Taste and adjust spices if needed. Season with salt and pepper, and serve hot!

ROASTED THAI PUMPKIN SOUP (LOW FAT)



Roasted Thai Pumpkin Soup (Low Fat) image

I found this delicious low fat soup on a weight watcher's forum years ago, it has become a favourite. We can now buy skim evaporated coconut milk, in Australia, so the coconut essence isn't necessary if you are able to find this. I don't usually add the star anise because I am not fond of the flavour of aniseed although it was in the original recipe.

1 whole butternut pumpkin
1/2 pumpkin, I use kent
3 onions, chopped
4 garlic cloves, crushed
3 -4 teaspoons chili, I use jar chilli
1 liter chicken stock
1 pinch cumin
1 pinch coriander
1 pinch cardamom
1 star anise (optional)
1 teaspoon turmeric
2 tablespoons lemongrass, I use minced from a jar
salt & freshly ground black pepper
1 (375 g) can skim evaporated milk
3 drops coconut essence

Steps:

  • Bake whole butternut pumpkin, without seeds but with skin on and cut into portions, in 180 deg C (350 deg F) oven until soft, about 20 minutes.
  • Peel and seed the half Kent pumpkin and cut into small portions.
  • Sauté onions, garlic and chilli in a little olive oil (or chicken stock, if you want less fat) in a large pan.
  • Add chicken stock, the kent pumpkin, the spices, herbs and pepper & salt and simmer until soft - remove star anise.
  • Scrape off roasted pumpkin from skin and add to other ingredients then blend all until smooth.
  • Mix in skim evaporated milk and essence, more stock may be needed if soup is too thick, re-heat.
