1 (2 lb) package frozen hash browns, thawed
10 ounces cream of chicken soup
2 cups cheddar cheese, shredded
1/2 cup butter, melted
1/4 teaspoon pepper
1/2 cup onion, chopped
1 pint sour cream
2 cups corn flakes (cereal)
1/4 cup butter, melted

Steps:

  • Combine first 7 ingredients.
  • Pour into greased 11x9 baking dish.
  • Combine crushed cornflakes with 1/4 cups melted butter. Spread over top. Bake at 350 for 45 minutes.

1 pound bacon (cut into ¼-inch slices and cooked, divided)
½ medium yellow onion (finely chopped)
1 30 ounce package frozen shredded hash browns
6 tablespoons butter (divided)
1 can cream of mushroom/chicken soup
12 ounces sour cream
½ cup milk
3 cups shredded cheese (your favorite, divided)
Cooked bacon
Chopped tomatoes
Crushed crackers
Sliced scallions
Sour Cream
Shredded cheese
Fried Onions (such as French's)

Steps:

  • Adjust oven rack to middle position and spray a 13x9-inch casserole dish with nonstick cooking spray.
  • Cook bacon over medium-low heat until crisp. Pour off all except 1-tablespoon bacon drippings, and reserve the drippings, in an airtight container, in the fridge for future use.
  • Cook the diced onions in the tablespoon of bacon drippings still in the pan over medium-low heat until translucent and softened.
  • In a large bowl, whisk together ¼ cup melted butter, soup, sour cream, milk, cooked onions, 1 cup cheese and ½ the crisped bacon pieces.
  • Add the potatoes, and stir well.
  • Transfer the potato mixture to the prepared pan and press it slightly down in an even layer. Top with 2 cups cheese.
  • Bake at 350°F for 45-60 minutes or until bubbly and hot throughout. If the cheese is browning too quickly, tent with aluminum foil. The internal temperature should register at least 165°F-175°F.
  • Remove from the oven and let set for 10 minutes before serving.

½ cup melted butter
¼ teaspoon pepper
4 slices bacon, cooked and crumbled ((or 1/2 cup of bacon bits_)
1 bunch green onions, sliced green part

Steps:

  • Preheat oven to 375° Fahrenheit. Prepare a 9"x13" casserole by spraying it with cooking oil spray.
  • In a large bowl, mix together shredded hash browns, 1 cup cheddar cheese, dry ranch seasoning mix, sour cream, melted butter, and pepper.
  • Pour hash brown casserole ingredients into the prepared casserole dish and top with remaining shredded cheese and bacon.

cooking spray
1 cup sour cream
½ cup butter
1 pinch salt-free seasoning blend, or to taste
8 frozen hash browns, thawed, or more to taste
¾ cup shredded Cheddar cheese, or to taste
1 tablespoon dried chives, or more to taste
ground black pepper to taste

Steps:

  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels and break into small pieces.
  • Preheat the oven to 400 degrees F (200 degrees C). Spray a 9x4-inch loaf pan with cooking spray.
  • Mix sour cream, butter, and seasoning blend together in a bowl. Layer 2 1/2 hash browns in the prepared dish. Spread 1/3 of the sour cream mixture over hash browns. Steps:

  • Grease a 9x13-inch baking pan.

1 teaspoon seasoning salt
1 teaspoon garlic powder

2 1/2 cups corn flakes cereal (just slightly crushed)

Steps:

  • Set oven to 350 degrees.

  • in a large bowl mix together first 9 ingredients using a wooden spoon until well blended, then season with black pepper to taste.
  • Add in the thawed hash browns and mix to combine.
  • Transfer to baking dish.
  • At this point you can cover and refrigerate to bake the next day, top with the cornflake before baking.
  • In a small bowl mix the cornflakes with with melted butter then sprinkle over the top of the casserole.
  • Bake for about 50 minutes to 1 hour.

My family loves this and I make it on regular rotation, it's so easy to make just mix everything in one large bowl then bake, you may prepare the complete casserole and refrigerate until ready to bake, which makes this a perfect potluck dish! --- I have even made this using frozen french fries that I cut up into small pieces when I had no hash browns on hand and can also be made using cooked cubed potatoes --- cream of chicken soup may be used in place of mushroom soup, you may even throw in some chopped cooked ham or chicken also, I most always increase this by using two cans of soup, 1-1/2 cups sour cream and using half a 5-pound bag of hash browns --- you will love this! :)
