1 lb Chicken breast tenderloins ((about 8 pieces))
8 slices Bacon
4 slices Cheddar cheese ((cut in half))

Steps:

  • Fill a large bowl with warm water and a couple tablespoons sea salt. Add the chicken breast tenderloins (making sure the water covers them). Set aside to brine for at least 10 minutes.
  • Meanwhile, preheat the oven to 450 degrees F (232 degrees C). Line a baking sheet with foil (greased lightly) or parchment paper.
  • Remove the chicken from the water and pat dry. Place a piece of cheese over each piece of chicken. Wrap the two together in a slice of bacon. Place on the baking sheet, with the cheese side facing up. Repeat with the remaining chicken, cheese, and bacon.
  • Bake for about 13-16 minutes, until the chicken is cooked through. Place under the broiler for a couple of minutes to crisp up the bacon.

1 teaspoon onion powder
12 chicken tenders
12 slices turkey bacon, cut in half lengthwise
⅓ cup light brown sugar
1 tablespoon chili powder

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Place a cooling rack on top of a rimmed baking sheet.
  • Mix paprika, salt, and onion powder together in a small bowl. Sprinkle seasoning over both sides of each chicken tender. Wrap each tender with two strips of bacon, tucking the ends in to secure.
  • Mix brown sugar and chili powder together in a small bowl. Gently roll each bacon-wrapped tender in the brown sugar mixture, pressing down to ensure good coverage.
  • Arrange tenders on top of the prepared cooling rack, making sure to not overcrowd.
  • Bake in the preheated oven until bacon is crisp and chicken is no longer pink in the center and the juices run clear, about 30 minutes.

Steps:

  • Season tenders with salt and pepper. Place a sage leaf on each chicken tender, then wrap each with a bacon slice.
  • In a large skillet, heat oil over medium-high. Add tenders, sage side down, and cook until fat is rendered and bacon is browned, about 6 minutes. Flip and cook until tenders are cooked through, 6 minutes. With tongs, transfer to a wire rack set on a rimmed baking sheet to drain.

2 teaspoons paprika
2 teaspoons garlic powder
1 teaspoon onion powder
1 teaspoon oregano
1 teaspoon thyme
2 pounds chicken tenders (about 16 tenders)
16 slices no sugar bacon

Steps:

  • Preheat oven to 425°F. Line two rimmed baking pans with aluminum foil and top with metal rack. (I used two jellyroll pans and topped each with a cooling rack the same size)
  • In large plastic zipper bag, dump in all the herbs and spices. Close bag and shake to blend.
  • Place each chicken tender in the zipper bag, close, and shake bag to coat the chicken in the spice blend. Once coated wrap in bacon being sure to tuck in the ends and then place on rack in prepared pan.
  • Bake for 35 minutes at 425°F. Bacon should be crispy. If bacon isn't crispy, you can place each pan under the broiler for a minute or two.
