LOW-FAT BAKED CHEESE STICKS



Low-Fat Baked Cheese Sticks image

Make certain that the cheese sticks are very well coated with the egg/water mix and the cereal coating, or the cheese will flow out when baking, also let the cheese sticks sit out for 30 minutes to dry out the outer crumb coating before baking, the cornflakes must be very finely crushed or they will not adhear to the sticks, these steps are very important --- prep time includes drying out for 30 minutes.

4 cups corn flakes cereal (finely crushed to measure 1 cup)
1/2 teaspoon dried oregano
1 teaspoon garlic salt
1/4 cup all-purpose flour
2 egg whites
2 tablespoons water
1 (8 ounce) package lowfat mozzarella cheese (can use full fat cheese) or 1 (8 ounce) package mozzarella cheese, strings (can use full fat cheese)

Steps:

  • Set oven to 400 degrees.
  • Lightly grease a medium pan lined with foil.
  • In a large bowl, combine the crushed 1 cup cereal with the oregano and garlic salt, mix to combine.
  • In another small bowl place in the flour. In another bowl thoroughly beat the egg whites with the 2 tbsp of water.
  • Cut the mozzarella cheese into 12 sticks, approximately 2-3/4-inches in length.
  • Dip the cheese sticks in the flour, then in the egg/water mix, then in the cereal mixture (make sure that the cheese sticks are well coated with egg mix and cereal mix, as the cheese will run out while baking).
  • Arrange cheese sticks on the baking sheet.
  • Allow the sticks to set for 30 minutes before baking.
  • Bake in a 400 degree oven for about 8 minutes, until cheese is soft and sticks are lightly browned.
  • Recipe can be doubled for more cheese sticks.

10 whole-grain Melba toasts
1/3 cup whole wheat breadcrumbs
1 tablespoon minced fresh oregano
Kosher salt and freshly ground black pepper
Large pinch ground cayenne, optional
2 large egg whites
1 large egg
1 clove garlic, minced
1/3 cup whole wheat pastry flour or unbleached all-purpose flour
8 sticks part-skim mozzarella string cheese, halved crosswise
Olive oil cooking spray, for coating the cheese sticks
1/3 cup store-bought marinara sauce, warmed, for serving

Steps:

  • Pulse the melba toasts in a food processor to make semi-coarse crumbs; transfer to a medium bowl or dish. Mix in the breadcrumbs, oregano, 1/4 teaspoon each salt and pepper and the cayenne if using.
  • Whisk together the egg whites, whole egg, garlic and 1/4 teaspoon each salt and pepper in another bowl.
  • Put the flour and 1/4 teaspoon salt in a resealable plastic bag. Add the cheese pieces to the bag, close and shake to coat. Dip one piece of the cheese at a time in the egg mixture first, and then roll firmly in the breadcrumb mixture; then dip the same piece again in the egg mixture followed by the breadcrumb mixture. (Note: Use one hand with the dry mixture and the other with the wet mixture.) Place on a parchment paper-lined plate or baking sheet. Freeze for 15 minutes, or up to overnight.
  • Preheat the oven to 475 degrees F. Transfer the frozen cheese sticks to another baking sheet. Fully coat the cheese sticks with the olive oil cooking spray. Bake until golden, about 12 minutes. Sprinkle with additional salt and pepper to taste.
  • Serve immediately with the warm marinara sauce.

4 cups cornflakes cereal
½ teaspoon dried oregano
1 teaspoon garlic salt
¼ cup all-purpose flour
2 egg whites
2 tablespoons water
1 (8 ounce) package mozzarella cheese

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Lightly grease a medium baking pan lined with foil.
  • In a large, shallow bowl, crush the corn cereal to 1 cup. Mix together the corn cereal, oregano and garlic salt.
  • Place the flour in a small bowl.
  • In another small bowl, thoroughly beat the egg whites and water.
  • Cut the mozzarella cheese into 12 sticks approximately 2 3/4 inches in length. Dip the cheese sticks in the flour, then the egg mixture, then the cereal mixture. Repeat dipping in the egg and cereal mixture to ensure a complete coating. Arrange cheese sticks on the baking pan. Allow the sticks to set for 30 minutes.
  • Bake in the preheated oven about 8 minutes until cheese is soft and sticks are lightly browned.

2 tablespoons all-purpose flour
5 tablespoons dry bread crumbs
2 tablespoons grated Parmesan cheese
12 (1 ounce) sticks string cheese, halved and frozen
olive oil, or as needed

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Beat egg in a small bowl. Place flour in a separate small bowl. Toss bread crumbs and Parmesan cheese together in a another separate bowl.
  • Gently press each cheese stick into flour to coat and shake off excess flour. Dip into egg, then press into bread crumb mixture. Place the breaded cheese sticks onto a baking sheet while breading the rest; do not stack. Coat each cheese stick with olive oil; cover baking sheet with aluminum foil.
  • Bake in the preheated oven until crisp, about 4 minutes.

  • Cut the string cheese in half ( which makes 16 pieces) and place in the freezer for 30-45 minutes. Beat egg in a small and set aside. In a separate bowl mix the Parmesan cheese and breadcrumbs and set aside.
  • Dip 1 string cheese in breadcrumb mixture than in egg mixture and than back in breadcrumb mixture. Repeat this for all the pieces. Place sticks on a greased foil or pan. Return the cheese stick back to the freezer for at LEAST 30-45 minutes ( Do not skip this step because the cheese will melt if they are not frozen).
  • After the cheese is finished freezing heat oven t0 375 degrees. Spray the cheese lightly with cooking spray and place in the oven. After 4 minutes flip the cheese sticks and continue baking for another 3- minutes or until they are golden. Do not overbake because the cheese will melt. Serve Hot with your favorite marinara sauce. Enjoy!
