BIG SOFT GINGER COOKIES

These are just what they say: big, soft, gingerbread cookies. They stay soft, too. My oldest son's favorite.

2 ¼ cups all-purpose flour
2 teaspoons ground ginger
1 teaspoon baking soda
¾ teaspoon ground cinnamon
½ teaspoon ground cloves
¼ teaspoon salt
¾ cup margarine, softened
1 cup white sugar
1 egg
1 tablespoon water
¼ cup molasses
2 tablespoons white sugar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Sift together the flour, ginger, baking soda, cinnamon, cloves, and salt. Set aside.
  • In a large bowl, cream together the margarine and 1 cup sugar until light and fluffy. Beat in the egg, then stir in the water and molasses. Gradually stir the sifted ingredients into the molasses mixture. Shape dough into walnut sized balls, and roll them in the remaining 2 tablespoons of sugar. Place the cookies 2 inches apart onto an ungreased cookie sheet, and flatten slightly.
  • Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely. Store in an airtight container.

2⅓ cups all-purpose flour, spooned into measuring cup and leveled-off
2 teaspoons ground ginger
½ teaspoon ground allspice
1 teaspoon ground cinnamon
¼ teaspoon ground cloves
2 teaspoons baking soda
Scant ¼ teaspoon salt
Pinch freshly ground black pepper
1 cup granulated sugar, divided
½ cup packed light brown sugar
2 sticks (1 cup) unsalted butter, softened but still cool
1 large egg
⅓ cup molasses, such as Grandma's Original

Steps:

  • In a medium bowl, whisk together the flour, ginger, allspice, cinnamon, cloves, baking soda, salt, and pepper. Set aside.
  • Using an electric mixer, beat ½ cup of the granulated sugar, brown sugar and butter until light and fluffy, 3-5 minutes, scraping down the sides of the bowl as necessary. Add the egg and beat for about 20 seconds, then scrape down the sides of the bowl; add the molasses, mix well and scrape down the sides of the bowl again.
  • Add the dry ingredients, then mix on low speed until just incorporated. Do not over mix. The dough will be very soft; refrigerate it for about one hour, or until firm enough to roll.
  • Set rack in the middle of the oven and preheat the oven to 350°F. Line a baking sheet with parchment paper.
  • Place the remaining ½ cupgranulated sugar in a shallow bowl. Form the dough into 1-inch balls and roll in the sugar to coat. Place the balls on the prepared baking sheet about 2 inches apart (they will spread), then flatten slightly with your fingers. Bake for 10-14 minutes, until set and golden on the outside and slightly soft on the inside. (As they bake, they will puff up and then flatten. Do not remove them from the oven until they are flat.) Let the cookies cool on the baking sheet for a few minutes, then transfer them to a wire rack to cool completely. Refrigerate the dough between batches. The cookies will keep for several days in an airtight container.
  • Freezer-Friendly Instructions: The Cookie Dough can be Frozen for up to 3 Months: Scoop the dough into balls, let set on a baking sheet in the freezer, then place in a sealable bag and press out as much air as possible. Bake as needed directly from the freezer. (Allow 1 to 2 minutes longer in the oven.) To Freeze After Baking: Let the cookies cool completely and store in an airtight container separating layers with parchment paper or aluminum foil. Before serving, remove the cookies from the container and let them come to room temperature.

My children love to decorate gingerbread cookies but don't like to eat gingerbread. This recipe is halfway between sugar cookies and gingerbread. The girls love the taste. They are a light golden color and perfect for decorating or simply sprinkled with raw sugar before baking. A crisp cookie.

1/2 cup unsalted butter, softened
1/2 cup shortening
3/4 cup light brown sugar
1/2 cup granulated sugar
1 1/2 teaspoons baking powder
1 1/2 teaspoons cinnamon
1 1/2 teaspoons ginger
1/2 teaspoon allspice or 1/2 teaspoon clove
3/4 teaspoon salt
1 large egg
2 tablespoons molasses
3 cups all-purpose flour
3 tablespoons cornstarch

Steps:

  • Beat the butter, shortening, sugars, baking powder, spices and salt until light and fluffy.
  • Add the egg and molasses and beat well.
  • Mix about half the flour into the butter mixture.
  • When well combined add the cornstarch and the remaining flour.
  • Divide in half and wrap well.
  • Chill for 1 hour or longer for easier rolling.
  • Roll dough to 1/8" to 1/4" thick on a flour dusted work surface and cut into desired shapes with cookie cutters.
  • Place on parchment lined or lightly greased cookie sheets.
  • Bake the cookies in a preheated 350 degree oven for 10 to 12 minutes until lightly browned at the edges.
  • Let cool for 5 minutes on cookie sheet before transferring to wire racks.

1 ½ teaspoons ground cinnamon

2 cups white sugar
2 eggs
½ cup molasses
¾ cup white sugar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Whisk flour, ginger, baking powder, cinnamon, and salt together in a bowl.
  • Beat butter in a large bowl until creamy. Gradually beat in 2 cups sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in molasses. Stir 1/2 of the flour mixture into butter mixture; add remaining flour mixture and stir until dough is just-combined.
  • Pour 3/4 sugar into a shallow bowl. Roll dough into 2 inch balls and roll each ball in sugar to coat. Place sugar-coated dough balls 2 1/2-inches apart on a baking sheet.

There is little good in any Christmas cookie except the thought behind it. This may be doubly true for Swedish ginger cookies, a recipe that I have cherished for years, but I often feel it should come with a special warning. The principal ingredient in a batch of Swedish ginger cookies - the one that really does the trick - is 3/4 of a cup of bacon fat. You can never be too certain these days about what people will allow themselves to enjoy. Their ideas about what is good for them may be circumscribed by their upbringing, their religion or their proximity to a pig. However, I suspect that the Swedish cook who came up with this recipe was simply hemmed in by her larder. She had a pan of drippings and some extra sugar and spices, and she made a thin, brown cookie that tasted sweetly of smoke.

3/4 cup bacon fat, cooled (from 1 1/2 to 2 pounds Oscar Mayer bacon)
1 cup sugar, plus 1/4 cup for dusting the cookies

Steps:

  • Place butter in a large bowl; beat with a mixer at medium speed until fluffy. Gradually add 2/3 cup sugar, beating at medium speed until light and well blended.

  • Combine flour and the next 4 ingredients (through mace), stirring with a whisk.
