Cherry Bread is an easy quick bread that you can serve as a snack cake or breakfast treat.

2½ cups all purpose flour
1¼ cups granulated sugar
1½ teaspoons baking powder
1 pinch salt
1 cup butter (cold cut into pieces)
¾ cup milk (I used 2 %)
2 large eggs
1 teaspoon vanilla
1-2 cups cherries (pitted and cut in half)

Steps:

  • Pre-heat oven to 375F (190C). Grease and flour a 9 inch loaf pan.
  • In a large bowl whisk together the flour, sugar, baking powder and salt, add the butter and mix to form a crumbly mixture. Remove 3/4 cup of the mixture (this is your crumb topping) and set aside.
  • In a medium bowl with a fork or whisk beat together the milk, eggs and vanilla. Add it to the flour mixture and mix with a wooden spoon or spatula just until combined. The batter should be a little lumpy. Do not over mix.
  • Fold in the cherries and transfer to the prepared loaf pan. Sprinkle with the crumb topping. Bake for approximately 50-60 minutes. Check with a toothpick for doneness. Let cool in the loaf pan then move to a wire rack to cool completely before serving. Enjoy!

1 cup milk
1 tablespoon lemon juice
2 cups flour
1 cup brown sugar
1 teaspoon baking soda
1/2 teaspoon salt
1/3 cup non-fat vanilla yogurt
1 egg
1 teaspoon vanilla
20 fresh cherries, pits removed and coarsely chopped

Steps:

  • Mix together the milk and lemon juice. Set aside for 10 minutes.
  • Mix together the dry ingredients. Lightly beat the egg, then add it, the yogurt, the milk mixture, and the vanilla to the dry ingredients. Fold in the cherries.
  • Pour batter into greased 9 x 5-inch loaf pan.
  • Bake at 350 degrees for 50 to 60 minutes.

2 medium zucchini, about 3/4 pound, grated
1/2 cup sugar
1 egg
1/4 cup canola oil
1/4 cup unsweetened applesauce
1 cup all-purpose flour
1 cup whole wheat flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 cup low-fat milk
1 teaspoon vanilla
3/4 cup dried cherries, unsweetened (can also use dried cranberries)

Steps:

  • 1. Preheat the oven to 375 degrees. Prepare 4 mini loaf pans measuring 3 by 6 inches by rubbing the bottom and sides of the pans with butter and then sprinkling with flour to coat, tapping out the excess flour.
  • 2. In a large mixing bowl add the grated zucchini, sugar, egg , applesauce and oil. Mix well. Add the all-purpose and whole-wheat flour, baking powder, baking soda, milk and vanilla. Mix well to combine.
  • 3. Add the cherries and stir to thoroughly incorporate. Fill each of the prepared loaf pans about 3/4 full with batter and bake for 45 minutes or until a wooden toothpick or a knife inserted into the middle of the loaf comes out clean.
  • 4. Remove pans from the oven and allow them to cool on a wire rack for 10 minutes.

WHITE CHOCOLATE & CHERRY LOAF

225g butter , softened
225g golden caster sugar
4 eggs , beaten
2 tsp vanilla extract
225g self-raising flour , sifted, plus extra for dusting
375g fresh cherries , pitted
175g white chocolate , chopped into small chunks
100g white chocolate , broken into small pieces
140g half-fat mascarpone
white chocolate curls or fresh cherries, to decorate

Steps:

  • Heat oven to 180C/fan 160C/gas 4. Line a 1kg loaf tin with baking parchment, making sure the paper comes up higher than the sides. Beat the butter and sugar together until fluffy, then add the eggs, a little at a time, along with the vanilla. Fold in the flour until you have a smooth mixture.
  • Dust the cherries in a little flour, then carefully stir half of the fruit and chocolate into the mixture. Spoon into the prepared tin, then scatter the remaining cherries and chocolate on top, pressing them in lightly. Bake for 1 hr 10 mins - 1 hr 15 mins until a skewer inserted into the middle comes out clean. Make sure you don't mistake melted chocolate for raw cake mix. Leave to cool in the tin for a few mins, then turn out on to a wire rack and leave to cool completely. This can now be wrapped tightly in cling film and stored in the fridge for up to 3 days.
  • Remove the marscapone from the fridge to come to room temperature. Melt the white chocolate in a bowl over a pan of hot water. Quickly stir in 1 tbsp of the marscapone, then beat in the rest (be careful not to overbeat the mixture or it will go grainy). Spread over the top of the loaf and finish with white chocolate curls or fresh cherries.

