EASY CREAMY CHICKEN IN TOMATO SAUCE



Easy creamy chicken in tomato sauce image

Juicy chicken breasts in tomato sauce is an easy, delicious dinner recipe that will be ready in 20 minutes.

500 g (1lb) chicken breasts
1 tsp salt
1 tsp paprika
½ tsp pepper
1 onion (finely chopped )
4 garlic loves (crushed )
1 tsp oregano
1½ cups tomato passata
½ cup cream
½ cup Parmesan cheese (grated )
salt and pepper
pinch of sugar ((optional))
fresh basil (to serve )

Steps:

  • Place chicken breasts on a chopping board in front of you and with a sharp knife, carefully slice each in half resulting in two thin fillets.
  • Drizzle with olive oil and season generously with salt, pepper and paprika on both sides.
  • Heat a large frying pan over medium-high heat.
  • Add the chicken and cook for 2-3 minutes per side until the chicken is golden brown and cooked through. Remove from the pan and set aside.
  • In the same pan, fry the onion, garlic and oregano in a splash of olive oil until soft and fragrant.
  • Pour in the passata/tomatoes and cream.
  • Season with salt and pepper and allow to simmer gently for 5 minutes. Stir in the Parmesan cheese.
  • Add the chicken back to the pan along with any resting juices and allow to simmer for another minute or two.
  • Top with basil and serve.

2 eggs, beaten
1 cup grated Parmesan cheese
7 ounces seasoned bread crumbs
6 skinless, boneless chicken breast halves
1 tablespoon vegetable oil
12 ounces pasta sauce
6 slices Monterey Jack cheese

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Pour beaten eggs into a shallow dish or bowl. In another shallow dish or bowl, mix together the grated Parmesan cheese and bread crumbs. Dip chicken breasts into beaten egg, then into bread crumb mixture to coat.
  • In a large skillet, heat oil over medium high heat. Add coated chicken and saute for about 8 to 10 minutes each side, or until chicken is cooked through and juices run clear.
  • Pour tomato sauce into a lightly greased 9x13 inch baking dish. Add chicken, then place a slice of Monterey Jack cheese over each breast, and bake in the preheated oven for 20 minutes or until cheese is completely melted.

8 boneless skinless chicken breast halves
1/4 cup butter
1 small onion, thinly sliced
2 garlic cloves, minced
1 can (14-1/2 ounces) diced tomatoes, undrained
1 teaspoon salt
2 tablespoons all-purpose flour
1 cup sour cream
2/3 cup grated Parmesan cheese
Hot cooked noodles

Steps:

  • In a large skillet, brown chicken in butter on each side. Remove and set aside. Add onion and garlic; saute until tender. Stir in tomatoes and salt. Bring to a boil. Reduce heat; return chicken to pan. Cover and simmer for 30 minutes or until chicken juices run clear., Remove chicken and keep warm. Combine the flour and sour cream. Reduce heat to low; stir in sour cream mixture and Parmesan cheese. Heat through (do not boil). Serve chicken and sauce over noodles.

1 teaspoon olive oil
3 garlic cloves, minced
2 (14 ounce) cans crushed tomatoes
1 teaspoon dried basil
1 teaspoon dried oregano
1 teaspoon dried parsley
1/4 teaspoon sugar
1/4 teaspoon salt
1 cup 1% low-fat milk
1 tablespoon all-purpose flour
2 tablespoons grated parmesan cheese
1/4 cup 1% low-fat milk
1 tablespoon Dijon mustard
1/2 cup fine dry breadcrumb
2 tablespoons parmesan cheese
1/2 teaspoon dried Italian seasoning
1/4 teaspoon garlic powder
1/8 teaspoon pepper
6 skinless boneless skinless chicken breasts
vegetable oil cooking spray
8 ounces linguine or 8 ounces spaghetti

Steps:

  • For Tomato Cream sauce:.
  • Heat oil in a non-stick saucepan over medium heat until hot.
  • Add garlic, saute until tender.(do not brown! it makes the garlic bitter).
  • Add cans of tomato and next 5 ingredients.
  • Bring mixture to a boil.
  • Reduce heat and simmer uncovered,20 minutes stirring occasionally.
  • Combine milk and flour in a small bowl, stirring well with a whisk.
  • Gradually add milk mixture to tomato sauce, stirring constantly.
  • Cook, stirring constantly for 5 minutes until slightly thickened; stir in cheese.
  • Set lid on pot and keep warm on low.
  • For Parmesan chicken:.
  • Preheat oven to 350 degrees.
  • Combine milk and mustard,stirring with a whisk.
  • Combine breadcrumbs and next 4 ingredients in a bowl.
  • Dip chicken in milk mixture, then dredge in breadcrumb mixture.
  • Lightly mist a baking sheet with cooking spray and place chicken on it.
  • Bake for 15 minutes then flip chicken and bake for another 15 on other side.
  • *With 10 minutes left for chicken to be done start cooking pasta.
  • Place 1 cup pasta on each plate top with chicken breast.
  • Ladle some tomato cream sauce over pasta and chicken.
  • Sprinkle with a little extra Parmesan cheese.

  • Arrange your work station in the following order: pounded chicken, egg whites, breadcrumb mixture, baking sheet. Working one at a time, dip each piece of chicken into the egg whites, shaking off any excess, then the breadcrumbs, gently patting the chicken as needed so that the crumbs stick to all sides. Place on the prepared baking sheet. Lightly coat the tops of the chicken with baking spray.
  • Bake until the chicken is cooked through (it should reach an internal temperature of 165 degrees F) and the crumbs are brown, about 15 minutes. Remove from the oven, spoon 2 tablespoons of sauce over each piece of chicken, and top with a slice of mozzarella.
