LOBSTER WITH GARLIC BUTTER
There's enough garlic butter here to drench every morsel of lobster meat-you'll want to serve crusty bread on the side to soak it all up. An easy Lobster with Garlic Butter recipe.

Steps:
- Preheat oven to 450°F with a large shallow baking pan in upper third.
- Mince and mash garlic to a paste with 1/2 teaspoon salt, then stir together with butter and parsley.
- Plunge lobsters headfirst into a large pot of boiling salted water (3 tablespoons salt for 6 quarts water) and cook, covered, 3 minutes from time they enter water. Transfer with tongs to a plate and let stand 5 minutes. (Lobsters will not be fully cooked.)
- Lightly crack claws, then split lobsters lengthwise and discard innards from body cavity.
- Remove tail meat from 1 lobster and cut crosswise into 8 pieces. Spread about 2 tablespoons garlic butter in one empty half shell, then fill that shell with all of sliced lobster and dot with 1 tablespoon garlic butter. Spoon about 5 tablespoons garlic butter into other empty half shell (for dipping). Repeat with remaining lobster.
LOBSTER IN GARLIC SAUCE

Steps:
- Remove claws and legs from lobster and place in a deep heatproof dish. Remove the tail and slice into small pieces, then add them to the dish.
- Pour garlic and 1/4 cup oil over the lobster. Cover and place on a steaming rack, then steam, 5 to 6 minutes.
- Meanwhile, heat the remaining 1 cup oil to 120 degrees F.
- Remove lobster from steamer. Sprinkle chopped green onions on top, then pour over the hot oil and soy sauce.
LOBSTER WITH GARLIC BUTTER, NEW POTATOES AND WATERCRESS SALAD
Lobster is best treated with a light touch, just a drizzle of garlic butter is enough to bring the flavours to life.

- Put the lobsters in the freezer for two hours to put it into a torpid state. Bring a large pot of water to the boil. Add the salt, thyme, white peppercorns and bay leaf. Cut the lemon in half, squeeze the juice into the pan then add the halves of lemon too.
- Push the tip of a large, sharp, heavy knife or skewer into the lobsters at the point where a cross forms in the shell on its back, then lower into the boiling water and bring back to the boil. Boil for five minutes, then remove the pan from the heat. Leave the lobsters in the water for another five minutes, then remove from the pan and set aside to cool.
- Gently cook the potatoes in boiling water for 10-15 minutes until tender. Drain and season with salt and pepper.
- Cut the lobsters in half lengthways. Take out the tail meat, cut in half lengthways again and remove the intestinal tract. Take off the claws, removing the meat, leaving the carcass whole and clean.
- In a frying pan, melt the butter and gently warm through the lobster meat.
- For the garlic butter, melt the butter in a pan over a low heat. Gently fry the shallot and garlic without browning them, then add the whelk meat. When warmed through, add the parsley.
- To finish the salad, mix the mustard and vinegar together in a bowl, then whisk in the oils and season.
- Dress half of the little gems in the serving bowl. Shred the remaining lettuces, mix with the watercress and add to the serving bowl (do not dress until serving).
- When you are ready to serve, put the meat from the claws in the head space of the shells and the tail meat back in the shells.
- Put the lobsters onto plates. Put the potatoes in the middle of the plates, pour the garlic butter over the lobsters and serve with the dressed salad.
LOBSTER & POTATO SALAD
Steps:
- Place the potatoes in a large pot and cover with water by 1 inch. Add 1 tablespoon salt and bring to a boil. Lower the heat and simmer for 15 to 25 minutes, depending on the size of the potatoes, until just tender. (I use a small bamboo skewer to test them.) Drain in a colander, cover the colander with a clean kitchen towel, and allow the potatoes to steam for 5 to 10 minutes. Cut them in quarters or halves, depending on their size, and place them in a large bowl.
- Meanwhile, whisk together the vinegar, mustard, garlic, egg yolk, 2 teaspoons salt and 1 teaspoon pepper. While whisking, slowly pour in the olive oil, making an emulsion. Stir in the wine and capers. While the potatoes are still very warm, pour half the vinaigrette on the potatoes and toss them gently, allowing them to soak up the vinaigrette. Stir in the scallions, celery, red onion and lobster and add enough vinaigrette to moisten. Reserve any remaining vinaigrette. Add the zest and juice of the lemon, the tarragon, 2 teaspoons salt and 1 teaspoon pepper and toss carefully. Cover with plastic wrap and refrigerate for at least an hour to allow the flavors to blend. Taste for seasonings and add more vinaigrette, if necessary. Serve at room temperature.
GARLIC BUTTER NEW POTATOES
I love this recipe. It is so simple, and yet, so delicious. I serve these potatoes with my Tarragon Cream Chicken. However, they are a delicious accompaniment to any meal. I took this recipe from Southern Living. It can be found in their Ultimate Quick and Easy cookbook. I generally do make a couple of changes- I add 1/4-1/2 tsp. salt to the garlic butter. I also often add minced fresh dill when I have it. Enjoy!

- Add potato to salted water in a large saucepan. Cook, covered, 10 minutes or until tender. Drain. (Do NOT overcook the potatoes- they will be mushy!).
- Meanwhile, melt the butter in a small skillet over medium-high heat.
- Add garlic and salt (optional). Cook, stirring constantly, for 3 minutes or until garlic is tender.
- Add parsley, pepper, and dill (optional). Pour over potatoes, tossing gently to coat.

GRILLED LOBSTER AND POTATOES WITH BASIL VINAIGRETTE

- Plunge lobsters headfirst into a 12-quart pot of boiling salted water . Cook, covered, over high heat 4 minutes (for 1 1/4-lb lobster) to 5 minutes (for 1 1/2-lb lobster) from time they enter water. Transfer with tongs to a large colander to drain and cool. (Lobsters will not be fully cooked.) Return cooking water to a boil.
- Add potatoes to boiling water and simmer, uncovered, until just tender, 15 to 20 minutes. Drain in a colander.
- When lobsters are cool enough to handle, twist off claws (including knuckles) and crack with a meat mallet or rolling pin. Halve lobsters lengthwise using a large heavy knife. Reserve green tomalley and any orange roe from bodies for another use if desired.
- Prepare grill for direct-heat cooking over medium-hot charcoal (moderately high heat for gas).
- While grill heats, whisk together vinegar, lemon juice, garlic, red-pepper flakes, sugar, and salt in a bowl. Add oil in a slow stream, whisking until well blended, then stir in basil.
- Halve potatoes. Oil grill rack, then grill potatoes, cut sides down, covered only if using a gas grill, turning over once, until grill marks appear, about 4 minutes total. Transfer to a bowl and toss with 2 tablespoons vinaigrette. Keep potatoes warm, covered.
- Oil grill rack, then grill 4 lobster halves, cut sides down, and all of claws, covered only if using a gas grill, until grill marks appear on meat, about 4 minutes. Turn over bodies and claws and grill in same manner 4 minutes more. Transfer to a large bowl and toss with 1/4 cup vinaigrette, then keep warm, covered. Grill remaining lobster halves in same manner and add to same bowl, tossing to coat.
- Arrange arugula on a large platter and top with grilled lobster and potatoes. Drizzle with 1/2 cup vinaigrette and serve remaining vinaigrette on the side.
