Steps:
- Mix the ingredients for the fajitas together in a bowl, minus the chicken. Slice the chicken into strips. Add the chicken to the mix and stir until all chicken is coated. Cover and refrigerate overnight. Mix several times.
- Mix the crisp ingredients and press into an oiled 9x13 pan.Bake at 350 for 25 minutes, or until just starting to brown.
- While the crisp is cooking, mix the peppers. Let it marinate while the crisp is baking.
- Once the crisp is done, remove from oven and let it cool.
- Meanwhile, cook the chicken. Once the chicken is cooked through, add the peppers and cook until the chicken browns.
- Slice the crisp and serve the fajita mix over it. Add cheese and sour cream, if you like.

- Cut each chicken wing in half; place in large resealable food-storage plastic bag. Add marinade ingredients; seal bag. Turn bag to coat wings. Refrigerate at least 4 hours but no longer than 24 hours, turning bag occasionally.
- Heat oven to 375°F. Drain chicken wings, reserving marinade. Place chicken on broiler pan.
- Bake 45 to 60 minutes or until juice of chicken is clear when thickest part is cut to bone (180°F), brushing occasionally with reserved marinade. Discard any remaining marinade. Serve warm.

Got this off of the Atkins Web site, really good!! Marinate time: 4 hours If you like the heat of hot peppers, add a big pinch of chili powder to the marinade or top the fajitas with shredded jalapeno jack cheese.

Steps:
- Place chicken, 1/4 cup of the oil, lime juice, tequila, 1 tablespoon of the cilantro, garlic, cumin, lime peel, salt and pepper in a plastic bag and marinate, refrigerated, 4 hours or overnight.
- Drain chicken and discard marinade.
- Heat oven to 350°F.
- Wrap tortillas in foil and place in oven.
- Heat remaining tablespoon oil in a large skillet over medium-high heat and cook onion 3 minutes, until softened.
- Add pepper strips and cook 2 minutes, until crisp-tender.
- Transfer vegetables to a bowl.
- Add chicken to skillet and cook about 5 minutes per side, until cooked through (add more oil if necessary).
- Stir in vegetables and tomato.
- Cook, stirring, 2 minutes more.
- Stir in remaining cilantro.
- To serve, spoon chicken mixture onto tortillas and top with sour cream and salsa, if desired.
LO-CARB FAJITA CHICKEN WINGS
If you are following a lo-carb diet, this recipe is a definite keeper! These chicken wings are crispy, tart, carmelized and yummy. The recipe calls for 12 chicken wings, but I've used many more than that, as the marinade goes a long way. Just marinate 4-24 hours before baking.

- Rinse chicken wings and dry with paper towels. Cut each chicken wing in half and place in large resealable gallon plastic bag.
- Add remaining ingredients to chicken wings. Turn bag to coat the wings. Refrigerate at least 4 hours or up to 24 hours, turning bag occasionallly.
- Heat oven to 375 degees. Drain chicken wings, reserving marinade, and place on cookie sheet sprayed with non-stick spray.
- Bake for 45-60 minutes or until chicken browns, occasionally basting with reserved marinade. Discard remaining marinade.
- Enjoy!

- Combine all the ingredients for the fajita seasonings. Reserve 1 1/2 teaspoons for the bell peppers.
- In a medium bowl, combine 2 tablespoons of olive oil, chopped cilantro, lime juice, mustard and 5 teaspoons of the fajita seasonings. Reserve 1 tablespoon of the chicken marinade for drizzling on the chicken at the end. Pour remainder of the marinade into a large zip-top bag along with the chicken. Press the bag to evenly distribute the marinade and allow to sit while you prepare the vegetables.
- Heat 1 tablespoon butter in a 12" skillet over medium high heat. Add the onions and allow to cook for about 5 minutes, or until softened and fragrant. And if you like them softer, leave them on for about 3 minutes longer. Transfer and set aside on a plate.
