CHICKEN CORN CHOWDER

A chowder made with chicken and corn. It can be reheated with the cream added without curdling, even in the microwave.

1 chicken carcass
1 bay leaf
2 tablespoons butter
1 onion, diced
3 shallots, diced
2 cubes chicken bouillon, crumbled
2 tablespoons dried parsley
salt and pepper to taste
2 potatoes, peeled and diced
1 ½ cups frozen corn kernels
2 tablespoons heavy cream

Steps:

  • Place chicken carcass (and any leftover skin and meat and other bones) in a large pot and cover with cold water. Add bay leaf, and bring to a boil. Reduce heat, and simmer 60 to 90 minutes. Remove from heat, cool slightly, and strain. Remove chicken meat from carcass, and chop into bite-size pieces.
  • In a large saucepan over medium heat, melt butter. Cook onion and shallots in butter until translucent. Pour in strained broth and chicken meat and stir in bouillon, parsley, salt, pepper, potatoes and corn. Simmer 15 minutes, until potatoes are cooked and corn is tender. Remove from heat and stir in cream.

2 lbs fresh skinless salmon fillets, skin removed and cut into 1-inch cubes or 2 (15 ounce) cans salmon, flaked and skin and bones removed, reserving any juice from canned salmon
8 large potatoes, peeled and cubed into 1-inch squares
2 large onions, cut in half, then thinly sliced
2 (14 3/4 ounce) cans cream-style corn (or 1 14 3/4 ounce can cream style corn AND 1 14. 75 oz. can whole kernel corn)
2 quarts whole milk, is best
1 (12 ounce) can evaporated milk
1/2 cup margarine
salt and pepper, to taste

Steps:

  • In a lg. pot, put in potatoes, onions, and salmon. Add enough water to cover all. Add salt and pepper, and let come to a boil.
  • Boil about 15 minutes. Drain out water, until liquid is just covering potatoes.
  • Add corn, and juice of corn, milk, evaporated milk, and reserved juice from canned salmon. Stir.
  • Add a stick of margarine, and stir as it melts, to blend. Heat for 20 minutes on medium heat.
  • Add salt and pepper, to taste.
  • If you want to thicken the chowder, do so now, by adding about 1/2 cup flour into 2 cups COLD water, mixing well to remove lumps, then add about 1/3 at a time into chowder, until you get desired consistency.
  • Makes a big pot.

This is delicious on a cold winter or fall day! If thickened, this is great in a bread bowl. I love mine with oyster crackers on top, and a BIG dill or sour pickle on the side! You can add 2 cans cream style corn too, as I did in the pictures I posted for another delicious chowder variation! If you cook ahead and give chowder a chance to sit in the fridge, the flavors will meld and it is even more AWESOME the 2nd day! I often use Fat Free Half And Half in place of the whole milk, and its great too. NOTE: This chowder makes lots of delicious thin milky, buttery broth, which is traditional in New England style chowders. If you make changes to the amounts of milk, butter, etc. it will not taste as rich and delicious, and changes the recipe.

1 (16 ounce) bottle clam juice (optional)
2 (14 3/4 ounce) cans cream-style corn (optional)

Steps:

  • In a lg. pot, put in potatoes, and onions. Add enough water to cover all.
  • Add salt and pepper, and let come to a boil. Boil about 15 minutes.
  • Drain out water, until it is just covering all.
  • Add clams with juice and bottled clam juice (if you are using), milk and evaporated milk, Stir.
  • Add stick of margarine, and stir as it melts to blend. Heat for 20 mins on med. heat.
  • If you want to thicken the chowder, do so now, by adding about 1/2 cup flour into 2 cups COLD water, mixing well to remove lumps, then add about 1/3 at a time into chowder, until you get desired consistency.
  • Add salt and pepper, to taste.

This corn chowder can be a side dish or serve as a main meal. It is tasty and filling with 'hidden protein' (beans) that you'll never even notice. The recipe originally came from Nutrition Action and I've made a few tweaks. The evaporated milk makes the chowder taste much richer. I like to serve this crumbled Morning Star Breakfast Strips (fake bacon) that people can sprinkle on top of their chowder and crusty bread. Super healthy, super low fat and pretty low salt (especially for soup)!

