This cilantro lime chicken marinade is easy to mix up and adds so much flavour to your chicken. Marinate and then grill or bake, or freeze for later!

4 skinless, boneless chicken breasts
1/4 cup olive oil
1 lime, juice
1/2 cup cilantro, chopped
1 teaspoon salt
3 cloves garlic, minced
1/2 teaspoon black pepper

Steps:

  • Place the chicken breasts in a large ziplock bag. In a small bowl, whisk together the olive oil, lime juice, cilantro, salt, garlic and pepper.
  • Pour the marinade over the chicken and seal the bag, squeezing out all the air.
  • Move the chicken around in the marinade until it is all evenly coated.
  • Refrigerate and let it marinate for at least 30 minutes and up to 4 hours (see note).
  • You can freeze the chicken in the marinade immediately and let it marinate as it defrosts, or marinate and cook it immediately.
  • Either grill the chicken for 6-8 per side, pan fry for 6-8 minutes per side over medium heat, or bake at 375 degrees F for 20-30 minutes, or until an internal temperature of 165 degrees F has been reached.
  • Let the chicken rest, tented with foil, for 5 minutes before serving.

1 (4 ounce) can diced green chiles
½ cup canola oil
¼ cup chopped fresh cilantro
2 limes, zested and juiced
2 cloves garlic, finely chopped
½ jalapeno pepper, ribs and seeds removed, finely minced
1 tablespoon honey
1 teaspoon kosher salt
½ teaspoon ground black pepper
1 pound skinless, boneless chicken breasts

Steps:

  • Combine chiles, canola oil, cilantro, lime zest and juice, garlic, jalapeno, honey, salt, and pepper in a 1-gallon freezer bag and seal completely. Gently massage the bag to combine ingredients well. Add chicken and turn to completely coat with marinade. Place in the refrigerator and allow to marinate for at least 4 hours for best flavor, turning bag occasionally.
  • Preheat an outdoor grill for medium heat and lightly oil the grate.
  • Remove chicken from the marinade and shake off excess. Discard the remaining marinade.
  • Grill chicken, covered, on the preheated grill until chicken is no longer pink and juices run clear, 4 to 6 minutes per side.
  • Remove chicken from the grill and let rest under aluminum foil to redistribute juices back into the meat, 4 to 5 minutes.

1 -2 tablespoon chopped fresh cilantro
1 garlic clove, minced (I use more)
1 lime, zest of

Steps:

  • Mix together the marinade ingredients in a deep bowl. Add the chicken breasts and turn to coat completely. Cover the bowl and refrigerate.
  • Marinade for about 1 hour. You can leave the chicken in the marinade longer, but because the mixture is very acidic, the chicken will begin to appear poached.
  • Preheat your grill. Cook the chicken over medium hot coals for about 3-5 mins per side.
  • Serve and enjoy.

Cilantro, lime, garlic and more marry together to create this fresh, citrusy Cilantro Lime Chicken Marinade.

½ cup oil (recommended: avocado or olive oil)
Juice and zest of 2 limes (about ¼ cup)
⅓ cup chopped fresh cilantro
2 garlic cloves, minced
1 teaspoon ground cumin
1 teaspoon salt
¼ teaspoon red pepper flakes

Steps:

  • Add the oil, lime juice and zest, cilantro, garlic, cumin, salt and red pepper flakes to a gallon-sized freezer bag, seal, and shake. Either seal and refrigerate until ready to use, OR add 1.5-2 pounds chicken to the bag, seal, and squish around to make sure the chicken is covered in marinade. (Freezing instructions begin here.)
  • Place the bag in the refrigerator for at least 2 hours and up to 24 hours.
  • Cook the chicken however you'd like (grill, slow cook, pressure cook, or bake). See tips below in the Notes.
  • Preheat oven to 400°F. Place chicken in a casserole dish or on a rimmed baking sheet. Bake uncovered for about 20-25 minutes, until done.
  • Place chicken and marinade in slow cooker. Cover and cook on LOW for 3 to 3 1/2 hours. Really! That's all it takes to get it done, otherwise you'll overcook and dry it out.
  • Place chicken, marinade, and 1/3 cup chicken broth in a 6 quart Instant Pot. (Note: If using an 8 quart, add an additional 1/2 cup of broth.) Lock and seal the lid. Cook at high pressure for 7 minutes and use a quick release of the pressure when the cook time is up. (Note: It will take 10-15 minutes to come to pressure before the cook time starts.)
  • Pound out the chicken to about 3/4 inch thick (or cut it in half lengthwise) to help with fast and even cooking. Preheat grill to medium-high heat and clean the grates well. Grill for about 4-5 minutes per side, maybe longer depending on the thickness, until done.

