SWEET AND SOUR MEATLOAF

Our family loves this meatloaf! It's covered with a tangy sweet and sour sauce made on the stove. It is very good!

1 ½ pounds ground beef
1 cup dry bread crumbs
1 teaspoon salt
¼ teaspoon ground black pepper
2 eggs
1 teaspoon dried minced onion
1 (15 ounce) can tomato sauce
2 tablespoons brown sugar
2 tablespoons cider vinegar
½ cup white sugar
2 teaspoons prepared mustard

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, combine the ground beef, bread crumbs, salt, ground black pepper, eggs, onion flakes and 1/2 of the can of tomato sauce. Mix together well and place into a 5x9 inch loaf pan.
  • Push the meatloaf down into the pan forming a well for the sauce around all the edges.
  • Bake at 350 degrees F (175 degrees C) for 40 minutes.
  • Meanwhile, in a small saucepan over medium heat, combine the remaining tomato sauce, brown sugar, vinegar, white sugar and mustard. Bring to a boil and remove from heat.
  • After meatloaf has cooked for 40 minutes, remove from oven and pour sauce over the top of the meatloaf.
  • Return to oven and bake at 350 degrees F (175 degrees C) for 20 more minutes. Let sit 5 minutes before removing from pan.

1 1/2 lbs ground beef
1 medium onion, finely chopped
1 cup cracker, crushed, 1/2 sleeve
1/4 teaspoon pepper
1 1/2 teaspoons salt
1/2 cup tomato sauce
1 cup water
2 tablespoons vinegar
2 tablespoons mustard
2 tablespoons brown sugar

Steps:

  • Meatloaf:.
  • Mix meatloaf ingredients together well.
  • Grease a baking dish, and mound in center, leaving 1" on all sides.
  • Sauce:.
  • Mix together, and spread sauce ingredients over meatloaf.
  • To Finish:.
  • Bake in at 375°F, for 1 hours 10 minutes, or at 350°F, for 1 1/2 hours.
  • Spoon out of pan. Don't try to slice.

My mother-in-law gave me the best recipe for sweet and sour sauce that I've ever tried. We like it best on meatballs, but it's also good on leftover cooked chicken or roast pork, and my children even like it on chopped-up hotdogs ! My husband prefers it to be served with mashed potatoes on the side, so he can scoop some of the sauce over them.

1 cup water
1 cup white sugar
1/2 cup ketchup
1/4 cup cornstarch
2 tablespoons cold water

Steps:

  • Combine water and white sugar in saucepan, bring to a boil.
  • Add ketchup, return to boil.
  • Dissolve cornstarch in cold water.
  • Add cornstarch mixture to boiling mixture slowly, stirring constantly.
  • Remove from heat and continue stirring until thickened.
  • note- this makes a fairly thick sauce.
  • If you prefer a runnier consistency, use less cornstarch.

There are oh-so-many meatloaf recipes here, and I know that I will only ingratiate myself further by adding another one. No? Then consider it done for record-keeping purposes. Admittedly, the ingredients in the sweet and sour sauce seem less than appealing, but the end result is wonderful.

3/4 cup brown sugar
1/3 cup ketchup
3/4 cup water
1/8 cup vinegar
1 tablespoon soya sauce
2 tablespoons cornstarch
1 1/2-2 lbs ground beef (I'm not picky about quantity)
1 cup breadcrumbs
1 -2 tablespoon meatloaf seasoning mix
1 teaspoon salt and pepper

Steps:

  • For the sauce: Combine all ingredients in a saucepan on medium heat.
  • Bring to boil.
  • Simmer gently to thicken.
  • For the meatloaf: Mix all ingredients together and place into a greased bread pan.
  • Pour two-three tbps of sweet and sour sauce over meatloaf and bake at 375 for 1 hour.

It's a little bit sweet a little bit sour and makes the best sandwiches the day after that I have ever tasted. Sometimes you have to make it more then once to make it your own and adjust the sugar to vinegar ratio but it's worth it.

1 1/2 lbs ground beef or 1 1/2 lbs ground turkey
1 cup dry breadcrumbs
1 teaspoon salt
1/4 teaspoon pepper
2 eggs
1 teaspoon chopped onion
1 (15 ounce) can tomato sauce, divided
0.75 (15 ounce) can tomato sauce
2 tablespoons brown sugar
2 teaspoons mustard
2 tablespoons vinegar
1/4-1/2 cup sugar

Steps:

  • Mix the first five ingredients.
  • Add the onion and 1/4 of the can of tomato sacue.
  • Put into a loaf pan.
  • Bake at 350°F for 50 minutes.
  • Meanwhile in a sauce pan combine all of the topping ingredients.
  • Bring to a boil.
  • Pour over meatloaf.
  • Bake 15 additional minutes.
