LIMA BEAN SOUP



Lima Bean Soup image

Number Of Ingredients 9

1 pound dry large lima beans
8 cups water
2 tablespoons olive oil
4 carrots (chopped)
2 leeks (white bulb only, chopped)
2 tablespoons minced shallots
2 stalks celery (chopped)
8 cups chicken broth (two 32 ounce cartons)
Salt & pepper (to taste)

Steps:

  • Bring 8 cups of water to a boil. Add lima beans and boil for 5 - 10 minutes. Remove from heat, cover. Let beans soak for 2 - 2.5 hours. Drain and rinse beans; return to pot.
  • In a large pan, heat olive oil and saute all the vegetables until carrots and celery are tender-crisp.
  • Add 8 cups of chicken broth to the beans in the pot. Add the vegetables. Stir to combine and simmer on low for 1.5 hours; stirring frequently. Season with salt and pepper as desired.

3 cans (14-1/2 ounces each) chicken broth
2 cans (15-1/4 ounces each) lima beans, rinsed and drained
3 medium carrots, thinly sliced
2 medium potatoes, peeled and diced
2 small sweet red peppers, chopped
2 small onions, chopped
2 celery ribs, thinly sliced
1/4 cup butter
1-1/2 teaspoons dried marjoram
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon dried oregano
1 cup half-and-half cream
3 bacon strips, cooked and crumbled

Steps:

  • In a Dutch oven or soup kettle, combine the first 12 ingredients; bring to a boil over medium heat. Reduce heat; cover and simmer for 25-35 minutes or until vegetables are tender. , Add cream; heat through but do not boil. Sprinkle with bacon just before serving.

2 small onions, peeled and minced
4 potatoes, pared and diced
3 carrots, peeled and diced
2 cups lima beans, cooked (canned is fine)
1 teaspoon salt
boiling water
2 cups medium white sauce

Steps:

  • Dice bacon and place in a kettle.
  • Add onion and cook until golden.
  • Add potatoes, carrots, Lima beans and salt; cover with boiling water.
  • Cook until vegetables are tender.
  • Add white sauce, heat and serve.

7 cups chicken broth, homemade or low-sodium canned
3 cloves garlic, peeled and crushed
1/2 teaspoon crushed red-pepper flakes
4 thin slices fresh ginger
6 small red potatoes, quartered
1 10-ounce package frozen lima beans
1 cup frozen corn
2 teaspoons grated lemon zest
2 teaspoons grated lime zest
2 cups reduced-fat, unsweetened coconut milk
3 sole fillets, about 6 ounces each, cut into 1-inch cubes
1 teaspoon kosher salt
Freshly ground pepper to taste
2 scallions, finely chopped
1/4 cup chopped fresh basil leaves
3 tablespoons chopped fresh cilantro leaves
2 tablespoons chopped fresh mint leaves

Steps:

  • Combine the chicken broth, garlic, pepper flakes and ginger in a large pot and bring to a boil. Reduce heat and simmer for 45 minutes. Strain, wash the pot and return the broth to it. Bring to a boil. Add the potatoes and lima beans and simmer for 10 minutes. Add the corn and simmer until the vegetables are tender, about 5 minutes longer.
  • Stir in the lemon and lime zests and coconut milk. Turn the heat to low and add the fish. Cook 5 minutes. Stir in the salt, pepper, scallions and herbs. Immediately ladle into bowls and serve.

1 teaspoon corn oil
1/2 lb boneless skinless white meat chicken, cut into 1-inch pieces
1 medium onion, finely chopped
1 serrano chili, seeded and finely minced
2 cups fresh corn kernels (or frozen, defrosted corn kernels)
1 large potato, peeled and diced (such as Yellow Finn or Yukon Gold)
4 cups low-fat chicken stock, preferably homemade (Low-Fat Chicken Stock)
salt
fresh ground black pepper
2 cups fresh lima beans or 2 cups frozen lima beans, defrosted
2 tablespoons chopped fresh basil leaves

Steps:

  • Heat the oil in a 4-quart pot over med-high heat; add in chicken; cook/stir until the chicken has turned white and is just beginning to brown, about 5 minutes.
  • Remove the chicken from the pan; set aside.
  • Add the onion and chile to the pan; cook/stir until the onion begins to soften, 2-3 minutes.
  • Stir in the corn, potato, and chicken; add in the broth and bring to a boil.
  • Partially cover the pan, decrease heat to med-low and simmer until the potato is tender, about 15 minutes.
  • Season to taste w/ salt and pepper.
  • Stir the lima beans; cook until they are tender and heated through, about 5 minutes.
  • Stir in the basil and serve.