The recipe comes from Ainsley Harriott, a British chef, and he cautions not to marinate the chicken longer than two hours as the lime juice will break down the chicken to the point that it will fall apart. 3 tablespoons olive oil (divided)
2 limes (zested and juiced)

Steps:

  • Preheat your oven to 425 degrees fahrenheit.
  • Heat the remaining one tablespoon of olive oil in a large ovenproof skillet over medium-high heat. Sear the chicken for 5-6 minutes with the skin side down, until they're golden brown.
  • Then flip the chicken and sear the other side for 2-3 minutes. The chicken will not be fully cooked at this point.
  • Transfer the skillet to the oven and bake the chicken thighs for 15-20 minutes or until the internal temperature reaches 160 degrees fahrenheit.

  • Preheat oven to 425°F /220°C.
  • In a large bowl combine all the ingredients for marinade: vegetable oil, red chili, lime juice, cilantro, garlic , brown sugar, taco seasoning, ground cumin, salt and liquid smoke.
  • Add the chicken thighs to the cilantro lime marinade and toss to coat evenly. Cover with plastic and refrigerate thighs for 30-40 minutes, the longer the better.
  • In an oven safe skillet heat some vegetable oil, add the marinated chicken thighs and sear chicken skin side down , about 4 minutes per side until golden. 2 lbs chicken breasts or thighs (boneless & skinless)
1 bunch cilantro
4 limes (juice of)
3 garlic cloves
2 tbsp olive oil
1 tbsp cumin
1/2 tsp salt
1/8 tsp cayenne pepper
Ground black pepper (to taste)

Steps:

  • In a food processor or blender, add cilantro (whole and with stems), lime juice, garlic, olive oil, cumin, salt, cayenne and black pepper. Process until marinade forms, pausing and scraping the walls.
  • Add chicken in a medium bowl and poke with a fork randomly. This will allow marinade to penetrate the meat. Pour marinade on top and toss with a fork to coat well. Cover and refrigerate for 30 mins - 48 hours. The longer you marinate, deeper the flavor, but even after 30 mins cilantro chicken tastes awesome.
  • To pan fry (pictured): Preheat large ceramic non-stick skillet on medium heat and swirl a bit of avocado oil to coat. Add as many chicken breasts as fit, cover and cook for 5-6 minutes. Flip and cook for another 5-6 minutes or until the thickest part juices run clear when poked with a knife or fork. Discard marinade.
  • To grill: Preheat grill on medium-high (450-500 degrees F) and rub with oiled paper towel. Place chicken on the grill, close the lid and grill for 8-10 minutes turning once. Do not overcook. Discard marinade.
  • To bake: Preheat oven to 450 degrees F. Rub bottom of large baking dish with oil and lay chicken breasts in a single layer. Bake uncovered for 25 minutes (thinner) to 35 minutes (2″+) or until 150 degrees F internal temperature. Discard marinade.
  • For all methods: Make sure you let chicken rest. Remove from heat and cover dish with tin foil, silicone lid or paper towel. Let rest for 5 minutes. This step helps juices to settle back into the meat.

1 cup roughly chopped cilantro leaves and stems
1/2 cup extra virgin olive oil
2 tablespoons honey

1 teaspoon kosher salt
1 teaspoon freshly ground black pepper
extra cilantro (, for garnish)

Steps:

  • Trim any fat from the chicken thighs and place in a large freezer bag. To the bowl of a food processor, add the lime juice, lime zest, cilantro, olive oil, honey, cumin, salt and pepper and whiz to combine, about 30 seconds. Reserve 1/3 cup of the marinade and pour the rest into the bag with the chicken. Refrigerate for 30 minutes up to overnight.
  • Prepare a grill on medium high at 450°F, leaving one side of the grill on low or off. Grill the chicken for 5-6 minutes per side, basting each side the last time it's turned. Once each side has seared, if the chicken pieces seem to be getting too charred, move the chicken pieces to the cooler side of the grill to cook.
  • To redistribute the juices, let the chicken sit for 5 minutes before serving. Serve with lime wedges and additional cilantro and drizzle the rest of the reserved marinade before serving.

Steps:

  • Place chicken breasts in a mixing bowl, baking dish, or plastic bag. You'll need something that can be covered/closed so the chicken can sit in the marinade.
  • Next, create the marinade. In a small mixing bowl, combine the olive oil, cilantro, garlic, lime juice, lime zest, cumin, salt & pepper. Mix until combined. Pour marinade over chicken and ensure all chicken gets coated with marinade.
  • Cover chicken and place in refrigerator. Let chicken marinade for a minimum of 30 minutes, but you can marinade overnight as well.
  • When ready, preheat grill to 400-425 degrees F. Take chicken out of fridge and allow to sit at room temp while grill is preheating (this helps the chicken to cook more evenly and create even juicier chicken).

