SPAGHETTI SAUCE

- In a large pot over medium-high heat, brown the ground beef until totally browned. Remove the meat from the pot with a slotted spoon and put into a bowl. Set aside.
- Discard any grease in the pot, but do not clean the pot. Drizzle in the olive oil. When it is heated, throw in the diced onions. Stir it around for 1 1/2 minutes, and then add the garlic. Stir and cook for an additional minute.
- Add the crushed tomatoes, tomato paste and marinara sauce. Stir to combine, and then add the sugar, salt, oregano, thyme, crushed red pepper (if using) and bay leaves. Stir, then add the cooked ground beef and stir to combine. Place the lid on the pot and allow to simmer for 1 hour, stirring occasionally. Add a little water or some low-sodium broth if it needs more liquid.
- After an hour, add the minced parsley, basil and the Parmesan rind if using (or grated Parmesan if you prefer--or both!). Stir to combine, and then put the lid back on and allow it to simmer for another 30 minutes or so. Discard the bay leaves before serving.
- Serve a big bowl of oiled noodles and the spaghetti sauce so guests can serve themselves. Top each serving with minced parsley and grated Parmesan (or Parmesan shavings) and serve with a big piece of garlic-cheese bread.

Everyone always asks me for my Spaghetti sauce recipe. Barry say's its the best sauce EVER lol. make sure you use good Italian tomatoes, I always buy the unico brand. It makes a huge batch but freezes very nice too

In a good sized pot add a small amount of olive oil and add onions, cook for about 3 minutes, add your beef and sausage and cook till no longer pink, add in mushrooms and oregano, and season with some salt and pepper. Cook for about 5 minutes and then add in your tomatoes and the rest of your spices and some more salt and pepper. Now the secret is to simmer the sauce on low for a good 2 hrs so all the flavors come together.

- Soak sun dried tomatoes in chicken broth.
- Cook chicken in oil with garlic in a large skillet over medium heat until done.
- Stir cornstarch into a couple of tablespoons of chicken broth. Stir remaining chicken broth, sun dried tomatoes, pesto, pine nuts, and basil into the skillet with the chicken. Mix cornstarch mixture into the sauce, and cook until thickened. Add feta a few minutes before serving.
- Meanwhile, cook the pasta in a large pot of boiling salted water until al dente. Drain. Serve sauce over pasta, and sprinkle with Parmesan cheese.

- In a large frying pan, brown the beef with the onions and garlic. When the beef is cooked through, drain the excess grease.
- Add the cooked beef to a large stock pot.
- Now add the tomatoes, tomato sauce, tomato paste, wine, Worcestershire sauce, sugar, oregano, basil and salt and pepper. Stir and bring to a light simmer.
- Simmer over low-medium heat for about 1 hour, covered.
- Serve over fresh pasta and with grated parmesan cheese.

PINK SPAGHETTI
Named by my kids because the cream cheese turns the tomato sauce kind of pink. This is a very simple but very yummy dish, especially for kids. I recommend that you make this at least once just the way it is and try it before you add any kind of spices. It's the simplicity that makes this recipe good. I have tried adding oregano and other spices, but I still like the original better. I see it like macaroni and cheese--you can doctor it up in a thousand ways, but in the end, the best is just the macaroni and the cheese.

- Cook spaghetti according to package directions.
- In blender add tomato sauce, cream cheese, garlic, and bouillon.
- Blend until cream cheese is smooth.
- Pour spaghetti into a strainer and return pasta pan to stove on medium heat.

SPAGHETTI WITH TOMATO AND BASIL
Steps:
- In a wide pan over medium-high heat, heat 1/3 cup of olive oil until quite hot. Add the tomatoes, red pepper flakes, and season lightly with the salt and pepper. (I always start with a light hand with the salt and pepper because as the tomatoes reduce, the salt will become concentrated.) Using a potato masher, mash the tomatoes finely. (This will be easier to do as the tomatoes begin to heat up.) Cook the tomatoes for 20 to 25 minutes, until the tomatoes are tender and the sauce has thickened.
- Meanwhile, stack and roll the basil leaves into a cylinder and cut thinly crosswise into a chiffonade.
- Bring a large pot of amply salted water to a boil. Cook the spaghetti until just shy of al dente. Reserve a little of the pasta cooking water. Add the pasta to the sauce and cook over medium-high heat, gently tossing the pasta and the sauce together with a couple of wooden spoons and a lot of exaggerated movement (you can even shake the pan) until the pasta is just tender and the sauce, if any oil had separated from it, now looks cohesive. (If the sauce seems too thick, add a little pasta cooking liquid to adjust it.) Take the pan off of the heat and toss the butter, basil and cheese with the pasta in the same manner (the pasta should take on an orange hue) and serve immediately.
- Cook's Note: Here is a good tip for peeling and seeding tomatoes: Bring a large pot of water to a boil. Have a large bowl of ice water nearby. Cut a small shallow X on the bottom of each tomato. Ease about 5 tomatoes into the pot and cook for about 15 seconds, and then promptly move them to the ice water. (Do this with the remaining tomatoes.) Pull off the skin with the tip of a paring knife. If the skin sticks, try a vegetable peeler using a gentle sawing motion. Cut the tomatoes in half and use your finger to flick out the seeds.
LISA'S SLOW COOKER SPAGHETTI SAUCE
Pasta sauce recipe with tomato puree. Makes a great basic sauce. Add some red wine or small can of tomato sauce if sauce becomes too thick. Freezes well. Great with fresh basil added.

- Saute onion in olive oil, add garlic during last 3 minutes of cooking, then add onion and garlic to slow cooker. Brown beef, drain fat, and add with remaining ingredients to slow cooker. Cook on high for approx 4 hours in slow cooker or for 8 hours on medium. Taste halfway through cooking and adjust spices as desired.
