Soft and chewy oatmeal cookies that don't contain any flour, butter, eggs or refined sugar. The dough takes only about 5 minutes to prepare.

1/2 cup (4 oz) unsweetened applesauce
1 cup quick oats
1/2 cup mix-ins of your choice (chopped dried fruit, chocolate chips, etc)

Steps:

  • Preheat oven to 350°F. Line a baking sheet with silicone baking mat or parchment paper.
  • In a large bowl, add applesauce and oats. Mix with a spoon until evenly combined and all oats are moistened. Stir in mix-ins (you can add them onto the cookies right before baking instead for a prettier presentation. See notes for more details).
  • Use a 1.5 tbsp cookie scoop and scoop dough balls, placing them onto prepared baking sheet, spaced 2 inches apart. Using the back of your spoon or the palm of your hand, press down on dough balls to form thick round disks (about 3/8 inch thick). The cookies will not spread or change shape during baking so shape them as needed until they are how you want them to be.
  • Bake cookies about 13-15 minutes or until they are set. If you are unsure if the cookies are set, use a cookie spatula and try to lift a cookie off of the baking sheet. You should be able to lift the cookie off of the sheet in one piece when they are done. Let cookies cool before removing and eating. Store cookies in airtight container at room temperature for 1-2 days or in the fridge or freezer for longer.

1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/4 teaspoon ground allspice
1/4 cup unsalted butter, melted and cooled a bit
1 cup firmly packed light brown sugar
1/2 cup sugar
1-1/4 cups unsweetened applesauce
1 large egg
1 large egg white
1 teaspoon vanilla extract
3 cups old-fashioned rolled oats (not instant)
1 cup currants, raisins, or dried cranberries
1 cup chopped walnuts

Steps:

  • Make sure one of your oven racks is placed in the center or your oven. Preheat the oven to 350F degrees. Line your cookie sheets with parchment paper and set aside.
  • In a medium-size mixing bowl, whisk together the flour, baking soda, salt, and spices and set aside.
  • In a large mixing bowl, beat together the butter and sugars with an electric mixer on medium speed, until well blended. Add the applesauce, eggs, and vanilla extract and continue to beat until the batter is smooth.
  • Stir in the flour mixture, just until it is incorporated. Stir in the oats, dried fruit, and nuts. Place the bowl in the refrigerator for 10 to 15 minutes to let the dough firm up.
  • Drop the dough by heaping tablespoonfuls onto your parchment-lined baking sheets about 3 inches apart.
  • Bake until the cookies are golden around the edges but still soft on top, about 15 to 17 minutes.
  • Remove from the oven and let the cookies cool on the baking sheet for about 5 minutes before transferring them, with a spatula, to a wire rack to cool completely.

  • Preheat oven to 350 degrees F. Lightly spray a cookie sheet with cooking spray.

  • In a medium bowl, cream together egg, applesauce, canola oil, vanilla, and the sugars. Whisk to blend thoroughly.
  • Fold egg-sugar mixture into flour-oat mixture, 1/3 at a time, mixing well.

Also, they have some omega 3 from the walnuts and some folic acid from the wheat germ.

1/2 cup brown sugar
1/4 cup granulated sugar
1 teaspoon baking powder
1/4 teaspoon baking soda

1 3/4 cups flour
2 cups rolled oats
1 cup unsweetened applesauce
2 tablespoons wheat germ
1/4 cup shredded wheat cereal, crushed

Steps:

  • Mix softened butter and applesauce together with mixer. Add egg, baking powder, baking soda, cinnamon, cloves, brown sugar, and granulated white sugar, mix on low-medium for a couple minutes.
  • In separate bowl mix up dry ingredients: rolled oats, flour, wheat germ, and crushed Shredded Wheat Cereal, (set walnuts and raisins to the side).
  • Add the dry ingredients to the wet ingredients using the mixer until they cannot be mixed with mixer and then stir in with spoon.
  • Fold in nuts and raisins last.

Steps:
