Make these tasty low carb chicken enchiladas with enchilada sauce, cheddar cheese, jalapenos and onions for a simple and satisfying meal everyone will love!

½ onion (diced)
1 jalapeno (minced)
1 can enchilada sauce (divided)
2 cups cooked chicken
2 cups cheddar cheese (or Mexican cheese blend)
8 low carb tortillas

Steps:

  • Preheat oven to 400°F.
  • Sautee onions and jalapenos together over medium heat until tender.
  • Add enchilada sauce to the tortillas and add chicken, cheese, and onion mixture to them.
  • Roll up tortillas with the seam on the bottom and place in a 9x13 pan.
  • Pour remaining sauce on top and remaining cheese.
  • Bake for 20 minutes covered and then 5 minutes uncovered.

1 lb ground beef (1 to 2 lbs)
1 (14 ounce) can enchilada sauce or 1 (1 1/4 ounce) package dry enchilada mix
1 green onion, chopped
1 cup shredded cheddar cheese
4 eggs
1/4 cup heavy cream
1 teaspoon butter

Steps:

  • Start the beef browning over medium heat.
  • Break eggs into mixing bowl and add cream.
  • Beat on high speed till well blended and all yellow.
  • Heat up crepe pan or small skillet and add some of the butter.
  • You will need to re-butter the pan several times.
  • Pour just enough egg mixture over the pan to coat.
  • Allow to cook through, you may turn it, but don't have to.
  • This will make approx 6 small crepes.
  • ***If using dry enchilada mix, prepare as per pkg direction.
  • Drain ground beef and add a small amount of sauce.
  • Place a crepe inside a baking dish and coat with small amount of sauce.
  • Add beef and roll.
  • When all are rolled add remaining beef and sauce.
  • Sprinkle chopped green peppers and cheese.
  • Bake 350ºF for 10-15 min or until cheese is melted and a little bubbly.
  • Serve with favorite fixings: sour cream, lettuce, olives, guacamole, etc.
  • Carbs: 6g carbs total.

4 slices bacon
4 slices swiss cheese
1 (4 ounce) can mushrooms

Steps:

  • Salt and pepper chicken breasts, wrap bacon around chicken, and use grill pan with a little EVOO and cook chicken on medium-low heat until done (about 20 min total).
  • Add mushroom to top of chicken breast and cover with swiss cheese place under broiler about 1-1/2 min or until cheese is bubbly.
  • Serve with Salad or green vegetable.

2 cups almond meal (flour)
1/4 cup Splenda sugar substitute
1 -3 tablespoon unsweetened cocoa powder (optional)
4 -6 tablespoons melted butter

Steps:

  • Pour the almond meal, cocoa powder and splenda in a bowl and mix well with a fork.
  • Add 4 Tbs of butter and mix well -- if it seems too dry, add another 1-2 Tbs and mix.
  • Press it into the bottom of your pan and bake at 350ºF for 10-15 minutes.
  • Let it cool completely before adding in the cheesecake batter.

I made this up myself. I sort of remembered a recipe for cheese enchiladas my mother had given me, but I couldn't find it. So I started throwing stuff together and this is what I came up with. YUM!

1 lb ground beef or 1 lb turkey
1 small chopped onion
1 (19 ounce) can enchilada sauce (divided)
1 (4 ounce) can diced green chilies (drained)
1 teaspoon minced garlic
1 teaspoon Old Bay Seasoning
1 (8 ounce) package cream cheese
1/2 cup sour cream
1 cup shredded monterey jack cheese (divided)
1 cup shredded sharp cheddar cheese (divided)
1 (14 ounce) package flour tortillas

Steps:

  • Heat oven to 375°F.
  • Brown ground beef or turkey over medium-high heat with onion.
  • Add the chilies, garlic, and seasoning until thoroughly cooked.
  • Add 3/4 cup of the enchilada sauce, green chilies, minced garlic, Old Bay seasoning, cream cheese, and sour cream and stir until combined.
  • Stir in 3/4 cup of each of the shredded cheeses.
  • Spoon filling onto tortillas; roll up and place seam-side down in lightly greased 13x9x2-inch baking dish.
  • Pour remaining enchilada sauce over top; sprinkle with remaining cheese.
  • Bake at 375°F for 15-20 minutes.

You can easily use shredded chicken instead of ground beef, and feel free to use corn tortillas instead of flour...it's the sauce that make these enchiladas so AWESOME!

1/2 cup butter
3 tablespoons chili powder, mexican style
3 tablespoons flour
1 teaspoon salt
2 garlic cloves, mashed
2 1/2 cups water
6 ounces tomato paste
1 lb ground beef
1 (1 1/4 ounce) envelope taco seasoning
1/2 onion, minced
1 cup cheddar cheese, shredded
6 flour tortillas

Steps:

  • Preheat oven to 375 degrees.
  • To make the sauce: Melt butter in a sauce pan, then add chili powder, flour, and salt. Stir until smooth.
  • Add garlic and stir in water and tomato paste (may have to use a whisk). Simmer until thick.
  • To make the filling: Cook ground beef with the onion, then drain. Add taco seasoning. Add approximately 1/2 cup of enchilada sauce to the meat.
  • Place the beef and cheese in each tortilla and roll up. Pour the enchilada sauce on top and bake for 25 minutes.

3 chicken breasts, cooked and cut into pieces or 3 chicken breasts, shredded
1 (4 ounce) can green chilies, chopped
1/2 onion, chopped
1 (1 ounce) package cream cheese
2 cups grated cheddar cheese (Monterey Jack, Pepper Jack, etc.) or 2 cups your favorite cheddar cheese, mix (Monterey Jack, Pepper Jack, etc.)
1 pint heavy whipping cream
1 bit butter

Steps:

  • Sauté onion in small amount of butter.
  • When transparent, add chicken pieces and can of green chilies.
  • Mix well and add cream cheese.
  • Cook over low heat until cream cheese melts.
  • Put mixture in a 13 x 9 baking pan, top with 1 cup of grated cheese Pour the whipping cream over the top and then put the last cup of grated cheese over that.
  • Bake at 350° for 35 minutes or so, checking to make sure the cheese gets bubbly, not burnt.
