LOWER FAT BANANA BREAD I
A wonderful banana bread that is lower in fat and calories than most other banana bread recipes.

- Preheat oven to 350 degrees F (175 degrees C). Spray one 9x5x3 inch loaf pan with a non-stick cooking spray.
- In a medium bowl, beat the white sugar and margarine or butter until smooth and creamy. Beat in the eggs, water and bananas with the sugar mixture until it is well blended.
- Mix in the flour, baking soda, salt and baking powder just until the mixture is moistened. Be sure to scrape the sides of the bowl to blend all ingredients.
- Bake at 350 degrees F (175 degree C) for about 60 minutes. Bread is done when the top is firm to the touch and a golden brown color. Time will vary according to loaf size and oven type. When bread is removed from oven, allow it to cool on it's side for 10 minutes, then remove from pan and let cool on a rack. This bread is also excellent if you add mini chocolate chips or small fruit pieces to the mix just before baking.

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease an 8x4 inch loaf pan.
- In a large bowl, stir together flour, sugar, baking powder, baking soda and cinnamon. Add egg whites, bananas and applesauce; stir just until combined. Pour batter into prepared pan.
- Bake in preheated oven for 50 to 55 minutes, until a toothpick inserted into center of loaf comes out clean. Turn out onto wire rack and allow to cool before slicing.

- 1. Preheat oven to 350. Spray a 9 x 5 inch loaf pan with cooking spray.
- 2. Mix applesauce, sugar, the eggs or egg whites in a bowl. Mix well with mixer.
- 3. In another bowl, mix flour, salt, baking soda, baking powder and cinnamon. Mix into the above mixture.

- Preheat the oven to 350°F, and coat a 9"-square pan with nonstick cooking spray.
- In a medium bowl, whisk together the oats, flour, baking powder, baking soda, cinnamon, nutmeg, and salt. In a separate bowl, whisk together the coconut oil, egg whites, and vanilla. Add in the mashed banana and Greek yogurt, stirring until no large lumps of yogurt remain. Stir in the maple syrup. SKINNY BANANA BREAD (LOW SUGAR + LOW FAT)

- 1. Preheat oven to 350 degrees and prep a loaf pan (9x5 or 8x4) by greasing it or lining it with parchment paper.
- 2. In a medium bowl add bananas and use a fork to mash well.
- 3. Add egg, vanilla, brown sugar and granulated sugar. Stir well.
- 4. In a separate bowl combine flour, baking soda, baking powder and salt.
- 5. Add dry ingredients into the wet slowly as you stir. Before the two are incorporated add in melted butter. Stir just until barely combined, DO NOT OVER MIX.
- 6. Pour into pan and bake for 30-45 minutes or until an inserted knife or toothpick comes out clean.
- 7. Serve warn or cooled. As with any banana bread/cake, it always tastes better the next day! Store in an airtight container.
BANANA BUNDT CAKE
This banana bundt cake is made healthier with white whole wheat flour, honey, and yogurt but still decadent with a drizzled cream cheese cinnamon frosting.

- Preheat oven to 350° F (175° C).
- Spray bundt pan with cooking spray (or use a silicone baking form)
- Stir flour, baking soda, cinnamon, cardamom, and salt together in a bowl.
- In a mixing bowl, beat butter, banana, honey, vanilla, eggs, yogurt, and almond milk until smooth.
- Pour dry ingredients into wet mixture and lightly beat for 10 seconds, scraping sides until mixed in but not over mixed. Stir in toasted pecans and chocolate chips.
- Pour batter into prepared bundt pan, place in oven and bake for 45-55 minutes until a toothpick inserted into a central area comes out mostly clean.
- Remove from oven and let cook for 15 minutes before turning the pan over to release the cake from the pan onto a wire cooling rack. Let the cake cool completely before frosting.
- To make the glaze, add cream cheese, butter, and vanilla into a mixing bowl and beat using a hand mixer or rigorously by hand with a wire whisk until blended (do not do this in the blender). Add powdered sugar, cinnamon and cardamom and beat until all powdered sugar is mixed in. Glaze should be somewhat thick but pourable and not runny. Add additional powdered sugar if needed to reach desired consistency.
- Place bundt cake on serving plate and, with a light hand, pour glaze over cake moving your hand back and forth in a zig-zag pattern until entire cake is fully glazed. Slice and serve. To store, keep covered in the refrigerator for up to 3 days.

BANANA CAKE
My mum used to make this for me and my sister when we were younger and now I make it for the kids I look after. Its a good recipe to use up any bananas that are going a bit black. I also mash up bananas in lots of 3 put in a container and freeze for when I make this recipe and it turns out great.

- Cream sugar and margarine then beat in eggs one at a time beating well.
- Beat in banana.
- Sift in flour and salt.
- Dissolve carb soda in milk and add into bowl and mix until all is combined.
- Pour into a well greased tin and bake in the oven at 180 degrees for about 25-30 minutes or until cooked through.
- TIP: If you like your cake extra moist like I do add a little bit more milk to the batter before pouring into the tin.

LOW FAT BANANA CAKE
This is a spin off of Kittencal's (that genius girl) extreme low fat banana-blueberry muffins. But it was different enough ( I made the muffins a while back), that I decided to post the difference. This cake was wonderful! No one would guess it was low fat with little sugar except the fruit! You can use nonfat sourcream for the yogurt, but I haven't tried that.

- In a medium bowl beat sugar and butter till smooth and creamy. Beat in the eggs, water and bananas with the sugar mixture until well blended
- Mix in the flour, bicarbonate of soda and baking powder just until the mixture is moistened. Be sure to scrape the sides of the bowl to blend all ingredients
- Bake till the top is firm to the touch and golden brown in colour. When bread is removed from the oven, allow to cool on its side for 10 minutes, then remove from tin and let cool on wire rack
