250g dried pasta , such as tagliatelle
2 tbsp olive oil
2 skinless boneless chicken breast fillets , cut into small pieces
2 garlic cloves , chopped
142ml carton single cream
3-4 tbsp roughly chopped fresh tarragon leaves
100g spinach leaves, thick stems removed
lemon wedges, to serve

Steps:

  • Cook the pasta in boiling water for 8-10 minutes, or according to packet instructions, until just tender.
  • Meanwhile, heat the oil and fry the chicken over a high heat for 4-5 minutes, stirring, until golden and cooked. Add the garlic, cream, tarragon and 3 tbsp of the pasta cooking liquid. Gently heat through.
  • When the pasta is cooked, stir in the spinach (it will immediately wilt in the hot water). Drain well, then toss into the creamy chicken. Season with salt and pepper and serve with lemon for squeezing.

6 ounces dried linguine
2 cups broccoli florets
½ cup reduced-sodium chicken broth
2 teaspoons cornstarch
¼ teaspoon lemon-pepper seasoning
3 boneless chicken breast halves (12 ounces total), cut into bite-size strips
2 teaspoons olive oil
1 tablespoon snipped fresh tarragon or dill or 1/2 teaspoon dried tarragon or dill, crushed

Steps:

  • Cook pasta according to directions, adding broccoli in the last 4 minutes. Drain; keep warm.
  • Combine broth, cornstarch and seasoning; set aside. In a large nonstick skillet, cook chicken in hot oil 4 minutes or until no longer pink, stirring often. Stir cornstarch mixture; add to skillet. Cook and stir until thickened. Stir in tarragon; cook for 2 minutes. Serve over pasta.

6 ounces uncooked linguine
2 tablespoons butter
1 tablespoon olive oil
2 medium zucchini, thinly sliced
1/2 pound fresh mushrooms, sliced
1 large tomato, chopped
2 green onions, chopped
1 garlic clove, minced
1/2 teaspoon salt
1/4 teaspoon pepper
1 cup shredded provolone cheese
3 tablespoons shredded Parmesan cheese
2 teaspoons minced fresh basil

Steps:

  • Cook linguine according to package directions. Meanwhile, in a large skillet, heat butter and oil over medium heat. Add zucchini and mushrooms; saute 3-5 minutes. Add tomato, onions, garlic and seasonings. Reduce heat; simmer, covered, about 3 minutes., Drain linguine; add to vegetable mixture. Sprinkle with cheeses and basil. Toss to coat.

Coarse salt and ground pepper
2 pounds beefsteak or plum tomatoes, cored
1/4 cup extra-virgin olive oil
1/2 cup finely chopped shallots
3/4 pound spaghetti
1 tablespoon coarsely chopped fresh tarragon or basil
1/2 cup grated Parmesan cheese, plus more for serving (optional)

Steps:

  • Bring a large pot of salted water to a boil. Meanwhile, halve tomatoes lengthwise. Squeeze gently to remove most of seeds; discard seeds. Chop tomatoes into 1/2-inch pieces, and transfer to a bowl; set aside.
  • In a large skillet, heat oil over medium-low. Add shallots; cook until golden, stirring occasionally, about 5 minutes. Remove pan from heat. Stir in tomatoes until coated with oil; season generously with salt and pepper.
  • Cook pasta until al dente, according to package instructions. Drain; return to pot. Pour tomato mixture over pasta; add tarragon and Parmesan. Toss to combine. Divide among four bowls; top with additional Parmesan, if desired.

1 large shallot, sliced
1 clove garlic, minced
8 ounces mushrooms, sliced
1 bunch asparagus (1 pound), sliced into 3-inch pieces
1 (8-ounce) package frozen artichoke hearts, thawed
1/2 pint teardrop tomatoes, halved
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
6 tablespoons extra-virgin olive oil
3 tablespoons white wine vinegar
2 tablespoons chopped fresh tarragon leaves
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper

Steps:

  • For the Vegetable Saute: Warm the oil in a large skillet over medium-high heat. Add the shallot and the garlic and cook until tender, about 2 minutes. Add the mushrooms and asparagus to the pan and cook until tender. Add the artichoke hearts and season with salt and pepper, then cook until the artichoke hearts are heated through. Remove the skillet from the heat, then add in the tomatoes and stir to warm them up.
  • For the Tarragon Vinaigrette: Combine the oil, vinegar, tarragon, salt and pepper in a glass screw-top jar. Seal the jar and shake vigorously to mix the vinaigrette.
  • Toss the vegetables with the vinaigrette and serve.

