LOW CARB GARLIC & HERB CAULIFLOWER MASH
An easy way to get in more veggies! Try whipping up a batch of these mashed cauliflower "faux" potatoes. They are creamy, cheesy, and low carb!

Steps:
- Steam head of cauliflower on the stove or in the microwave. (To microwave: add the florets to a large glass dish with enough room so that there is one inch between cauliflower and rim, add 1 inch of water and cover with saran wrap. Place in microwave for 10-13 minutes or until tender/easily pierced with a fork.)
- Preheat oven to broil.
- Add all ingredients (except shredded cheddar) to the food processor or Vitamix (leave the lid off to allow venting if florets are still hot) and process until desired consistency is reached.
- Add mixture to an oven safe dish and top with cheddar cheese and a sprinkle of chives. Broil for 2-3 minutes until cheese is melted, bubbly, and golden brown.

CREAMY GARLIC MASHED CAULIFLOWER
Buttery, fluffy and garlicky cauliflower mashed "potatoes" is a carb-lovers dream come true! This delicious mashed cauliflower is loaded with garlic, butter, parmesan, and cream cheese! It's KETO friendly and is a great alternative to traditional mashed potatoes.

Steps:
- Rinse and cut cauliflower into florets. Steam or blanch cauliflower for 10 minutes or until the fork-tender and soft. Remove from heat and drain well.
- While the cauliflower is cooking, heat butter over medium-high heat in a small saucepan. Add the garlic and Sautee for 1-2 minutes or until the garlic fragrant and begins to turn golden.
- Remove from heat and add to a large food processor along with cooked cauliflower, parmesan, and cream cheese. Season with a dash of salt and pepper, to taste.
- Blend until the cauliflower is smooth and resembles the texture of mashed potatoes. Alternatively, mash with a masher until it looks like mashed potatoes.
- Serve with pats of butter and herbs of choice.

LOW CARB BASIL AND GARLIC CAULIFLOWER MASH
When I first made this recipe, I couldn't wait to have my friends who aren't on a low carb diet try it - because you literally can't taste that it's not potatoes! And I was right! They didn't believe me that it was cauliflower and kept on trying to steal more bites of it at lunch. It's SO rich and creamy, and with a bite from the garlic and fresh basil, I guarantee you're going to be making this every night (I do!) You don't even need salt or pepper.

Steps:
- Clean and cut up cauliflower and add into a pot of boiling, salted water.
- Boil for about 15 minutes but don't let the cauliflower get too soggy. It should still be firm when you take it out.
- Drain very well.
- In a food processor add in the basil, garlic cloves (2 if you like a nice bite!), parmesan and course until well blended.
- Then add in the neufchatel cheese and the cooked cauliflower.
- Pulse until smooth and serve!
- (Optional: I like to run a knife through a few sundried tomatoes and add for taste and color - makes a very Italian low carb meal!).