1/3 cup lime juice ((about 2 limes) plus more to garnish)
2 tablespoons raw honey
3 cloves garlic (minced)
2 teaspoons cumin
1 teaspoon chili powder
1 teaspoon salt
1/2 teaspoon black pepper
1/3 cup chopped cilantro leaves (plus more to garnish)
6 bone-in (skin-on chicken thighs (see notes for chicken breast))

Steps:

  • Add all of the ingredients, except the chicken, to a shallow bowl or ziplock bag and whisk or shake well to combine. Add the chicken thighs and turn to fully coat the chicken. If you used a bowl, cover it tightly with plastic wrap then place the chicken in the fridge for at least 30 minutes to marinade (or up to 8 hours if you want to make it in advance).
  • When you're ready to cook, preheat the oven to 425°F and heat a large, oven-safe skillet over medium-high heat on the stove. Use tongs to transfer the marinated chicken to the hot pan. You do not need to grease or oil the pan because there's enough oil in the marinade. Discard remaining marinade. *See notes for grilling
  • Sear on each side for 1-2 minutes, until golden brown. Try not to move the chicken at all so it can sear and the outsides of the chicken get really brown and crispy. Once both sides are crispy, carefully transfer the chicken to the preheated oven and bake for 14-16 minutes. The best way to determine if they're done is by using a meat thermometer to check the internal temperature. I recommend checking the temp around 14 minutes to ensure the chicken doesn't overcook. To do this, place the thermometer in the thickest part of the chicken (not touching any bone). If it reads 160°F it is done. Allow for 5° of carry-over cooking (chicken should reach 165°F total). Serve with a fresh squeeze of lime juice and additional cilantro.

  • Combine all the ingredients in a food processor for less than one minute or until the texture is nice and chunky. Be sure the garlic is fully processed. If you don't have a food processor you can make the marinade by dicing the cilantro, jalapenos and garlic very lightly and then mix the ingredients in a bowl with a fork.
  • For a less spicy version, remove the inside of the jalapeno and wash it under cold water and be sure not to get any of it in your eyes. Store the marinade in the fridge for up to one week.

2 Tbsp. Olive Oil
1 handful Cilantro (finely chopped, about 1/4 cup)
2 1tsp. Lime Zest
1 Tbsp. fresh Lime Juice
1 tsp. Cumin
1/2 tsp. Smoked Paprika
1/2 tsp. Kosher Salt*
1/2 tsp. freshly cracked Black Pepper*
1 Tbsp. Honey
2 tsp. low-sodium Soy Sauce
1 lb. Chicken Thighs or Chicken Breast**

Steps:

  • Combine all marinade ingredients in a bowl***. Toss the chicken in the marinade, cover tightly with plastic wrap, and refrigerate for at least two hours, up to overnight.
  • If grilling, grease the grill grates with neutral oil (such as grape seed oil). Grill the chicken over medium heat for about five minutes per side, or until the internal temperature of the chicken reaches 165 F.****
  • Transfer the chicken to a platter, and loosely tent with foil. Let the chicken rest for 5-10 minutes before serving.

2 tablespoons olive oil
1 teaspoon grated lime zest
1 tablespoon lime juice
½ teaspoon ground cumin
½ teaspoon ground coriander
½ teaspoon chili powder
½ teaspoon salt
1 pound boneless, skinless chicken thighs (4 pieces)
3 medium scallions, cut into 1-inch pieces
3 tablespoons chopped fresh cilantro
Lime wedges for serving

Steps:

  • Combine oil, lime zest, lime juice, cumin, coriander, chili powder and salt in a large sealable plastic bag. Add chicken; seal the bag and massage to coat the chicken. Let stand at room temperature for 15 minutes.
  • Heat a large nonstick skillet over medium-high heat. Remove the chicken from the marinade; discard the marinade. Add the chicken to the pan in an even layer; cook, undisturbed, until browned on the bottom, 5 to 6 minutes. Flip and cook until a thermometer inserted into the thickest part registers 165°F, 5 to 6 minutes. Transfer to a platter. Do not wipe the pan clean.
  • Add scallions to the pan; cook, stirring constantly, until blistered and tender, about 2 minutes. Scatter the scallions around the chicken. Drizzle with the juices from the pan and sprinkle with cilantro. Serve with lime wedges, if desired.
