KETO PIZZA
Perfect for keto followers, cheese lovers and gluten-free folks too, this pizza dough is made mostly from cheese. Now no one has to miss out on pizza night!

- For the sauce: Stir together the tomatoes, oil, garlic and a large pinch of salt in a small bowl. Let sit at room temperature for at least 30 minutes (this can be made and refrigerated the night before).
- Adjust an oven rack to the lowest position with a pizza stone or turned-over baking sheet on it and preheat the oven to 450 degrees F.
- For the keto dough: Toss the cheese and sour cream together in a large microwave-safe bowl. Microwave in 1-minute intervals, stirring in between each, until the cheese is melted; let cool slightly. Add the flour, eggs and 1/4 teaspoon salt and use your hands to mix into a dough (it will be slightly wet and stretchy).
- Brush a piece of parchment with oil. With oiled fingers, pat the dough on the parchment into a 1/4-inch-thick rectangle, making the edges slightly thicker to create a crust all around. Slide the dough onto the preheated baking stone or baking sheet and bake until golden and puffy, about 15 minutes. (The dough can be baked, cooled and wrapped the day before.)
- For the toppings: Remove the dough, top with the sauce and mozzarella and bake until the pizza is heated through and the cheese is melted, about 5 minutes more. Sprinkle with red pepper flakes, oregano and salt. Cut into triangles.

LOW CARB PIZZA
I got this delicious recipe from www.atkinsdietbulletboard.com the orginal chef is Bikergoddess. We all thank her for creating this great recipe. It's not exactly like pizza, but it's pretty close. I like it alot. I've made it twice now, and will be making it over and over again.

- Preheat oven to 375 degrees F.
- Beat together cream cheese and eggs until smooth.
- Add cream, parmesan, chives, Italian seasoning and garlic.
- Spray 9X13 pan with cooking spray or oil.
- Place 2 cups mozzarella cheese in bottom of pan.
- Pour egg mixture over cheese.
- Bake for 30 minutes.
- Remove from oven and spread sauce over baked mixture.
- Add toppings of choice.
- Cover with remaining mozzerella cheese.
- Bake until bubbly and brown.
- Let stand for 5 minutes.

Steps:
- Preheat oven to 425 degrees.
- Add the mozzarella and cream cheese to a microwave safe bowl and microwave for 1 minute. Stir to combine and return to microwave until cheese has melted, about 30 more seconds.
- Stir in the almond flour, egg, salt, and Italian seasoning to combine.
- Place the dough on a large sheet of parchment paper. Top with a second sheet of parchment.
- Roll the dough out into a 12 inch diameter circle.
- Remove the top piece of parchment and transfer the bottom sheet with the dough on it to a pizza pan.
- Bake for 12 minutes or until golden brown.
- Remove from the oven and spread with the mayonnaise. Sprinkle on the lettuce, tomatoes, bacon.

LOW CARB PIZZA
Steps:
- Preheat oven to 375 degrees F.
- Make the crust: Generously spray 2 (12-inch) pizza pans with nonstick vegetable oil cooking spray. In a medium bowl, stir together all of the crust ingredients to make a smooth, thick, pancake-like batter. Using a rubber spatula, spread the batter as thin and evenly as possible over the 2 pans.
- Place pizza crusts on center racks of the oven and bake for about 12 to 15 minutes, or until lightly golden brown and firm to touch.
- Remove crusts from oven and increase the oven temperature to 400 degrees F.
- Meanwhile, make the sauce: In a saucepan over medium heat, heat olive oil and then sweat onions and garlic in oil, cooking just until softened and translucent. Add diced tomatoes and the remaining ingredients and simmer for about 2 minutes.
- Compile the pizzas: Spread the tomato sauce and then the mozzarella cheese evenly over both crusts. Top 1 pizza with pepperoni, sausage, and ham, and top the other with the bell pepper strips, onions, and mushrooms. Lightly sprinkle 1 tablespoon olive oil over each pizza, and sprinkle each with a dash of dried oregano.
- Place the pizzas back in the oven to bake for another 10 to 12 minutes, or until the cheese melts and starts to brown. Cut each pizza into 8 slices.

- Preheat oven to 350 degrees F. Cut 2 pieces of parchment paper out for baking sheet if you are making one large crust. For individual pizzas (this will make 4) no need for extra parchment- just flip them over with a spatula after 15 minutes of baking.
- Mix cheese, eggs, flax, coconut flour, and baking powder together until a sticky wet dough is formed. Spread with a spatula or with dampened hands to ¼ inch thickness on a baking sheet lined with one piece of parchment paper.
- Bake for 30 minutes in preheated oven. Halfway through the baking process, flip crust over by sliding it off the baking sheet with the parchment paper, placing the second piece on the sheet, and turning the crust over unto the new sheet and peeling the old paper off. Return to oven until done baking.
- Remove from oven, slide off of parchment paper, and flip over again for cooling.
- Once crust is cooled, top with sauce, pre-cooked veggies or meats, and cheese. Set crust with toppings under the broiler on high for a minute or two until cheese is melted and bubbly. Slice and serve.

Got this for our Friday pizza night when I didn't have pizza sauce and wanted to make something different. It is from Taste Of Home. They loved it!

Steps:
- In a bowl, combine mayonnaise, basil, garlic powder and onion powder; refrigerate for 1/2 hour or more.
- Place the pizza crust on an ungreased 12-inch pizza pan.
- Spread mayonnaise mixture over crust.
- Set aside 1/4 cup bacon.
- Sprinkle remaining bacon, cheddar cheese and mozzarella cheese on crust.
- Bake at 425 degrees Fahrenheit for 8 to 12 minutes or until cheese is melted. If doing a homemade crust, I bake mine at 375 degrees Fahrenheit for about 25 to 30 minutes or until done.
- Top with lettuce, tomatoes, and reserved bacon.
- Cut into wedges and serve. Enjoy!

- Brush olive oil over the pizza base.
- Spread 3/4 of the mozzarella over the oiled surface.
- Distribute bacon pieces over the cheese.
- Place enough tomato slices over the bacon to cover the pizza in one single layer.
- Spread another layer of mozzarella over the tomatoes.
- Transfer to the preheated Pizza Maker machine (or to a very hot oven) and cook until the crust is crisp and golden and the cheese at the centre is bubbling (8 to 10 minutes).
- While pizza is cooking mix the tzatziki or mayonnaise (as much as you'd like) with the lettuce.
- When the pizza is ready, remove, cut into pieces and add the dressed lettuce to each piece. Serve immediately.

NO DOUGH PIZZA LOW CARB CREAM CHEESE PIZZA CRUST
Low Carb The "Crust" is soft so this is actually more of a casserole dish but the flavor is there. I used Minced Garlic from a Jar rather than Garlic Powder. - Preheat oven to 375.
- Line a 9×13 baking dish with parchment paper. With a handheld mixer, mix cream cheese, eggs, Italian seasoning, garlic powder and parmesan cheese until combined. Spread into baking dish. Bake for 25 minutes, or until golden brown. Allow crust to cool for 10 minutes.
- Spread pizza sauce on crust. Top with cheese and toppings. Sprinkle pizza with garlic powder. Bake 10-15 minutes, until cheese is melted.