You can serve this loaf year-round- but its cherries give it a pretty Christmasy look. In addition to being a lovely gift, it's something I often include in meals at home. I have also entered my loaf in fairs, where it's always a winner. I'm a widow (three grown daughters) who enjoys baking and crafting.

1 jar (6 ounces) red maraschino cherries
2-1/2 cups all-purpose flour
1 cup sugar
4 teaspoons baking powder
1/2 teaspoon salt
2 large eggs
2/3 cup milk
1/3 cup butter, melted
1 jar (8 ounces) green maraschino cherries, drained and cut up
1/2 cup chopped pecans
1 tablespoon grated orange zest

Steps:

  • Drain red cherries, reserving liquid; add water, if needed, to liquid to equal 1/3 cup. Cut up cherries; set cherries and liquid aside. , In a large bowl, combine the flour, sugar, baking powder and salt. In a small bowl, whisk the eggs, milk, butter and cherry liquid; stir into dry ingredients just until combined. Fold in the red and green cherries, pecans and orange zest. , Pour into a greased 9x5-in. loaf pan. Bake at 350° for 1 hour or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan to wire rack.

Try this luscious, low-fat cheesecake with an amaretti biscuit base and a creamy ricotta and Quark topping, finished with fresh fruit.

25g butter , melted
140g amaretti biscuit , crushed
3 sheets leaf gelatine
zest and juice 1 orange
2 x 250g tubs quark
250g tub ricotta
2 tsp vanilla extract
100g icing sugar
400g fresh cherry , stoned
5 tbsp cherry jam
1 tbsp cornflour

Steps:

  • Line the sides of a 20cm round loose-bottomed cake tin with baking parchment. Stir the butter into twothirds of the biscuit crumbs, and reserve the rest. Sprinkle the buttery crumbs over the base of the tin and press down. Soak the gelatine in cold water for 5-10 mins until soft.
  • Warm the orange juice in a small pan or the microwave until almost boiling. Squeeze the gelatine of excess water, then stir into the juice to dissolve.
  • Beat the quark, ricotta, vanilla and icing sugar together with an electric whisk until really smooth. Then, with the beaters still running, pour in the juice mixture and beat to combine. Pour the cheesecake mixture over the crumbs and smooth the top. Cover with cling film and chill overnight.
  • To make the topping, put the cherries in a pan with the orange zest and 100ml water. Cook, covered, for 15 mins until the cherries are softened. Put one-third of the cherries in a bowl and mash with a potato masher to give you a chunky compote. Return to the pan, add the jam, cornflour and 2 tbsp water, and mix to combine. Cook until thickened and saucy - if the sauce is too dry, add a splash more water. Cool to room temperature.
  • Just before serving, carefully remove the cheesecake from the tin and peel off the parchment. Scatter over the remaining biscuit crumbs and some cherry sauce. Serve in slices with the remaining cherry sauce alongside.

200g soft unsalted butter, plus extra for the tin
200g golden caster sugar
4 eggs
2 tsp vanilla extract
1 tsp almond extract (optional)
75g glacé cherries, patted dry if in syrup, then quartered
175g self-raising flour
50g ground almonds
½ tsp baking powder
100g icing sugar
a drop of almond extract
1-2 tbsp milk
2 tbsp toasted flaked almonds

Steps:

  • Heat the oven to 180C/160C fan/gas 4. Butter a 900g loaf tin and line with baking parchment. Beat the butter and sugar together until pale and fluffy, then beat in the eggs one at a time, followed by the vanilla and almond extract (if using).
  • Toss the cherries with 2 tbsp of the flour in a bowl. Tip the rest of the flour, the ground almonds, baking powder and a pinch of salt into the bowl with the sugar and eggs, and mix until just combined. Fold in the cherries and any remaining flour in the bowl. Spoon into the prepared tin and smooth over the top.
  • Bake for 50-55 mins, or until a skewer inserted in the middle comes out clean. Leave to cool for 10 mins in the tin, then transfer to a wire rack to cool completely. Serve as it is, or mix the icing sugar with the extract and enough milk to make a thick but pourable consistency. Drizzle over the loaf cake, and scatter over the flaked almonds to serve.
