Creamed Spinach - Lightened Up image

A creamy blend of spinach, shallots, parmesan cheese, and Boursin Light makes a rich and flavorful side dish. A low fat version of a steakhouse favorite.

2 tsp butter
1/2 cup shallots (minced)
1 clove garlic (minced)
2 tbsp flour
1 1/2 cups fat free milk
2 tbsp parmesan cheese
1/4 tsp nutmeg
1/4 tsp fresh pepper
salt to taste
4.4 oz Boursin Light
16 oz bag frozen chopped spinach (thawed and drained of all moisture)

Steps:

  • In a large saute pan, melt butter. Add shallots and garlic and cook on medium about 5 minutes.
  • Add flour to shallots, mix well and cook one more minute.
  • Reduce heat to low and slowly add milk, whisking well.
  • Add parmesan cheese, nutmeg, salt and pepper and mix well.
  • Add boursin light and mix with until smooth.
  • Add spinach and combine well with sauce, cook one minute, until heated through. Adjust salt and pepper if necessary.

1 tablespoon low-fat sour cream
1 tablespoon low-fat cream cheese
1/2 teaspoon garlic powder
1/2 teaspoon onion salt

Steps:

  • Bring 3 cups water to a boiling a saucepan.
  • Add spinach leaves.
  • Boil until leaves a re limp.
  • Put leaves into a strainer and press until most of the liquid is gone.
  • In a separate saucepan add leaves and rest of ingredients. Mix thoroughly until hot and bubbling.

6 cups fresh spinach
1/2 cup nonfat milk
4 wedges laughing cow light creamy swiss original cheese, softened
3 minced garlic cloves
4 tablespoons panko breadcrumbs
1/4 cup grated swiss cheese or 1/4 cup parmesan cheese, for top

Steps:

  • Pour milk into skillet and warm over medium heat.
  • Add Laughing Cow cheese and minced garlic.
  • Whisk until creamy.
  • Add fresh spinach and wilt down (about 3-4 minutes).
  • Mix 1/8 c swiss or parmesan cheese and panko into spinach mixture.
  • Pour into greased baking dish (I use PAM Spray).
  • Bake at 375 for 25 minutes; pull and sprinkle remaining cheese; return til cheese melts.

This heart-healthy soup gets its creaminess from cauliflower instead of high fat cream. Substitute vegetable broth for the chicken broth and it becomes vegetarian.

1 lb cauliflower
1 1/2 lbs fresh spinach
2 tablespoons olive oil
2 garlic cloves, minced
6 cups chicken broth
1 teaspoon salt
1 tablespoon Dijon mustard
1 teaspoon dried thyme
fresh ground pepper

Steps:

  • Remove the green leaves from the cauliflower, remove the stem and chop the florets coarsly.
  • Wash the spinach well, dry in a towel or salad spinner and chop coarsely.
  • In a stock pot, heat the oil over medium heat and add the garlic, cook for just 30 seconds.
  • Add the cauliflower, broth and salt; bring to a boil. Reduce heat and simmer for 15 minutes. Add the spinach and cook another 5 minutes, until the spinach is wilted and the cauliflower tender. Mix in the mustard and thyme.
  • Using a hand-held immersion blender, puree the soup in the pot until smooth.
  • Add pepper and additional salt to taste.
