Unbelievable Healthy Andes Mint Chocolate Chip Ice Cream Machine image

This ice cream is possibly the best ice cream I've ever had. I found it online and omitted the food coloring, just something unnatural about the green. I also used a little extra peppermint extract and Andes Mints instead of semisweet chocolate (I recommend freezing these so they're easier to chop). If you can, let the flavors mix overnight in the fridge like it says in the instructions, but if you get antsy like me, then let it chill at least 4 hours. As for freezing at the end, you can eat it once it is at your desired consistency. This recipe is awesome because even after it is in the freezer for days it never becomes hard or icy. Enjoy! ** Update: We made this for the holidays using crushed peppermint bark. It was amazing with the crunchy candy cane and chocolate! **

2 cups fat-free half-and-half
1 (14 ounce) can fat-free sweetened condensed milk
1 (1 1/3 ounce) envelope whipped dessert topping mix
1/4 teaspoon peppermint extract
2 drops green food coloring (optional)
3 ounces Andes mints candies, coarsely chopped (about 10-15 pieces, to taste)

Steps:

  • In a small mixing bowl, beat the half-and-half, milk, whipped topping mix, extract and food coloring on high speed for 3 minutes.
  • Cover and refrigerate overnight.
  • Pour into the cylinder of an ice cream freezer.
  • Freeze according to manufacturer's directions.
  • Stir in chocolate during last few minutes.
  • Allow to firm up in refrigerator freezer for 24 hours before serving.

I love mint choc chip ice cream. My favourite ice cream store has just recently discontinued this flavor in many of their outlets. I got hold of this recipe from allrecipes.com--wow!!

2 cups 2% low-fat milk
2 cups heavy cream
1 cup sugar
1/2 teaspoon salt
1 teaspoon vanilla extract
1 teaspoon peppermint extract
3 drops green food coloring (optional)
1 cup miniature semisweet chocolate chips

Steps:

  • In a large bowl, stir together the milk, cream, sugar, salt, vanilla extract and peppermint extract until the sugar has dissolved. Color to your liking with the green food coloring.
  • Pour the mixture into an ice cream maker, and freeze according to the manufacturer's instructions. After about 10 minutes into the freezing, add the chocolate chips. After the ice cream has thickened, about 30 minutes later, spoon into a container, and freeze for 2 hours.

2 cups heavy cream
1/4 cup water
1 teaspoon vanilla extract
1 teaspoon mint extract
1 pinch salt
green food coloring (few drops) (optional)
4 egg yolks
1/2 cup Splenda sugar substitute
1/2 cup sugar-free chocolate, chopped

Steps:

  • In a microwave safe bowl, heat cream and water until steaming (2min).
  • While cream is heating, mix everything but the chocolate together well. Add to hot cream and return to microwave until steaming, but NOT boiling (1min).
  • Follow instructions on your ice cream maker (I did about 20 minutes). Be sure to add chocolate half way through the process.

3/4 cup sugar
1 envelope unflavored gelatin
1 (12 ounce) can evaporated low-fat milk
1 egg white
1 egg
2 1/2 cups skim milk
1 tablespoon white creme de menthe (or a few drops mint extract)
2 teaspoons vanilla
green food coloring (optional)
1 1/2 ounces semisweet chocolate, chopped

Steps:

  • In a large saucepan stir together the sugar and gelatin.
  • Stir in evaporated milk.
  • Cook and stir over medium heat until sugar and gelatin dissolve and mixture almost boils.
  • Remove from heat.
  • In a small bowl slightly beat the egg white and egg.
  • Stir about 1/2 cup of the hot gelatin mixture into the egg mixture; return all to saucepan.
  • Cook and stir over low heat for 2 minutes more.
  • Do not boil.
  • Stir in the skim milk, creme de menthe or mint extract, and vanilla.
  • Cover and refrigerate 1 hour.
  • If mixture isn't smooth, strain mixture.
  • If desired, stir food colouring into mixture.
  • Stir in chopped chocolate.
  • Freeze mixture in a 4- or 5-quart ice cream freezer according to manufacturer's directions.
