NACHO CHEESE DORITO CHICKEN

Steps:

• Preheat oven to 350 degrees.
• Put chicken breasts in zip-lock bag and pound to flatten somewhat.
• Combine mayonnaise and Italian Seasoning in wide bowl.
• Crush Doritos in a zip-lock into pencil eraser sized pieces (or smaller).
• Roll chicken in the mayo mixture and then roll in Dorito crumbs.
• Place in casserole dish and drizzle with melted butter all over the chicken.
• Bake uncovered thirty minutes.

DORITO CHICKEN

Steps:

• Crush doritos, enough to just cover the bottom of a 2 quart casserole.
• Mix all other ingredients, except cheese, and place on top of doritos.
• Crush another layer of doritos on top.
• Sprinkle cheese over all.
• Bake at 350 for 20 minutes.

DORITO CHICKEN

Steps:

• Boil the chicken until done.
• Mix together in a large mixing bowl the 2 cans of soup and Rotel.
• Chop up finished chicken and mix it in with the soup/Rotel mix.
• Crush bag of Doritos.
• Save 2 cups of crushed chips to cover the top of the dish with.
• Mix remaining chips into soup mixture.
• Place in 13x9 baking dish covering with chips and bake for 30 min at 350, or until chips have begun to turn brownish.

DORITO CHICKEN WITH MEXICAN RICE

Steps:

• Heat olive oil in a saucepan over medium-high. Add onion and cook until tender.
• Add rice and stir to coat in oil and cook about one minute.
• Add broth and tomato sauce, bring to a boil, then cover and reduce heat to low for 5-10 minutes.
• While rice is cooking, combine soups, Rotel, Velveeta and cumin in a large microwave-safe bowl. Microwave on High for 2 minutes.
• Add chicken and continue heating in the microwave until Velveeta is melted and mixture is hot.
• Serve chicken over rice, topped with crushed Doritoes. Yum!
