I had this at a family reunion. Several years later I was wanting this and played around until I came up with this recipe. I am always asked to bring it to potlucks at work.

2 (12 ounce) packages spaghetti
1 small red onion, finely chopped
1 red bell pepper, seeded and finely chopped
1 cucumber, chopped
1 tomato, chopped
1 (16 ounce) bottle fat-free Italian salad dressing
1 (.7 ounce) package dry Italian salad dressing mix (such as Good Seasons®)
1 teaspoon salt

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook spaghetti in the boiling water, stirring occasionally until cooked through but firm to the bite, about 12 minutes. Drain and rinse in cold water.
  • Place spaghetti into a large salad bowl and toss with red onion, red bell pepper, cucumber, tomato, Italian salad dressing, salad dressing mix, and salt. Chill before serving; salad is better the longer it chills.

1 pound farfalle pasta
4 plum tomatoes, cut into 1 inch dice
8 basil leaves, cut into chiffonade
1 lemon, juiced
1/4 cup extra-virgin olive oil
3 teaspoons salt
Fresh basil leaves, for garnish

Steps:

  • Fill a large pot 3/4 of the way with water and place over high heat. Add plenty of salt and bring to a boil. Add the pasta and cook 8 to 10 minutes, until al dente. Drain the pasta and rinse under cold water to cool down.
  • Put the pasta in a large serving bowl and add the tomatoes, basil, lemon juice, olive oil and salt. Toss well and garnish with fresh basil leaves.

1 lb spaghetti, break in half
1 pint grape tomatoes, sliced in half, can use cherry tomatoes
1 cup chopped onion
1 cucumber, seeded and diced
1 bell pepper, diced
2 1/4 ounces sliced black olives, drained
8 -12 ounces low-fat Italian salad dressing, depending on how wet you want it
2 tablespoons grated parmesan cheese
1/4 teaspoon celery seed
1/8 teaspoon garlic powder
1/4 teaspoon pepper
1/4 teaspoon dill weed
salt, to taste

Steps:

  • Cook spaghetti according to package directions; drain and rinse in cold water until completely cool; drain again.
  • Place cooked, cooled spaghetti into a large bowl; mix in tomatoes, onion, cucumber, bell pepper, and olives.
  • Whisk together salad dressing and seasonings and pour over salad. Toss to coat well.
  • Cover and refrigerate for at least 2 hours before serving.

1 1/2 cups small shell pasta (or other small pasta shapes)
8 ounces cooked shrimp
2 stalks celery, finely chopped
1/2 red pepper, diced
1/2 cup frozen green pea, thawed
1/4 cup chopped onion
1/2 cup nonfat plain yogurt
2 tablespoons fat-free mayonnaise
1 tablespoon lemon juice
1 tablespoon red wine vinegar
salt and pepper, to taste
2 tablespoons chopped fresh dill or 2 teaspoons dried dill

Steps:

  • Cook pasta until al dente.
  • Drain and allow to cool.
  • Toss pasta with shrimp, celery, red pepper, peas and onions.
  • In a separate bowl, combine remaining ingredients.
  • Add to pasta mixture.
  • Stir well.
  • Chill in refrigerator for at least 2 hours.
  • If desired, serve on a bed of lettuce, accompanied with a slice or two of fresh crusty bread.

1 pkg rotini pasta
1 yellow bell pepper
1 cucumber
1 small jar black olives
1 onion (optional)
1 bottle light italian dressing
1 pkg small cherry tomatoes

Steps:

  • 1. Boil pasta approximately 10 minutes
  • 2. As pasta is boiling, chop cucumber, bell pepper and onion
  • 3. Once pasta is tender, drain and rinse with cool water
  • 4. In a large pasta bowl, combine all produce and pasta
  • 5. Slowly add Italian dressing to pasta, tossing pasta as you add the dressing
  • 6. If making pasta the night before, reserve approximately one quarter of the dressing and add it to the pasta just before serving
  • 7. This should be stored in a covered container in the the refrigerator
