LIGHTENED-UP SWEET AND SOUR CHICKEN
Tender chunks of chicken, bell pepper and sweet pineapple coated in a sticky, sweet and sour sauce. Lightened-up sweet and sour chicken offers a generous portion of the classic takeout dish, but for less than half the calories per serving. Serve it with some fluffy white rice and broccoli for the perfect fake-out takeout meal.

Steps:
- Chop the chicken into bite-sized pieces.
- Add the salt to the corn starch.
- Add the chicken pieces to a bowl with the corn starch and toss to coat.
- Preheat a large frying pan or wok over medium to medium-high heat.
- Spray the pan generously with cooking spray, and then add half of the chicken to the pan.
- Make sure the chicken is spaced out, as to not overcrowd the pan. This is the key to getting a golden crust on the chicken.
- Cook the chicken for five minutes, and then flip each piece to cook for another five minutes.
- Check the internal temperature of the chicken to make sure it's done before removing from the pan. It should be 165F when fully cooked.
- Remove the first batch of chicken from the pan and place in a bowl to the side, then repeat with the remaining chicken.
- Combine all of the sauce ingredients in a small sauce pan, except for the sesame seeds.
- Whisk together to ensure the corn starch is broken up and incorporated.
- Bring the mixture to a boil, then reduce to simmer.
- Simmer for approximately five minutes or until the sauce becomes thick and syrupy in texture.
- In the same pan you cooked the chicken in, spray more cooking spray, and add the diced pepper and onion.
- Cook on high heat for 5 minutes or until the vegetables are slightly charred and tender.
- Add the drained pineapple chunks. Cook for another 2 minutes.
- Add the cooked chicken pieces and the sauce.
- Cook the mixture for a few minutes for all flavors to combine.
- Add the sesame seeds and toss.

- In a large microwaveable dish, mix the ketchup, vinegar, sugar and garlic thoroughly with the chicken, onion and peppers. Microwave, uncovered, on high for 8-10 mins until the chicken is starting to cook and the sauce is sizzling.
- Stir in the pineapple pieces and sugar snap peas and return to the microwave for another 3-5 mins until the chicken is completely cooked. Leave to stand for a few minutes, then stir in the cashews, if using, and serve.

- First prepare the sauce. Add the ketchup, sugar, apple cider vinegar, orange juice, garlic powder, soy sauce, and red pepper flakes to a medium saucepan over medium high heat, bring the sauce to a boil. Mix the cornstarch and 1 tablespoon of water in a small bowl, add to the saucepan and stir until thickened, reduce the heat to low and allow the sauce to cook for 4 minutes. Remove from stove.
- Add the cornstarch and salt to a Ziploc bag. Zip and shake to combine the two. Add the chicken pieces, seal and continue to shake until the chicken is coated.
- Drizzle the oil in a large skillet over medium high heat. Add the coated chicken using a pair of tongs. Discard any remaining cornstarch. Sauté over medium heat for about 4-5 minutes. Add the carrots, pepper, and onions. Continue to sauté for another 1-2 minutes until the chicken is cooked through. Add in the pineapple chunks along with the sauce. Stir to coat well. Serve warm with cooked white or brown rice.

- Prepare the chicken by either grilling or pan cooking and then large dicing it, then put it to the side to add to the dish later. (recommended cook to 165F internal temp for keep it juicy while still fully cooked).
- Add 1 Tbs oil to a large pot or pan and heat over medium high heat and add in the peppers and onion and garlic and cook stirring frequently until slightly softened and fragrant.
- Once softened, add in the pineapple with its juice, soy sauce, rice wine vinegar, salt and tomato paste and stir until it’s all mixed together. Then add in the chicken and sprinkle with cornstarch. Continue to stir to mix in the cornstarch and cover the chicken with sauce. Simmer over medium to thicken the sauce (about 4 to 5 minutes).
