This recipe was actually made up by a quadriplegic guy that I used to care for when I was a private duty nurse. He would sit in his wheelchair in the kitchen and dictate every thing I was to do (even though I knew how), so that he felt like he was doing it all.

1 lb boneless chicken breast
2 (4 7/8 ounce) boxes alfredo noodles mix
1 (16 ounce) bag frozen chopped broccoli

Steps:

  • Cut up chicken breasts into bite sized chunks and saute in a little oil or butter until cooked through.
  • While chicken is cooking, prepare the alfredo noodles in a large dutch oven, following package directions.
  • Steam the frozen broccoli in another pan using a steamer, or cook it in a pan until just done.** (Steaming is better for retaining nutrients.).
  • When all three are done, add the chicken and broccoli to the alfredo noodles.
  • Mix well and serve with some fresh French bread from the deli.
  • **Another thing you can do to steam the broccoli is to place it in a metal colander, and place the colander resting inside the dutch oven over the cooking noodles with a lid over the top. Convenient, eh?

Classic and easy to make, this version of Alfredo doesn't use flour to thicken the sauce. Instead, it relies on a slight simmer and a heavy dose of cheese.

Kosher salt and freshly ground black pepper
12 ounces fettuccine
Olive oil, for tossing
12 ounces boneless, skinless chicken breast (about 2)
1 stick (8 tablespoons) unsalted butter
2 cups heavy cream
2 pinches freshly grated nutmeg
1 1/2 cups freshly grated Parmigiano-Reggiano

Steps:

  • Bring a large pot of water to a boil, and salt generously. Add the pasta and cook according to package directions until al dente (tender but still slightly firm). Drain and toss with a splash of oil.
  • Meanwhile, slice the chicken into 1/4-inch-thick strips, and lay them on a plate or a sheet of waxed paper. Season with salt and pepper.
  • Heat a large skillet over medium heat. Add 2 tablespoons of the butter. When the butter melts, raise the heat to medium-high and add the chicken in 1 layer. Cook, without moving the pieces, until the underside has browned, 1 to 2 minutes. Flip the pieces, and cook until browned and cooked through, 2 to 3 minutes more. Transfer the chicken to a medium bowl.
  • Reduce the heat to medium. Add the remaining 6 tablespoons butter. Scrape the bottom of the skillet with a wooden spoon to release any browned bits. When the butter has mostly melted, whisk in the cream and nutmeg and bring to a simmer, then cook for 2 minutes. Lower the heat to keep the sauce just warm.
  • Whisk the Parmigiano-Reggiano into the sauce. Add the chicken and cooked pasta and toss well. Season with salt and pepper. Serve hot in heated bowls.

Steps:

  • In a pan over medium-high heat, melt butter, then add the chicken breast.

  • In the same pan over medium heat, melt butter and add the garlic. Cook until the garlic begins to soften.
  • Add half of the flour to the garlic and butter, stirring until incorporated. Then add the rest of the flour and stir.
  • Pour in the milk a little bit at a time, stirring well in between, until fully incorporated and sauce begins to thicken.
  • Season with salt, pepper, oregano, and basil, and stir well to incorporate.
  • Add parmesan cheese and stir until melted.
  • Pour the sauce over cooked penne pasta, add the chicken and mix well.
  • Add parsley and extra parmesan. Mix well.

1 tbsp olive oil
4 skinless boneless chicken thighs, cut in half
300g fettuccine, or tagliatelle
1 tbsp butter
200ml double cream
½ a nutmeg, grated
100g parmesan
parsley, chopped, to serve

Steps:

  • Heat the olive oil in a non-stick frying pan over a medium high heat. Add the chicken thighs and fry for around 10 mins, turning half way, until they are golden brown and cooked through. Set aside to cool a little, then use two forks to shred.
  • Bring a pan of salted water to the boil and add the pasta, cook for 1 minute less that package instructions. Whilst the pasta is cooking, add the butter to the frying pan over a medium heat, scraping the bottom a little to get any of the browned bits. Tip in the cream along with the nutmeg and bring to a simmer. Add the chicken back to the pan.
  • Once the pasta is cooked, use tongs to transfer the pasta straight from the water into the frying pan with the cream mixture. Sprinkle most of the parmesan over and use the tongs to toss it all together, adding a splash of the pasta water if it looks a little stiff. Season well, then tip into bowls. Top with the remaining parmesan, a scattering of parsley, and black pepper.

