WORLD'S EASIEST MAPLE WALNUT FUDGE
This has got to be the worlds easiest fudge to make, only 3 ingredients. Make sure to use fresh walnuts and pure maple syrup. The better the quality the better the fudge....Enjoy! Please do not substitute the whipping cream for any other type of cream, it will not work.... it requires heavy cream... to set.

SUGAR FREE MAPLE FUDGE
Steps:
- Prepare a baking dish for nonstick. I like parchment paper that overhangs the dish. Butter is another option.
- Use a whisk or sifter to sift the sugar free powdered sugar into a large mixing bowl (whisk attachment can work on low speed).
- To make this recipe on a stove top: simply heat the ingredients in a saucepan on low heat, stirring constantly. When the ingredients appear to be combined and there are no clumps, transfer the fudge to your prepared baking dish. Refrigerate for at least two and a half hours or until firm before cutting into squares.
- Make this recipe in a microwave- place the ingredient in a microwave safe bowl. Heat on full power, stirring every thirty seconds, until until smooth and combined. Transfer to the prepared baking dish and refrigerate until firm.
- Note- if you are adding nuts, the should be stirred in after the heating process and before the transfer to the baking dish. Also, substituted ingredients can alter the heating and firming steps. Lastly, when adding the liquid ingredients, start with the smallest amount and add additional as needed for consistency (you may need more or less milk depending on the consistency of your fudge).

LINDA'S EASY MAPLE FUDGE
I found two different Maple Fudge recipes but neither one was 'just right'. This is a combination of the two. I make this for Christmas every year, one batch with lots of walnuts & one without for my non- nutty friends & family. I make only at Christmas because we just cannot resist this fudge and it keeps it special. You can add...

Steps:
- 1. Over medium high heat, bring butter, brown sugar and carnation milk to a boil.
- 2. Reduce heat to medium, simmer for 7 minutes, stirring constantly.
- 3. Remove from heat. Add the maple extract and give a quick mix.
- 4. Add the powdered sugar 1 cup at a time and beat with an electric or hand mixer for 2 minutes.
- 5. Stir in nuts by hand if using. Pour into an 8x8 or 9x9 pan, lightly buttered. Cool.
- 6. This makes a large batch of fudge and in the 8x8 or 9x9 pan it is quite thick, so cut into small squares. I chop the walnuts fairly large but they can be any size you prefer.

- Stir melted butter, maple extract, powdered sugar, and salt together in a medium bowl. The sugar will absorb the liquid and begin to clump – that’s ok!
- Add one Tablespoon of hot water at a time, stirring between each addition, until frosting reaches a thick, smooth consistency (almost like thick cake batter).
- Spread frosting onto cooled cake or cupcakes. Work quickly here – the frosting will set and harden as it cools. Let sit for an hour or so until the frosting sets, then serve and enjoy!

- Butter a 9-inch square baking dish. For easier removal, line the baking dish with parchment paper or aluminum foil leaving an 1-inch overhand, and then butter the paper or foil. This technique makes it easy to pull the fudge out of the pan in one piece
- In a large saucepan over medium heat, combine sugar, butter, maple syrup, milk, and miniature marshmallows; cook, stirring occasionally, until the candy or digital thermometer reaches 235 degrees F. or until it forms a soft ball when a little of the mixture is dropped in cold water. Remove from heat.
- Note: The reason that fudge can turn out grainy is that there was still somesugar crystals in the mixture that did not melt. Fudge is what is called a super saturated solution, and one little grain or crystal of sugar or even a bit of dust can cause the sugar to come out of solution and begin to crystallize. To solve the problem place the fudge back into the pan, re-cook it (and during that time to put a lid on the kettle for a minute or so). This washes the sugar crystals off of the side of the pan.
- Let cool to 115 degrees F; add walnuts and vanilla extract. With an electric mixer at medium speed, beat until mixture loses its gloss and starts to harden around edge of saucepan. Pour into prepared baking dish. Let cool completely.
