This is a delicious low fat version of my mom's recipe. It yields 2 loaves. I'm a very busy person with small children and lots of pets, so I will offer my time saving hints; with a large spoon, mix the wet ingredients in a large bowl then sift the dry ingredients right over the top and stir slowly until combined. I also always have some sort of flavored applesauce snack pack on hand and that is what I use. It could be mixed berry flavor or apple cinnamon, even grape! They all work well and I use 2 snack cups.

1/2 cup applesauce (or 2 applesauce snack packs)
2 egg whites
1 teaspoon vanilla
1 1/2 cups brown sugar
3 mashed bananas
2 1/2 cups flour
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 1/2 tablespoons cinnamon
1 cup raisins
2 small peeled chopped apples
2 sliced bananas

Steps:

  • Preheat oven to 350 degrees.
  • Spray 2 loaf pans with non-stick spray and set aside.
  • Mix applesauce, egg whites, vanilla, brown sugar and mashed banana in a large bowl.
  • Sift dry ingredients over the top and stir to combine.
  • Add raisins and mix well.
  • Add chopped apples and sliced bananas and mix well.
  • Place in 2 loaf pans and bake at 350 degrees for 40-50 minutes.

Mmm what a great french toast! I go wild when I cook sometimes, and this is definitely one of my experiments that worked for the better! Its good-for-you and good-for-your-taste-buds! This is softer then your classic french toast, but the yummy flavors are just too good to resist!

Number Of Ingredients 10

2 egg whites (or 1 egg)
1/4 cup mashed ripe banana (about 1/2 a large banana)
1/2 cup skim milk
1 1/2 teaspoons melted reduced fat margarine (non-hydrogenated)
1/4 teaspoon vanilla
1/4 teaspoon banana extract (banana flavour)
3 tablespoons whole wheat flour
1/8 teaspoon salt
1/2 teaspoon cinnamon
4 -6 slices whole wheat bread, best if stale (Amount depends on how thick your bread is or how much you let it absorb. I use 6 pcs sandwich bread.)

Steps:

  • Preheat a greased griddle or frying pan (not too hot or they will burn before they cook).
  • Puree (in a food processor, blender, or smoothie maker) the mashed banana, milk, vanilla, and banana flavour until the banana is completely smooth with no lumps. Add melted margarine and egg whites and pulse until completely incorporated.
  • Sift the next 3 ingredients (flour through cinnamon) in a small bowl.
  • Transfer wet ingredients into a larger bowl, and whisk dry ingredients into wets, and ignore small flour lumps.
  • NOTE: Be sure to whisk batter before dipping each batch of toast. Also, dont add any extra banana or milk to the batter (it will result in soggy toast).
  • Dip each side of the toast in the batter for a couple of seconds, and allow some of the excess batter to drip off. (for the last piece of bread you will likely have to swab up the remaining batter. Don't worry if the toast tears, just stick it back together on the frying pan).
  • Cook each side just over a minute, or until browned to your desired colour.
  • Serve with lots of maple syrup. Refrigerate the leftovers and put them in the toaster the next day. OR cool on a cooking cooling rack, and when completely cool, wrap in foil and freeze. Warm in microwave then toast and enjoy!

6 lightly beaten eggs
1 1/2 cups milk
3/4 cup honey, divided
1 teaspoon salt
1 tablespoon vanilla
4 apples
2 teaspoons cinnamon

Steps:

  • Preheat oven to 400 degrees.
  • Spray 13 x 9 inch baking pan with nonstick coating.
  • Layer bread evenly in bottom of baking pan.
  • Beat together milk, 1/4 cup honey, salt, vanilla and 1 teaspoon cinnamon until well blended; then mix in beaten eggs with above mixture.
  • Pour batter evenly over torn bread.
  • Core and slice apples, leaving peelings on.
  • Layer apple slices evenly over top and drizzle with 1/2 cup of honey.
  • Sprinkle remaining cinnamon over top of casserole.
  • Bake for 35 to 45 minutes or until bread layer isn't soggy.
  • Cut into 12 pieces while warm and serve with additional honey, if desired.

My mom always fixed French toast for us in the skillet. For those that aren't worrying about weight, you could use 6-8 eggs and regular milk.... We always topped this with powdered sugar when growing up.

4 bananas, sliced
1 cup brown sugar
1/2 cup Bourbon
2 tablespoons butter
6 eggs
1/4 teaspoon salt
2 tablespoons vanilla
1/2 cup cream (you may sub in half & half)
8 slices thick white bread (I use Texas Toast)

Steps:

  • To make sauce: In a small pan, melt butter and brown sugar over medium heat; carefully add bananas and simmer for 2 minutes. Remove from stove and add bourbon; return to flame and continue simmering an additional 2 minutes. Cover and keep warm until ready to use.
  • To make batter: In a large bowl, whisk eggs and salt. Add vanilla. Pour in cream, continuing to whisk until well blended.
  • Melt 1 to 2 tablespoons butter in a large frying pan over medium-high heat. Dip each bread slice in batter and cook each side until golden brown. Repeat with remaining bread slices.
  • Transfer 2 bread slices to individual plates and top with banana slices and sauce. Serve with maple syrup or powdered sugar.

2 tablespoons fruit preserves, whatever flavor you prefer
8 slices French bread, 1-inch thick

1 beaten egg
3/4 cup nonfat milk

1/8 teaspoon apple pie spice
1/2 cup honey or 1/2 cup fruit preserves, of your choice

Steps:

  • In a small bowl stir together cream cheese and the 2 tablespoons of preserves. Using a serrated knife, cut a pocket in each bread slice by making a cut in the crust top of each slice from the top almost to the bottom. Fill each pocket with some of the cream cheese mixture.
  • In a shallow bowl beat together the egg whites, whole egg, milk, vanilla, and apple pie spice. Coat an unheated nonstick griddle or large skillet with cooking spray. Preheat over medium heat.
  • Dip bread slices into egg mixture, coating both sides. Cook bread slices on hot griddle about 3 minutes or until golden brown, turning once to cook second sides.
  • Meanwhile, in a small saucepan heat the 1/2 cup fruit preserves of your choice (if using) until melted, stirring frequently. If desired, sift with powdered sugar. Serve melted preserves or honey with French toast.

⅔ cup white sugar
¼ cup margarine, softened
2 eggs
1 cup mashed bananas
¼ cup water
1 ⅔ cups all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
¼ teaspoon baking powder

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray one 9x5x3 inch loaf pan with a non-stick cooking spray.
  • In a medium bowl, beat the white sugar and margarine or butter until smooth and creamy. Beat in the eggs, water and bananas with the sugar mixture until it is well blended.
  • Mix in the flour, baking soda, salt and baking powder just until the mixture is moistened. Be sure to scrape the sides of the bowl to blend all ingredients.
  • Bake at 350 degrees F (175 degree C) for about 60 minutes. Bread is done when the top is firm to the touch and a golden brown color. Time will vary according to loaf size and oven type. When bread is removed from oven, allow it to cool on it's side for 10 minutes, then remove from pan and let cool on a rack. This bread is also excellent if you add mini chocolate chips or small fruit pieces to the mix just before baking.