4 ounces pancetta, diced
1 lb shrimp, peeled and deveined
2 small shallots, diced
3 garlic cloves, minced
1/3 cup white wine
1 chicken, bou cube
3/4 cup frozen peas
3/4 cup coconut milk
1 teaspoon red pepper flakes (to taste)
3 tablespoons fresh tarragon, chopped
1 teaspoon lemon zest

Steps:

  • Bring a large pot of salted water to a boil and cook pasta according to box directions.
  • In a large soup pot, heat 1 tablespoon olive oil over medium-high heat. Add the onions, ½ teaspoon salt and some black pepper. Cook, stirring frequently, until onions are soft about 5-6 minute Add garlic and cook until onions begin to caramelize, another 5-6 minute.
  • Add the shrimp to the pan, plus a pinch of salt and black pepper. Sauté the shrimp until it is seared on both sides, about 2 minutes, then move it to the bowl with the pancetta.
  • Reduce the heat to medium. Add the shallots and sauté for 2 minutes, until beginning to soften. Add garlic and cook for 2-3 minutes, stirring constantly.
  • Add wine and the BOU cube to the pan. Whisk well until the cube has dissolved, scraping up brown bits from the bottom of the pan. Bring liquid to a boil, let it reduce until almost fully evaporated, about 1-2 minutes.
  • Add the peas, coconut milk and red pepper flakes to the pan and stir well. Bring it to a boil then reduce heat to medium. Allow the liquid to thicken a bit, stirring occasionally, about 2-3 minutes.
  • Add the pasta to the pan, followed by shrimp and pancetta plus juices from the bowl, then the tarragon and lemon zest. Toss well, then stir over low heat for about 3-5 minutes until shrimp has cooked through. Taste and adjust seasoning.
  • Serve immediately and enjoy.

I'm not sure where I originally got this recipe. I've been making it for years and it is wonderful as a side to grilled chicken or salmon. It also makes a wonderful meatless main dish. I use the spinach and regular linguine mixed together. I hope you enjoy it as much as we do!

1 medium zucchini
1 medium summer squash
1 red bell pepper
6 ounces linguine
1/4 cup dry white wine or 1/4 cup chicken broth
1/4 teaspoon salt
1/4 teaspoon dried basil, crushed
1/4 teaspoon dried tarragon, crushed
1/4 teaspoon crushed red pepper flakes
2 tablespoons olive oil
1 1/2 cups sliced fresh mushrooms
3 cloves garlic, minced
1/4 cup freshly grated parmesan cheese

Steps:

  • Cut yellow squash and zucchini into thirds lengthwise.
  • Cut each third into 1/4 inch thick slices.
  • Cut red bell pepper into thin strips.
  • Set aside.
  • Cook pasta according to package directions.
  • Drain and keep warm.
  • Combine wine, salt, basil, tarragon and red pepper flakes in a small bowl; set aside.
  • In a large skillet, heat olive oil over medium high heat.
  • Add squash, zucchini, red bell pepper, mushrooms and garlic.
  • Stir fry for 2-3 minutes or until vegetables are crisp tender.
  • Stir wine mixture and drizzle over vegetables.
  • Toss to coat and allow to heat through.
  • To serve, toss vegetables with pasta until well mixed.
  • Transfer to a large serving platter or a pasta bowl and sprinkle with parmesan cheese.
  • This recipe calls for dried herbs but of course use fresh if you have them.
  • This looks great on a big platter with pieces of grilled salmon placed on top and garnished with sprigs of fresh basil.

  • In a large pot of boiling salted water, cook pasta 4 minutes short of al dente; add asparagus, zucchini, and snap peas. Cook until vegetables are crisp-tender, about 3 minutes. Reserve 1/2 cup pasta water; drain pasta mixture, and set aside.
  • In the same pot, bring cream and butter to a simmer. Toss in pasta mixture and enough pasta water to create a thin sauce (it will thicken as it stands). Season with salt and pepper, and top with tarragon.