Steps:

  • Combine chicken breasts and chicken broth in a saucepan over medium-high heat. Bring to a boil, cover, and reduce heat to low; simmer for 5 minutes. Turn breasts, cover, and simmer another 5 minutes. Remove from heat and let sit with the cover on for 15 minutes.

1 lb white mushrooms (thickly sliced)
1 small onion (finely chopped)

3 1/2 cups half and half (*)
1/4 cup parsley, finely chopped, (plus more for garnish)
1 tsp sea salt (or to taste, plus more for pasta water)

Steps:

  • Cook fettuccini in a pot of salted water (4 qts water, 1 Tbsp salt,) according to package instructions then drain and set aside.
  • Meanwhile, slice chicken into strips and season all over with salt and pepper. In a large skillet, heat 2 Tbsp olive oil over medium/high heat and sauté chicken until lightly golden and cooked through (5 min). Remove chicken from the pan and cover to keep warm.
  • In the same pan over medium/high, heat 1 Tbsp olive oil and 1 Tbsp of butter. Add onion and sauté 3 min until soft. Add sliced mushrooms and sauté until soft (5-7 min), stirring frequently. Add garlic and sauté 30 seconds, stirring constantly.

1 tbsp Italian herbs / Italian seasoning
1 tsp garlic powder
1 tsp salt

Steps:

  • Bring a large pot of salted water to the boil. Add the pasta or noodles of your choice then cook until al dente (usually 9-12 minutes). Reserve half a cup of pasta water and drain.
  • Place boneless, skinless chicken breasts on a chopping board and carefully slice the chicken breasts in half horizontally to create two thin cutlets.
  • Drizzle each piece of chicken with olive oil then season generously on both sides with 2 teaspoons of Italian seasoning, garlic powder, salt and pepper.
  • Heat a large frying pan or skillet over medium-high heat then add the chicken and cook for 2-3 minutes per side until golden brown and cooked through. Remove from the pan and set aside.
  • Melt the butter in the same pan until foamy. Add the garlic and cook until fragrant (30 seconds - 1 minute).

1 1/2 cups milk
2 tablespoons cream cheese
1 cup grated or shredded parmesan cheese ((grated melts faster))
salt and pepper (to taste)

Steps:

  • In a small bowl, stir together olive oil and seasoned salt. Add chicken pieces, and toss to coat.
  • Bring a large pot of lightly salted water to a boil. Cook pasta according to package directions. Drain and set aside.
  • While water boils, spray a skillet with cooking spray. Heat over medium-high heat. Cook seasoned chicken approximately 5 minutes per side or until cooked through. Transfer cooked chicken to a plate, and cover with foil to keep warm.
  • Wash the same skillet to use for the sauce. (Careful, it's hot!)
  • While pasta cooks, melt butter in skillet over medium-high heat. Whisk in garlic and flour.
  • Pour in about 1/2 cup of milk, and whisk until smooth. When you see no more lumps, add another half cup of milk, and whisk until smooth again. Do this once more with the rest of the milk, and whisk until smooth and bubbling.
  • Whisk in cream cheese until melted, and then stir in parmesan cheese. Reduce heat to medium-low, and stir very frequently until cheese is melted completely.
  • Cut chicken into bite-sized pieces, and arrange on plates over cooked pasta. Spoon alfredo sauce over the chicken, and dinner is ready!
