Low Carb Wraps that are Gluten Free. This recipe was suggested to me to try . I changed it a bit to suit ingredients I had in the kitchen. Baking the wraps worked great. I also tried to fry one in a cast iron pan - that did not work at all as they were not strong enough to lift and flip into a frying pan.

3 tablespoons flax seed meal
2 tablespoons almond meal
1 tablespoon buckwheat flour
1/2 teaspoon powdered egg yolk
1/2 teaspoon guar gum
1 dash salt
1/4 teaspoon baking powder
1/2 teaspoon olive oil
1 tablespoon heavy cream
4 tablespoons water

Steps:

  • Method:.
  • Heat oven to 375 degrees.
  • Wisk dry ingredients together in small bowl. Wisk wet ingredients together in another small bowl. With a fork mix the wet into the dry ingredients and stir well for at least 1 minutes. Let rest 1-2 minutes. Oil your hands and divide the dough in two. Roll into a ball. Spray large baking sheet with Pam and put dough ball in center of each half of the pan. Cover ball with plastic wrap and roll out into a thin circle. Repeat with other dough ball.
  • Place in oven and bake for 7-8 minutes or until done. Store in plastic bag between paper towels. I tried frying these but they did not work - they fell apart. Works way better in the oven.

1/4 cup coconut flour
1/4 cup oat fiber
1/2 teaspoon sea salt
2 tablespoons psyllium, husk powder
1/2 teaspoon baking powder (optional for a puffier bread vs flat tortilla)
3 tablespoons oil
1 cup hot water

Steps:

  • Whisk dry ingredients together then add oil and water to form a dough.
  • Form into 7 (1.5 oz) balls then flatten slightly.
  • Cut a gallon size freezer zip top bag into 2 - 8 inch rounds (or use parchment paper) and use a tortilla press and/or a rolling pin to flatten the dough into an 8 inch round.
  • Cook on an ungreased, non-stick skillet on medium-low heat for a minute or two until it starts to bubble. Flip over for another minute or two.
  • Note: they will shrink slightly during cooking leaving you with a 7 inch tortilla.

6 eggs
2 ¾ cups almond milk
½ cup coconut flour
¾ teaspoon sea salt
cooking spray

Steps:

  • Whisk eggs and almond milk together in a bowl until well combined.
  • Combine coconut flour and salt in a separate bowl. Stir in egg mixture; whisk until a smooth and soft batter is formed. Let stand for 5 minutes.
  • Heat a 6-inch skillet over medium-high heat. Grease skillet with cooking spray. Pour in 1/4 cup of the batter and immediately rotate the skillet to spread batter out in a thin layer. Cook covered until the top of the wrap is no longer wet and the bottom has turned light brown, 1 to 2 minutes. Run a spatula around the edge of the skillet to loosen wrap; flip wrap and cook until the other side has turned light brown, about 1 minute more.

  • Grate cauliflower florets on the large holes of a box grater; discard stems. Transfer the cauliflower to a large microwaveable bowl. Cover tightly with plastic wrap and microwave on High until very tender, about 8 minutes. Carefully remove and discard plastic wrap; stir to release steam. Let cool for 15 minutes. Transfer the cauliflower to a clean kitchen towel; twist it over the sink, squeezing firmly to remove as much liquid as possible. (You should have about 1 packed cup cauliflower after squeezing.)
  • Place the cauliflower in a food processor. Add eggs, cheese, xanthan gum, salt, cumin and paprika; process until a smooth, thick batter forms, about 2 minutes.
  • Spoon dollops of batter (about 1 1/2 tablespoons each) onto the prepared baking sheets, placing them 6 inches apart (6 dollops on 1 pan and 4 dollops on the other). Spread the batter with the back of a spoon to create a thin 4-inch circle. Bake until puffed, with dry edges and lightly browned bottoms, 6 to 8 minutes. Let cool on the pan for 3 minutes. Using a spatula, carefully flip each wrap. Return to the oven, switching the pans' positions, and continue baking until the bottoms are brown in spots, 4 to 5 minutes. Let cool on the pans for 10 minutes. Transfer to a plate. Let the pans cool completely and line with fresh parchment paper. Spoon 4 dollops of batter on each pan (1 1/2 tablespoons per dollop, 6 inches apart). Repeat the baking process.
