Steps:
- Peel the potatoes and dice (1 inch).
- Scrape carrots and slice.
- Peel onion and slice.
- Dice meat into 1 inch pieces.
- Place meat in a large saucepan with carrots onions salt and about 2 pints of water.
- Boil for 30 minutes.
- Add potatoes and boil for 30 more minutes.

Steps:
- Toss the lamb pieces in flour and season well. Heat 1 tbsp oil in a large flameproof casserole dish over a high heat. Working in batches, brown the lamb on all sides, adding more oil if needed, then set aside on a plate.
- Turn down the heat to medium and pour in 2 tbsp oil, tip in the onion, carrots and turnips, add a pinch of salt and cook for 8 mins until softened and coloured. Return the meat to the dish along with the ale, stock and herbs. Crumble in the stock cubes and season well.
- Bring to the boil, then reduce the heat to a simmer, sitting the potatoes on the top of the stew. Cook for 2 hrs until the meat is tender and the potatoes are soft. Serve with pickled cabbage or beetroot, if you like.

- Whisk the tomato paste, brown sugar, vinegar, chili powder, mustard, garlic, paprika, Worcestershire, 1 1/2 tablespoons salt and 1 teaspoon pepper in the insert of a 6-quart slow cooker until smooth. Cut each rack of ribs in half and add to the slow cooker. Use your hands to rub the sauce on to the ribs. Cover with a lid and cook on low heat until tender, about 4 hours.
- Gently transfer the ribs to a baking sheet and cool for at least 20 minutes; this will help maintain the shape of the ribs as they grill. Whisk the sauce at the bottom of the slow cooker until smooth. Reserve 1/4 cup of the sauce to brush on to the ribs and save any remaining sauce to serve on the side (it will thicken as it cools).
- Preheat a grill or grill pan to medium-high heat. Lightly oil the grates. Grill the ribs, top-side down, until lightly charred in parts, 3 to 5 minutes. Flip, brush the top side of the ribs with the reserved barbecue sauce and grill until the underside of the ribs are lightly charred in parts, 3 to 5 minutes. Remove to a platter and serve immediately with the extra barbecue sauce on the side.

Steps:
- Dice the beef, cover with water, and simmer for one hour.
- Separately, wash and peel the vegetables and potatoes, and cut them into bite-size cubes.
- Bring the beef broth to a boil. Add the carrots and the rutabaga, and cook for 15 minutes.
- Then add potatoes, and cook another 15 minutes.
- Add the meat and onion, and season to taster with salt and pepper.
- Continue to cook until the stew thickens and the meat, vegetables and potatoes ae all tender (but not mushy).
- Stir occasionally while cooking, being careful not to let them burn.

- Chop the lamb into roughly 2cm pieces. Toss with the flour in a heavy-based pan so that the meat gets coated. Add the onion, stock and a generous amount of freshly ground black pepper. Bring to the boil, skim off any scum, then turn the heat right down and simmer gently, covered, for 1½ hours.
- Peel and chop the potatoes and carrots into roughly 2cm chunks. Mix in to the pot and bring back to a simmer, then re-cover and cook for another hour. - Serve in deep bowls, scattered with some chopped parsley if you want, and with pickled red cabbage (the traditional accompaniment).
