Easy Deviled Ham Salad - Low Carb & Keto image

A delicious way to use up leftover ham, this easy deviled ham salad will be a hit with the entire family! Low Carb, Keto, Atkins, Paleo

2 cups chopped cooked ham
1/4 cup chopped dill pickles
3 Tbsp chopped fresh parsley
2 Tbsp chopped onion
1/2 tsp minced fresh garlic
1/2 cup sugar free mayonnaise
1 tsp dijon mustard
2 tsp Sriracha (or other chili sauce)
1 tsp fresh lime juice

Steps:

  • Combine the salad ingredients into a food processor or magic bullet and pulse until a coarse, crumbly mixture is formed - don't over blend into mush.
  • Combine the dressing ingredients in a medium bowl and whisk until smooth.
  • Spoon the ham mixture into the dressing mixture and mix until the dressing is fully incorporated into the salad.
  • Serve chilled on low carb crackers, celery, romaine, or another low carb base of your choice!

2 tablespoons onions, minced
1 spear dill pickle
1/4 cup celery, minced
1 cup mayonnaise
1 teaspoon Swerve sweetener
1 tablespoon yellow mustard

Steps:

  • Add the ham to a food processor and grind it up. Pour into a large bowl.
  • Place in the celery, onion and pickle into the food processor and process until finely minced. Add to the ham.
  • Mix the mayonnaise, Swerve sweetener and mustard together. Pour on to ham and mix well.
  • Refrigerate until ready to eat.

1 cup chopped carrot
1/2 cup chopped onion
1/2 cup chopped celery
2/3 cup water
1 can low-fat cream of celery soup (Campbells makes one, it's called Healthy Request) or 1 can reduced-fat cream of broccoli soup
3/4 cup Minute Rice
1 1/2 cups cubed cooked ham
1 teaspoon poultry seasoning
paprika

Steps:

  • In saucepan combine carrot, celery, onion and water.
  • Bring to boil, reduce heat.
  • Cover and simmer 7 minutes.
  • Do not drain.
  • Stir in undiluted soup, uncooked rice, ham and poultry seasoning.
  • Pour into 1 1/2 quart casserole dish that you have sprayed with Pam.
  • Sprinkle paprika over top.
  • Cover and bake 30 to 35 minutes at 350.
