BUFFET MEATBALLS

Steps:
- In a small saucepan, combine juice, jelly, ketchup and tomato sauce. Cook and stir over medium heat until jelly is melted., Place meatballs in a 5-qt. slow cooker. Pour sauce over the top and gently stir to coat. Cover and cook on low for 4-5 hours or until heated through. If desired, sprinkle with parsley.

FRENCH ONION MEATBALLS
These meatballs are savory and delicious served on top of creamy mashed potatoes. If desired, serve on top of hot cooked egg noodles, or hoagie rolls with caramelized onions.

Steps:
- Preheat the oven to 350 degrees F (175 degrees C). Set a wire rack in a rimmed baking sheet.
- Combine egg, oregano, and 1 tablespoon water in a bowl and beat to combine. Add in panko and ground beef. Sprinkle 1/2 of the French onion mix on top and mix until thoroughly combined. Shape mixture into meatballs. Place meatballs on the prepared baking sheet.
- Bake in the preheated oven until meatballs are cooked through, about 20 minutes.
- Meanwhile, add remaining French onion mix to a saucepan over medium heat. Whisk in 1/4 cup water until well combined. Allow to thicken. Whisk in another 1/4 cup water and allow to thicken. Repeat 2 more times until water is used up. Mix in cream and Gruyere cheese, stirring until cheese is melted. Serve cheese sauce with meatballs.

- 1. Soak bread crumbs in milk.
- 2. Mix all remaining meatball ingredients except butter. Form into walnut sized meatballs.
- 3. Brown them well in the butter.
- 4. Cover and simmer 1 hour.
- 5. Sauce: Saute onions in butter until caramelized. Blend in flour and salt.
- 6. Slowly add milk and beef broth. Stir until it thickens somewhat.
- 7. Pour over meatballs and serve.
HOLIDAY BUFFET MEATBALLS
I received this recipe from a dear neighbor many years ago. The meatballs are very good and easy to make and the sauce ingredients are items that you would normally have on hand. If you have the meatballs, you can whip up this appetizer in a snap.

- Preheat oven to 325 degrees F (160 degrees C). Place meatballs in a casserole dish.
- Bake in preheated oven until warmed through, about 10 minutes.
- Combine ketchup, brown sugar, vinegar, Worcestershire sauce, mustard, cloves, garlic salt, and beef bouillon cube in a saucepan; bring to a boil, stirring often. Reduce heat to low and simmer for 5 minutes. Pour sauce over meatballs; cover dish with aluminum foil.
- Continue baking in oven until meatballs are hot, about 20 minutes.

BUFFET MEATBALLS IN ONION SAUCE FOR 20
Steps:
- 1. Shape 3 lbs. ground round into meatballs about 1 1/4" in diameter. Saute in butter in skillet heated to 350. Transfer to large platter. In skillet, cook 2 pkg. onion soup mix (dehydrated) according to directions on package, but use half of the water recommended. - In a large bowl, combine the first eight ingredients. Crumble turkey over mixture and mix well. With wet hands, shape turkey mixture into 1-1/2-in. balls. In a large skillet, brown meatballs in oil in batches; drain and set aside., For sauce, in the same skillet, saute onions in oil until tender. Add garlic and thyme; cook 1 minute longer. Stir in flour until blended; gradually add the beef and chicken broths. Stir in the salt, pepper and Worcestershire sauce. Bring to a boil; cook and stir for 2 minutes or until thickened., Add meatballs; return to a boil. Reduce heat; cover and simmer for 9-11 minutes or until meatballs are no longer pink., Meanwhile, cut each bun in half lengthwise, leaving one side attached.
