EASY OLD FASHIONED MEATLOAF
No fancy ingredients here... Not like we need another meatloaf recipe, but I figured I'd should post my Grandma's for people like me who like a quick easy meatloaf without a lot of fuss. Most of the meatloaves I saw here had things I'd never even consider putting in a meatloaf! :) At times I will substitute the onion with approx. 1/4 cup dried onion flakes. I also have substituted the garlic with garlic powder. I've never tried making it with horseradish. (I was a notoriously picky eater as a kid so I don't think Grandma put it in when I came to visit either.) I usually don't bother beating the egg... (Boy do I sound lazy! Don't tell Mom! LOL!) I've only recently started putting ketchup on the top before baking, so I don't think it's necessary to keep the meatloaf moist. Mom used to use her own dried bread crumbs, but I use the plain storebought kind. I haven't been adventurous enough to try any flavored bread crumbs... Make sure lean ground beef is used otherwise the meatloaf can get too greasy and/or bubble over the pan while baking. I also recommend checking the center to make sure it's done. On occasion it has taken over an hour to bake.

EASY MEATLOAF
This is a very easy and no fail recipe for meatloaf. It won't take long to make at all, and it's quite good!

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- In a large bowl, combine the beef, egg, onion, milk and bread OR cracker crumbs. Season with salt and pepper to taste and place in a lightly greased 9x5-inch loaf pan, or form into a loaf and place in a lightly greased 9x13-inch baking dish.
- In a separate small bowl, combine the brown sugar, mustard and ketchup. Mix well and pour over the meatloaf.
- Bake at 350 degrees F (175 degrees C) for 1 hour.

BAKED MEATLOAF & MASHED POTATOES
Steps:
- Preheat broiler and move rack to top third of oven. Place a sheet pan in the oven.
- In a medium bowl add the egg, onion powder, garlic powder, cumin, smoked paprika, salt, prunes and ground beef. Use hands to mix until just combined. Scoop mixture onto a piece of parchment and divide in half, then half again. Flatten the mince into four rectangles, 1 inch in thickness. Carefully remove sheet pan from oven, slide parchment with the meat loaf onto the pan and place In the oven. (Don't worry if oven is not fully preheated yet.) Set timer for ten minutes.
- Potatoes: While meat is cooking, give the potatoes a quick wash, scrubbing off any small patches of dirt. Place them in a shallow, microwave safe bowl (like a small lasagna pan or glass pie plate). Cover with plastic wrap and microwave on high for 8 minutes. When done, add butter, 2 teaspoons of salt and chives. Mash with skins and then either scoop onto board or return to oven to keep warm until serving.
- Sauce for meatloaf: whisk tomato sauce, 2 tablespoons of vinegar, sugar and mustard. At the ten minute mark, spoon over meat loaf and cook an additional 3 to 5 minutes, checking for doneness with a meat thermometer (the temperature should be 160℉).
- Salad: In a small bowl toss arugula with olive oil, 1 teaspoon of salt and 1 tablespoon of vinegar. Using a mandoline, slice cucumber ¼ inch thick. Place arugula on board, top with cucumber and sprinkle with feta.
- To assemble: Plate arugula on board and top with cucumbers. Scoop mashed potatoes onto remainder of board. slide meat on top of potatoes finish with freshly cracked pepper, parsley and lemon wedges.
CLASSIC MEATLOAF RECIPE
This Classic Meatloaf recipe was my dad's claim to fame, at least in our house! It's tender and juicy and has a uniquely delicious flavor. The brown sugar and ketchup glaze just puts this meatloaf over the top!

- Preheat oven to 350 degrees F. Spray a 9"x5" loaf pan with nonstick cooking spray.
- Combine meatloaf ingredients in a large bowl using your hands, just until combined. Do not overmix - The less you mess with it, the better it will be!
- Shape into a loaf and place into a loaf pan.
- In a small bowl combine 1/2 cup ketchup, brown sugar and mustard. Brush about 1/3 of the mixture over the top of the meatloaf.
- Bake in the preheated oven for 45 minutes, then pour remaining sauce over the meatloaf. Return to the oven and bake for an additional 15-25 minutes or until meatloaf is completely cooked through. Meat should register between 155 and 160 degrees F.
- Let stand for 5-10 minutes before slicing and serving. Garnish with parsley if desired.

LISH NELSON'S MEATLOAF
Steps:
- Preheat oven to 350°F.
- Finely chop onion. Cut enough bread into 1/2-inch cubes to measure 1 1/4 cups. In a large bowl lightly beat egg. Add chuck, onion, bread cubes, 1 cup tomato sauce, salt, and pepper and lightly blend with hands until just combined. In a roasting pan form mixture into a roughly 9- by 5-inch loaf and bake in middle of oven 10 minutes.
- While meatloaf is baking, in a small saucepan whisk together water, vinegar, brown sugar, mustard, and remaining cup tomato sauce and bring to a boil over moderate heat.
- After meatloaf has baked 10 minutes, spoon enough sauce over meatloaf to coat it. Continue to bake meatloaf, spooning more sauce over it after 30 minutes, 1 hour and 10 minutes more, or until a thermometer inserted in center registers 160°F. Let meatloaf stand in pan on a rack 10 minutes. Return sauce remaining in saucepan to a boil and simmer 1 minute.
- Serve meatloaf with sauce on the side.

My husband loves my meat loaf and I make them for our home and I love meat loaf and it is so simple to fix it and they are so delicious and tasty. When we have meat loaf leftovers and we make meat loaf sandwiches. It is so good and tasty.

- 1. Preheat the oven to 350 degrees F. In a small bowl, whisk together all the glaze ingredients and set aside. In a large bowl, combine all the meatloaf ingredients and mix well. Press the mixture into a 9 by 5-inch loaf pan. Bake for 30 minutes. Remove from the oven and brush some of the glaze over the top of the meatloaf. Bake for 30 minutes more. Remove from oven and let stand for 5 minutes. Turn the meatloaf out onto a serving platter and spoon the remaining glaze over the top before serving.
