These Lime Meltaways are the perfect Christmas cookie. They simply melt in your mouth and if you love lime flavor then this cookie is for you.

3/4 cups butter (unsalted, at room temperature)
1 cup icing sugar (same as powdered sugar or confectioners sugar)
zest of 2 limes
2 tablespoon lime juice
1 tablespoon vanilla extract
1 3/4 cups all-purpose flour
1/4 teaspoon salt
2 tablespoon cornstarch

Steps:

  • Combine the wet and dry: In a mixer, cream the butter and 1/3 cup of the icing sugar until fluffy. Add the lime zest, lime juice, vanilla and beat until fluffy. In a bowl, whisk together the flour, cornstarch and salt then add to the butter mixture and beat on low speed until combined.
  • Roll dough into two 2 inch diameter logs and cover with wrap and chill for at least an hour. Heat oven to 350 degrees. Slice the dough into 1/8 inch thick rounds. Place cookies on baking sheets about 1 inch apart.
  • Bake cookies until golden, about 15 minutes then cool on a wire rack.
  • Finish the cookies: Place remaining 2/3 cup powdered sugar in a resealable plastic bag. While still warm place the cookies in the sugar-filled bag, and toss to coat.

Bring a little citrus to your season with these Lime Meltaways! These bite-size slice-and-bake shortbread cookies are made with lime zest and coated in powdered sugar for a sweet, citrus flavor that melts in your mouth.

3/4 cup salted butter, softened (12 tablespoons )
1 cup powdered sugar (divided)
Zest of 2 limes
2 Tablespoons fresh lime juice
1 Tablespoon vanilla extract
1 3/4 cup + 2 tablespoons all-purpose flour
2 Tablespoons cornstarch
1/4 teaspoon salt

Steps:

  • In a large bowl of a stand mixer fitted with the paddle attachment, beat the butter and 1/3 cup of the powdered sugar on medium-high speed until light and pale, about 2-3 minutes.
  • Add the lime zest, lime juice, and vanilla and mix again, scraping down the sides of the bowl.
  • Add the flour, cornstarch, and salt, mixing until combined. At first it might not seem like the dough will come together, but let it keep mixing and it will form into a nice dough, about the consistency of play-dough.
  • Divide the dough into 2 equal pieces and roll each half into a 1 1/4-inch diameter log (about 9-inches long each). Wrap tightly in plastic wrap and place in the fridge for 1 hour to chill.
  • Preheat oven to 350 degrees F. Unwrap the two logs of dough and slice into 1/4-inch discs using a sharp knife. Place the disks on parchment-lined baking sheets and bake for 13-14 minutes until barely golden around the edges.
  • Cool for 8-10 minutes, then transfer half of the cookies to a large ziploc bag along with the reserved 2/3 cup of powdered sugar. Toss gently to coat each cookie with powdered sugar, then remove the cookies to a plate and repeat with the remaining cookies. A few of the cookies will probably break while being tossed with the powdered sugar, but they still taste good!
  • Store in an airtight container on the counter for up to 2 weeks. Supposedly they taste even better after a week or two since the lime flavor comes through stronger, but I haven't been able to keep any around that long!

3/4 cup (1 1/2 sticks) unsalted butter, room temperature
1 cup confectioners' sugar
Finely grated zest of 2 limes
2 tablespoons fresh lime juice
1 tablespoon pure vanilla extract
1 3/4 cups plus 2 tablespoons all-purpose flour
2 tablespoons cornstarch
1/4 teaspoon coarse salt

Steps:

  • Put butter and 1/3 cup confectioners' sugar in the bowl of an electric mixer fitted with the whisk attachment, and mix on medium speed until pale and fluffy. Add lime zest and juice and vanilla, and mix until fluffy.
  • Whisk together flour, cornstarch, and salt in a bowl. Add to butter mixture, and mix on low speed until just combined.
  • Divide dough in half. Place each half on an 8-by-12-inch sheet of parchment paper. Roll in parchment to form a log 1 1/4 inches in diameter, pressing a ruler along edge of parchment at each turn to narrow log. Refrigerate logs until cold and firm, at least 1 hour.
  • Preheat oven to 350 degrees. Remove parchment from logs; cut into 1/4-inch-thick rounds. Space rounds 1 inch apart on baking sheets lined with parchment paper. Bake cookies until barely golden, about 13 minutes, rotating sheets halfway through. Transfer cookies to wire racks to cool slightly, 8 to 10 minutes. While still warm, toss cookies with remaining 2/3 cup sugar in a resealable plastic bag. Cookies can be stored in airtight containers at room temperature up to 2 weeks.

I love to make meltaway type cookies for the holidays and I love to make key lime cakes. I decided to combine the two and create a key lime flavored meltaway cookie and it is great. My family loves them and this will become an asked for cookie from them .

3 oz cream cheese, room temperature
1/2 stick butter, room temperature
1 tsp vanilla extract
1/4 c sugar
1 1/4 c all purpose flour, separated
1 c toasted finely ground pecans
1 box lime jello 3 oz size
1 lime, juiced
1 1/2 c powdered sugar, separated
1/8 tsp vanilla extract

Steps:

  • 1. Preheat oven to 325% and line a baking sheet with parchment paper. In a medium size mixing bowl add the cream cheese, butter, sugar and 1 teaspoon of vanilla extract. Mix well, add 2 Tablespoons of the Lime Jello and approx 2 Tablespoons of the lime juice, be sure there is about 1 Tablespoon of lime juice left for the glaze, adjust as needed.
  • 2. Mix 1 cup of the all purpose flour and the finely ground pecans together. Mix the dry ingredients into the wet ingredients well. If dough seems too sticky, add a small amount of the remaining 1/4 cup of all purpose flour. Meltaway cookie dough is rather stiff and holds a ball shape.
  • 3. Once the dough has been mixed you will cover the bowl with a piece of plastic wrap and refrigerate for at least 30 minutes. The chilled dough is easier to scoop onto your baking pan.
  • 4. Using a small cookie scoop, scoop the dough to a flat even bottom and release from the scoop and place onto the baking sheet lined with parchment. These cookies do not spread while baking so they can be close together on the sheet. Place the pan into the preheated oven for 15 minutes. While the meltaways are baking mix 1/2 cup powdered sugar, 1 Tablespoon of lime juice, 1/8 teaspoon vanilla extract and 1/4 teaspoon of the lime jello for color, set aside. When the meltaway cookies are done remove from oven and immediately begin to gently roll them into a bowl with the remaining 1 cup of powdered sugar. Once the cookies are cooled, drizzle the glaze over the top as desired, note, if glaze is a little thick, add a drop or two of water at a time to make it thin enough to drizzle.

1 cup butter
½ cup powdered sugar
1 ½ teaspoons lime juice
½ cup cornstarch
1⅔ cup flour
3 cups powdered sugar
1 cup butter (softened)
Juice of two limes
Lime zest
2-4 tablespoons milk
Dash of salt

Steps:

  • Cream the butter and sugar, then add the rest of the cookie ingredients and mix well. It will be a thick dough. Roll the dough into small balls, the place on a cookie sheet. Use a glass to flatten the cookies, then bake at 350 degrees for 10-12 minutes, or until the tops start to crack. Edges could be slightly browned, but they won't necessarily be. Let cool completely before frosting.
  • To make the frosting, beat the butter, lime juice, lime zest, and dash of salt until creamy, then add the powdered sugar and mix well. Add the milk a little at a time until you get a smooth and creamy consistency. Frost cooled cookies, and sprinkle with lime zest.
