2 quarts water
1 bottle (12 ounces) beer
2 tablespoons seafood seasoning
1-1/2 teaspoons salt
4 medium red potatoes, cut into wedges
1 medium sweet onion, cut into wedges
4 medium ears sweet corn, cut in half
1/3 pound smoked chorizo or kielbasa, cut into 1-inch slices
3 tablespoons olive oil
6 large garlic cloves, minced
1 tablespoon ground cumin
1 tablespoon minced fresh cilantro
1/2 teaspoon paprika
1/2 teaspoon pepper
1 pound uncooked large shrimp, deveined
1 pound uncooked snow crab legs
Optional condiments: seafood cocktail sauce, lemon wedges and melted butter

Steps:

  • In a Dutch oven, combine the water, beer, seafood seasoning and salt; add potatoes and onion. Bring to a boil. Reduce heat; simmer, uncovered, for 10 minutes. Add corn and chorizo; simmer until potatoes and corn are tender, 10-12 minutes longer., Meanwhile, in a small skillet, heat oil. Add the garlic, cumin, cilantro, paprika and pepper. Cook and stir over medium heat for 1 minute., Stir the shrimp, crab legs and garlic mixture into the stockpot; cook until shrimp and crab turn pink, 4-6 minutes. Drain; transfer seafood mixture to a large serving bowl. Serve with condiments of your choice.

1-16 oz box of graham crackers
1 1/2 sticks of butter-use real butter
1 cup of sugar
1 large egg
1/2 cup of milk
1 cup of chopped pecans or walnuts
1 cup of sheddred coconut
TOPPING
2 cups of powered sugar
1 teaspoon of vanilla extract
1/2 stick of butter
3 tablespoons of milk

Steps:

  • 1. BEFORE YOU START THE FILLING, CRUSH UP A CUP OF GRAHAM CRACKER CRUMBS
  • 2. For the filling line a 13x9 inch pan with whole graham crackers.Melt the butter in a sauce pan and add sugar.Beat the eggs and the milk together,add to the butter mixture.Bring to a boil stirring constantly.remove from heat ,and add the nuts and the coconut and 1 cup of graham cracker crumbs,and pour over the graham cracker in the pan.Cover with another layer of the whole graham crackers(gently press down on to the filling

For The Topping:::::Beat all the topping ingredients together and spread over the top layer of crackers.NOTE:::::Topping will be kind of like a glaze,if to thick add a Tiny bit more milk,it will harden after it sets..Chill :and cut in to squares.I let it set 5-6 hours sometimes over night .Coveronce it cools

Steps:

  • Melt butter in a medium saucepan over medium heat.
  • Add celery, carrot, and pistachios; sauté 5 minutes or until tender.
  • Add water and salt; bring to a boil.
  • Add rice and thyme; return to a boil.
  • Cover, reduce heat, and simmer 20 minutes or until most of liquid is absorbed.
  • Let stand, covered, 15 minutes or until liquid is absorbed.

Graham crackers make these cookie bars super easy to make. This recipe calls for pecans, milk, eggs, sugar, shredded coconut and vanilla. After chilling the refrigerator, cut into squares for serving on a holiday platter.

1 cup chopped pecans
1/2 cup 3 tablespoons milk
1 egg
1 cup sugar
12 tablespoons plus 4 tablespoons butter
1 (16 oz) box graham crackers
1 cup (or 3 1/2 oz cans) shredded coconut
2 cups powdered sugar
1 teaspoon vanilla

Steps:

  • Line a 13 x 9-inch pan with whole graham crackers. Melt butter in saucepan and add sugar. Beat egg and milk together; add to butter mixture. Bring to a boil, stirring constantly. Remove from heat. Add nuts, coconut, and 1 cup graham cracker crumbs. Pour over crackers in pan. Cover with another layer of whole graham crackers. Prepare topping.
  • Topping:
  • Beat together the 3 Tbsp milk, 2 cups powdered sugar, 1 tsp vanilla, and 4 Tbsp butter and spread over top layer of crackers. Chill. Cut into squares.

I add sauteed collards and shrimp to make it anything but basic. If you're feeling a little "extra," you can add a 6-minute boiled egg to the top, too.

3 tablespoons canola oil
4 large carrots, shredded (2 cups)
2 cups sliced thinly collard greens
8 cloves garlic, minced
Two 32-ounce cartons low-sodium chicken broth
2 tablespoons grated fresh ginger
2 tablespoons low-sodium soy sauce
4 teaspoons chile-garlic sauce
Four 3-ounce packages instant ramen noodles (seasoning packets discarded)
2 pounds medium/large raw shrimp, peeled and deveined
Sliced green onions, optional
2 teaspoons sesame oil

Steps:

  • Heat the canola oil in a large Dutch oven over medium-high heat. Add the carrots and collards and saute until the vegetables begin to soften, about 5 minutes. Add the garlic and cook, stirring constantly, until fragrant, about 30 seconds. Add the broth, ginger, soy sauce and chile-garlic sauce. Cover and bring to a boil.
  • Add the noodles and shrimp. Cover and boil until the noodles are tender and the shrimp turn pink, about 3 minutes. Ladle the soup among 6 bowls. Sprinkle each serving with the green onions, if using, and drizzle with the sesame oil. Serve immediately.