2 tablespoons olive oil
1 onion, diced
5 garlic cloves, chopped
2 tablespoons flour
2 cups red bell peppers, seeded and chopped (I often use the pre-cut frozen traffic light peppers from Whole Foods)
2 carrots, peeled and coined
2 cups corn (frozen, fresh or canned)
1 potato, peeled and diced
1 (12 ounce) can evaporated skim milk
1 1/2 cups skim milk
2 cups low sodium vegetable broth (or chicken broth)
1 teaspoon dried thyme
1 (15 ounce) can cannellini beans (or Great Northern beans or other white beans)

Steps:

  • Heat the olive oil in a medium stockpot over medium-high heat.
  • Add the onion and garlic (and the peppers, if they are frozen) and saute' for two minutes.
  • Stir in the flour and cook for 1 minute, stirring constantly.
  • Add (the peppers if fresh), carrots and corn and stir well.
  • Stir in the potato, milk, broth, and thyme.
  • Bring to a boil, reduce the heat and simmer for 15 to 20 minutes (until the potatoes are tender).
  • While it simmers, drain and rinse the beans (helps eliminate the 'toot' factor) and them mash them with a fork in a small bowl until they form a paste.
  • Stir the beans into the soup and cook until warmed or ready to eat.
  • Serve hot.
  • For Vegetarian use the Vegetable Broth of course.

3 cups soft shell clams or 3 cups long-neck clams, drained, and shucked
vegetable oil, for deep frying
3 eggs
1 cup evaporated milk
1 teaspoon salt
1/2 cup cornflour (not cornmeal)
lemon wedge
tartar sauce
ketchup

Steps:

  • Preheat oven to its lowest setting.
  • Line a lg. cookie sheet with double thickness of paper towels, and place it in the oven.
  • Pour vegetable oil into a deep fryer, or a lg. heavy saucepan, to a depth of about 3".
  • Heat oil to 375°F.
  • In a bowl, beat the eggs until well blended, then stir in the milk and salt.
  • Spread the flour on a lg. strip of wax paper.
  • Drop the clams into the egg-milk mixture, and let them soak for 1 minute.
  • Pick up a handful of the soaked clams, and roll them in the flour until well coated. Shake off any excess flour before dropping in the oil.
  • Immediately drop the floured clams into the hot oil, and deep-fry for 1-2 mins., until golden brown.
  • As they brown, transfer them to the towel-lined pan, and keep them warm in the oven, while the rest are cooking.
  • Serve with lemon wedges, tarter sauce, and ketchup.

4 oz sliced bacon, cut into 1" pieces
2 Tbsp unsalted butter
2 c chopped onions
2 Tbsp unbleached all-purpose flour
4 c chicken broth
2 large potatoes, peeled and cut into 1/4" dice
1 c half and half
4 c cooked corn kernels, drained
3/4 tsp coarsely ground black pepper
salt to taste
1 large red pepper, cut into 1/4" dice
scallions (green onions), white bulb and 3 inches green, cut into 1/4" slices
1 Tbsp chopped cilantro (fresh coriander), for garnish

Steps:

  • 1. Wilt the bacon in a large soup pot over low heat until fat is rendered, about 5 minutes. Add the butter and allow it to melt.
  • 2. Add the onions and wilt over low heat for 10 minutes. Add the flour and cook, stirring, another 5 minutes.
  • 3. Add the stock and potatoes. Continue cooking over medium heat until the potatoes are just tender, 12 to 15 minutes.
  • 4. Add the half-and-half, corn, pepper, and salt. Cook 7 minutes, stirring constantly.
  • 5. Add the bell pepper and scallions, adjust the seasonings, and cook an additional 5 miinutes. Serve immediately, garnnished with cilantro.

½ cup diced bacon
4 medium potatoes, peeled and chopped
1 medium onion, chopped
2 cups water
3 cups cream-style corn
2 teaspoons salt
ground black pepper to taste
2 cups half-and-half

Steps:

  • Place the bacon in a large pot over medium-high heat, and cook until crisp. Drain and crumble, reserving about 2 tablespoons drippings in the pot.
  • Mix potatoes and onion into the pot with the crumbled bacon and reserved drippings. Cook and stir 5 minutes. Pour in the water, and stir in corn. Season with salt and pepper. Bring to a boil, reduce heat to low, and cover pot. Simmer 20 minutes, stirring frequently, until potatoes are tender.
  • Warm the half-and-half in a small saucepan until it bubbles. Remove from heat before it boils, and mix into the chowder just before serving.

  • In a large soup pot heat the three tablespoons of vegetable broth on medium high heat. When the broth is hot add the onions and stir well.
