This one is popular. It has everything and then some. Not something for the calorie conscious! I've used instant potatoes, but of course fresh is best. Good for the holidays.

Steps:
- Heat oven to 350°.
- Mix first six ingredients in mixer on medium speed until smooth and creamy.
- Spoon into a greased 9x13-inch pan or casserole dish and sprinkle with cheese and bacon.

LOADED GARLIC MASHED POTATOES

Steps:
- Preheat the oven to 350 degrees F. Place a cooling rack on top of a baking sheet lined with parchment paper.
- Spread the bacon over the cooling rack so that none of the slices are touching. Slice the top off the head of garlic so the cloves are exposed. Drizzle the exposed cloves with the olive oil and sprinkle with some salt and pepper, then wrap in aluminum foil to create a packet. Roast both until the bacon is crispy and the garlic is soft, about 30 minutes. Set aside to cool.
- Put the potatoes in a pot and cover with water. Add a generous pinch of salt. Bring to a simmer and simmer until the potatoes are tender, about 30 minutes.
- Drain the water from the pot and transfer the potatoes to a stand mixer. Add the cream, butter, sour cream, 6 cloves of the roasted garlic and 1 3/4 cups of the Cheddar to the mixer and whip until combined and smooth. Add additional salt and pepper to taste.
- Transfer the potatoes to a serving dish and top with the remaining Cheddar. Crumble the bacon over the top and sprinkle with the scallions. Serve immediately.

- Bring a large pot of water to a boil; add 2 tablespoons of salt. Place the potatoes in the pot and boil for 15-20 minutes or until potatoes are tender.
- Drain the potatoes. Run the potatoes through the ricer and transfer them back to the pot. Alternatively you can skip the ricing step and simply mash the potatoes with a potato masher or mixer.
- Stir in the milk, butter, sour cream and then add salt and pepper to taste. Stir in 1 cup of the cheddar cheese.
- Preheat the oven to 350 degrees F. Place the potatoes into a 9 inch square pan or 2 quart casserole dish. coated with cooking spray. Top with remaining 2/3 cup of cheddar cheese.
- Cover the pan with foil and place into the oven. Bake for 20 minutes. Remove the foil and add the bacon; bake, uncovered for an additional 20 minutes or until cheese is bubbly and potatoes are heated through.
- Sprinkle the chives and parsley over the top and serve immediately.

This is what I came up with when I was met with a demand for a fried chicken and potatoes kind of comfort food mood. I meant it when I said super loaded! The works! I adapted it from a recipe on the box of my favorite mashed potato flakes, Hungry Jack! Goes great with fried chicken, by the way. ;)

- Spray 1 1/2 quart casserole dish with some nonstick cooking spray.
- Get your bacon ready, fried or baked, however you like to do it.
- Heat water to a boil in a medium saucepan. Remove from heat and mix in milk, garlic salt, sour cream. Add the potato flakes and combine well, blend in the chives and cooked bacon, crumbled.
- Preheat the broiler.
- Spoon potatoes into prepared casserole dish, sprinkle with cheddar french fried onions and parmesan cheese, broil 4 to 6 inches from heat for 60 seconds or until golden brown.

- Fry the bacon until crispy and drain on a paper towel until cool. Crumble into small bits. Place the bacon bits into a large bowl.
- Pour off all but 2 tbsp of bacon grease from the frying pan and cook the garlic, and white onion if using, over medium heat until translucent. (If using green onion, no need to precook).
- Add to the bacon bits along with remaining ingredients (except butter/margarine) and blend well with a spoon or your hands (it'll be sticky).
- Wash and dry your frying pan, then melt 1 tbsp of butter or margarine in it over medium heat.
- Scoop up about ¼ of a cup of the potato mixture and form it into a ball. Place it in the hot pan, flattening it out until it's about ½ - ¾″ thick.
- Fry for about 3 minutes on each side, until they are lightly golden brown.
- For best results, serve immediately, while hot and crispy.
- Top with green onions, sour cream or ketchup.

- Preheat the oven to 350 degrees F. Wash the potatoes, then poke with a fork a few times.
- Bake the potatoes in the oven 1 hour or microwave until soft. Allow to cool slightly.
- Slice each potato in ½-inch lengthwise. Scoop out the pulp and mash potatoes, buttermilk, sour cream, butter, garlic powder, salt, and pepper until smooth.
- Stir in the chives, bacon and shredded cheddar cheese. Let cool completely.
