This pie is magical! I think the secret is the lemon juice and lemon zest, or maybe it's the flaky crust. The pie crust makes two shells, I save the second shell for a quiche, or freeze it for another pie at some later date. One of my best friends always wants me to make this when she has covered dish parties, or we invite them to dinner. The recipe is adapted from a wonderful cookbook, Twelve Company Dinners, that my father gave to me Christmas, 1964. I have posted a separate recipe of the Recipe #408669 for anyone who needs more detailed instruction and more pictures. For the best pie, be sure to remove filling from the heat before you stir in the lemon juice and butter and spread the meringue while the filling is hot! Be sure to add 3 to 6 hours for cooling. Time includes firming up time. If no Pie Mix: 1 1/2 cups sugar 3 tablespoons corn starch 3 tablespoons flour dash salt 1 1/2 cups water 3 egg yolks the same butter, lemon rind, and juice.

2 cups flour (sifted)
1/2 teaspoon salt
1/2 cup corn oil (Wesson)
1/4 cup milk (cold)
1 (3 ounce) package lemon pie filling mix (not the instant)
2/3 cup sugar
3 egg yolks
1 3/4 cups water
2 tablespoons butter
2 tablespoons lemon zest
2 tablespoons lemon juice
3 egg whites
1/4 teaspoon cream of tartar
6 tablespoons sugar

Steps:

  • Sift measured flour and salt into a bowl.
  • Pour oil into glass measuring cup and add cold milk to make 3/4 cup liquid.
  • Pour liquid into bowl and stir with a fork.
  • Save half the dough to use later.
  • Roll remaining half of dough into circle between two sheets of wax paper.
  • Place into pie pan, make standing rim, and prick with fork.
  • Bake in oven 450°F for 8- 10 minutes.
  • Remove pan from oven and set aside to cool.
  • Reduce oven temperature to 425°F.
  • Mix filling mix with sugar in a saucepan (not double-boiler).
  • Add egg yolks and stir again.
  • Add water, stirring constantly over medium heat, until mixture comes to a boil and thickens.
  • Remove from heat and let cool. (this is when I zest and squeeze the lemon).
  • Add butter, juice and zest.
  • Let sit until meringue is ready.
  • Put 5 tablespoons of the sugar into a measuring cup.
  • Beat egg whites with cream of tarter until frothy. Add 1 tablespoon of sugar and continue beating until whites start to stiffen. Gradually add remaining sugar while continuing to beat. Continue to beat until meringue forms stiff peaks.
  • Pour filling into pie crust.
  • Spoon meringue over filling, making sure to seal the edges against the pie shell.
  • Make peaks with spoon.
  • Brown pie 5- 10 minutes to desired color.
  • Cool pie on rack and avoid drafts.
  • Allow 3-6 hours for pie to firm up!

This is one of my favorite dishes. It's a great dish for entertaining buffet style, or for a dairy family meal.It does require some preparation work.. but it's worth every bite! Everything can be prepared in advance and kept well covered in the refrigerator for up to two days.

1 1/8 kg eggplants (about 2 medium)
5 egg whites
5 tablespoons water (cold tub)
2 1/4 cups plain breadcrumbs (dry)
2 1/2 cups fresh tomatoes (chopped with all juices)
4 garlic cloves (minced)
1/2 cup onion (fresh, chopped)
1 tablespoon fresh basil (chopped, or 1 tsp dried)
1 tablespoon olive oil
1/2 cup 1% low-fat milk
olive oil flavored cooking spray (Pure , Pam)
250 g fat free mozzarella cheese (shredded)
1/4 cup parmesan cheese (grated)
salt
fresh grated black pepper, as desired

Steps:

  • Preheat over to 400°F.
  • Line a large baking sheet with baking paper (or foil) and spray with olive oil spray.
  • Peel eggplants, and cut crosswise into ~1/4"-thick slices.
  • Beat egg whites + water in a shallow dish, and dip eggplant into egg whites, then into bread crumbs, pressing crumbs and cover thoroughly eggplant all over.
  • Arrange the eggplant on prepared baking sheet and spray olive oil spray over eggplant slices.
  • Bake for 30 minutes, turning eggplant over after 20 minutes until golden-brown. (To prepare the entire amount I had to do this twice).
  • Heat olive oil in pan, saute the onion until tender, add garlic and basil, and as soon as you smell the garlic add tomatoes with all the juices.
  • Lower flame, add milk and continue to saute for 2-4 minutes until tomatoes are tender and pan full of fluids.
  • Spoon 1/3 of Tomato Sauce Mixture from pan and spread into sprayed baking dish. 39X25 Cm Baking Dish (or 9-inch square).
  • Place half of eggplant over sauce.
  • Spoon 1/2 of remaining Tomato sauce over eggplant.
  • Sprinkle half of mozzarella on top.
  • Repeat with remaining eggplant, tomato sauce and mozzarella.
  • Sprinkle Parmesan on top and bake for 20 minutes - until eggplant is piping hot and sauce & cheese is bubbly.
  • Serve hot.
  • Enjoy!

