An inexpensive and surprisingly easy take on the coffeehouse treat made with everyday ingredients and everyday utensils. Tastes quite creamy with 2% milk, but is also good with 1%. To make the vanilla syrup extra fancy, leave a vanilla pod in 4 cups of white sugar overnight and substitute 1 cup of this for the regular sugar. Another note - the syrup's consistency is just a bit thicker than water. Once you have this syrup on hand, it only takes about 10 minutes to prepare the drink.

2 cups water
2 Earl Grey teabags
1 cup milk
4 tablespoons vanilla-flavored syrup
1 cup water
1 cup white sugar
1 tablespoon vanilla extract

Steps:

  • To make syrup: Bring water and sugar to boil over medium-high heat, stirring often. Simmer 10 minutes on medium-low heat. Remove from heat and add vanilla. Cool to room temperature. (It is also fine if it is still warm when you use it) Refrigerate in airtight container for up to 2 weeks.
  • Boil 2 cups water and steep Earl Grey teabags for 3 minutes (or longer for a very strong flavour) in teapot.
  • While tea is steeping, heat milk on medium-high heat, whisking often, until quite frothy (takes about 3 minutes).
  • Spoon 2 tablespoons vanilla syrup into each mug.
  • Pour 1 cup tea and 1/2 cup frothy milk into each mug.
  • Sprinkle with cinnamon or nutmeg, if desired. Enjoy!

The London Fog is a popular cafe tea made with Earl Grey Tea, steamed & frothed milk and vanilla syrup. I have neither the time nor the money to get all fancy but I love the taste, so I came up with this and a friend requested I post it. I steep my tea by the pot (in my coffee maker), but I'll break it down to one cup. Feel free to post comments. I have switched this recipe to skim milk but I have made it with skim milk powder. Most people don't care for powder but I live in the middle of nowhere and sometimes I run out of fresh and that's where the original recipe was created one day when I really needed a nice comfort bevvie on a cold winter day and if I add just enough vanilla & honey it helps to cut the taste of the powder :-) Blessings ♥

1 cup boiling water
1 teaspoon earl grey tea (aka, one tea bag, recommend Twinnings Earl Grey)
1 teaspoon honey, liquid
1/4 teaspoon vanilla extract (or to taste)
3 tablespoons skim milk

Steps:

  • Place tea bag in a measuring cup and add boiling water, steep for at least 3min.
  • In your favourite mug, mix together honey, vanilla & milk.
  • Heat in microwave for 30 seconds.
  • Remove bag from tea and pour in your mug with the heated milk.
  • Stir. (If you have one of those mini frothers, froth the milk before adding the tea even better :-).
  • Enjoy. Careful, it's hot!

1 cup milk (or just over depending on the size of cup you choose)
one bag earl grey tea
1 pinch cinnamon
1 pinch nutmeg

Steps:

  • bring the milk to a boil on the stove, careful not to burn it. (If you're short on time or looking for a quicker more convenient alternative to the stove, you can always use the microwave, but be careful not to blow it up. try 1 minute intervals and stir in between each to avoid heat pockets.).
  • remove the milk from the stove and pour into glass or mug whichever you prefer and add the tea bag. let steep for 3-6 minutes depending how strong you like it. (I recommend somewhere in the middle!).
  • stir in the nutmeg (optional, but it ads some extra yummy flavour!) and sprinkle the cinnamon on top. voila!
