LIGHT SPAGHETTI SALAD
I had this at a family reunion. Several years later I was wanting this and played around until I came up with this recipe. I am always asked to bring it to potlucks at work.

Steps:
- Bring a large pot of lightly salted water to a boil. Cook spaghetti in the boiling water, stirring occasionally until cooked through but firm to the bite, about 12 minutes. Drain and rinse in cold water.
- Place spaghetti into a large salad bowl and toss with red onion, red bell pepper, cucumber, tomato, Italian salad dressing, salad dressing mix, and salt. Chill before serving; salad is better the longer it chills.

- Fill a large pot 3/4 of the way with water and place over high heat. Add plenty of salt and bring to a boil. Add the pasta and cook 8 to 10 minutes, until al dente. Drain the pasta and rinse under cold water to cool down.
- Put the pasta in a large serving bowl and add the tomatoes, basil, lemon juice, olive oil and salt. Toss well and garnish with fresh basil leaves.

Add the dressing as desired o the pasta. Use as much or little as you want. If you want to double this recipe, use two packages of pasta and use as much extra vegetables as suites your taste. - 1. Boil pasta approximately 10 minutes
- 2. As pasta is boiling, chop cucumber, bell pepper and onion
- 3. Once pasta is tender, drain and rinse with cool water
- 4. In a large pasta bowl, combine all produce and pasta
- 5. Slowly add Italian dressing to pasta, tossing pasta as you add the dressing
- 6. If making pasta the night before, reserve approximately one quarter of the dressing and add it to the pasta just before serving
- 7. This should be stored in a covered container in the the refrigerator