This is just what you are looking for when you feel like cooking something on a dreary, cold and maybe wet day. The recipe is a make ahead but I have always baked it when made. Prep time includes 20 mins to boil the potatoes.

1 large onion, chopped
2 garlic cloves, minced
1 carrot, shredded
1/2 lb button mushroom, cleaned and sliced
1 lb extra lean ground sirloin
1 teaspoon dried oregano, crushed
1/2 teaspoon dried thyme, crushed
1/2 teaspoon ground cumin
1/4 teaspoon fresh ground pepper
1 tablespoon unbleached all-purpose flour
1 cup canned fat free low-sodium beef broth (240 ml)
1/3 cup dry red wine or 1/3 cup additional beef broth
2 tablespoons tomato paste (30 ml)
vegetable oil cooking spray
1 lb russet potato, peeled and cut into chunks (480 g)
3 -4 tablespoons skim milk (45 to 60 ml)
1/2 teaspoon salt (optional)
1 -2 tablespoon minced pickled jalapeno pepper, to taste (15 to 30 ml)
1 tablespoon minced fresh cilantro or 1 tablespoon flat leaf parsley
1 tablespoon minced scallion (15 ml)
1/4 teaspoon paprika (1.25 ml)
3 tablespoons shredded 2% low-fat monterey jack cheese (30 g)

Steps:

  • In a large nonstick skillet, sauté onion, garlic, carrot, and mushrooms over medium heat, stirring occasionally, until vegetables are wilted and pan liquids are absorbed, about 6 minutes.
  • Crumble in the ground sirloin and continue to cook, stirring occasionally, until beef is well browned, about 5 minutes. Drain off any excess fat.
  • Add oregano, thyme, cumin, and pepper. Sprinkle flour over the beef mixture and stir. Add beef broth, wine, and tomato paste. Stir until well combined.
  • Line a 2-quart (2 l) casserole with a piece of heavy-duty aluminum foil large enough to completely enclose the casserole. Lightly spray the foil inside the casserole with cooking spray.
  • Transfer meat mixture to the prepared casserole. Set aside while you prepare the topping.
  • Place the potatoes in a pot of boiling water to cover. Reduce heat and simmer until tender when pierced with a fork, 15 to 20 minutes. Drain.
  • Mash the potatoes, adding sufficient skim milk until the potatoes are fluffy. Stir in the salt (if using), minced jalapeño chiles, cilantro, and scallion. Spoon the potato mixture onto the top of the meat mixture, making swirls with the back of a spoon. Sprinkle with paprika and cheese.
  • Cover the casserole and freeze until solid. Lift the food out of the casserole (the foil will adhere), wrap securely in the foil, then slip the package into a self-sealing plastic freezer bag or overwrap in additional foil or freezer paper. Label with the casserole name and the date. Use within 3 months.
  • When ready to bake, unwrap the casserole and place back in the casserole dish to bake. Defrost completely. Then bake at 375°F (190°C) for 40 to 45 minutes, until golden and bubbly. (Since the casserole will be full, it may bubble over, so place a sheet of aluminum foil under the casserole to catch any drips.) Serve hot.

1 egg white (27 g)

1/3 cup lemon juice (81 g)
1 1/2 teaspoons cream of tartar (4.5 g)

3 tablespoons sugar (37.5 g)

Steps:

  • The Crust:.
  • Mix crumbs in a bowl with melted butter.
  • Add egg white and lemon peel and mix.
  • Flat into a 9.5-inch round pie pan.
  • Bake for 5 minutes in a preheated oven at 410°F.
  • The Filling:.
  • Cook all ingredients in double boiler until thickened.
  • Pour into pan with the pie crust - Wait a while till it thickens some more before topping with the meringue.
  • Top with meringue which has been beaten stiff with sugar.
  • Bake for 10 minutes in a preheated oven at 410F or until golden brown.
  • Leave to cool in oven.
  • Serve when totally cooled down.
  • Another option to The Crust:: 1 cup Flour. 4-5 Ice-Cold Water. 1/2 ts Cider Vinegar. 1/2 Tbs Powder Sugar. dash salt. 3 1/2 Tbs. Butter or Canola Oil. To Prepare: Mix 1/2 of the flour with water and vinegar. Mix rest of ingredients and add to first mixture. Work well with a fork till crust is formed and flat in pie pan. Bake in a preheated oven 450F for 10-15 minutes or until golden brown. Follow the rest of the steps as described.
